Number Of Ingredients 14

2 slices sandwich bread
1/4 pound shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon roasted sesame seed
MARINADE
1/4 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 tablespoon rose or white wine
1 tablespoon egg white
SAUCE
2 tablespoons ketchup
1/2 tablespoon Worcestershire sauce
1/2 tablespoon sugar

Steps:

  • Prepare the shrimp. Peel and devein the shrimp. Use the side of flat side of the knife, mash the shrimp into a paste. Make sure they are minced well. Marinate the shrimp. Mix the marinade ingredients into the shrimp and marinade for at least 30 minutes at room temperature. Prepare the bread. Cut the crust of the bread, save the crust and set aside. Gently brush one side of the bread with olive oil, flip over and spread spread half of the shrimp paste on the bread. Cut in half and sprinkle sesame seeds on top. Lightly brush olive oil on the sesame seeds. Preheat the air fryer. Line the air fryer with a sheet of aluminium foil under the wire basket. Preheat at 350°F for 5 minutes. Transfer the toast to air-fryer. Brush the wire basket with olive oil and place the shrimp toast sesame seed side up in the basket Air fry for 5 minutes, check to make sure it is cooking evenly. Air fry for an additional 5 minutes. Prepare the sauce. Mix all the ingredients together and transfer to serving bowl. These air-fryer shrimp are perfectly crispy and easy to make without the hassle of heating up a large pot of oil. Serve with our spicy remoulade, or substitute any of your favorite condiments for dipping.

Nonstick cooking spray
1 pound large shrimp (16/20 count), peeled and deveined, tails on
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup mayonnaise
2 tablespoons chopped pickled jalapenos
2 tablespoons whole grain mustard
1 tablespoon ketchup
1 tablespoon hot sauce
1 scallion, thinly sliced

Steps:

  • For the fried shrimp: Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple paper towels, then season with a pinch of salt and a few grinds of black pepper.
  • Whisk the flour with 3/4 teaspoon salt and few grinds of pepper in a shallow bowl or baking dish. Whisk the eggs with a pinch of salt in another shallow bowl. Add the panko to a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten eggs. Dredge in the panko, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and repeat with the remaining shrimp.
  • Preheat the air fryer to 385 degrees F. Working in batches, place some of the shrimp in a single layer in the fryer basket, then spray lightly with more cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
  • For the spicy remoulade sauce: Meanwhile, stir together the mayonnaise, pickled jalapenos, mustard, ketchup, hot sauce and scallion in a small bowl until smooth. Serve with the fried shrimp for dipping.

½ lb. shrimp peeled and deveined
1 egg
½ cup chopped cilantro
2 scallions, sliced thinly on the diagonal
2 tsp. corn starch
1 clove garlic, chopped
1 tsp. soy sauce
1 tsp. ginger, peeled and grated
4 sandwich bread slices, crusts removed and cut into 16 triangles
¼ cup sesame seeds
Scallions, chopped, for garnish

Steps:

  • Combine the shrimp, egg, cilantro, scallions, cornstarch, garlic, soy sauce, and ginger in the bowl of a food processor.
  • Pulse the mixture until a smooth paste is formed. If there are some lumps it's OK.
  • Place the sesame seeds on a small plate.
  • Spread the shrimp mixture of each of the bread triangles.
  • Dip half of the bread triangles, shrimp side down in the sesame seeds and coat evenly.
  • Preheat your air fryer to 370°F for 3 minutes
  • Lay the bread in the bottom of the tray, shrimp side up. You may need to do this in batches, depending on the size of your air fryer.
  • Set the time for 6-8 minutes, checking halfway through the cooking process to make sure it isn't burning.
  • Once golden and crispy on top, remove the toast, slice diagonally to form triangles and serve while hot with a sprinkling of green onion.

Once I tried this, I was hooked and other ideas for air fryer recipes started to come to me. What I like about this is that it's one dish, no splatters to clean up, fairly hands-free, and fast. Many of my readers have told me this is the best shrimp scampi they've ever had.

4 tablespoons salted butter or 4 tablespoons ghee
1 tablespoon fresh lemon juice
1 tablespoon minced garlic
2 teaspoons red pepper flakes
1 lb shrimp, peeled and deveined (21 to 25 count)
2 tablespoons chicken broth or 2 tablespoons dry white wine
2 tablespoons chopped fresh basil, plus more for sprinkling or 1 teaspoon dried basil
1 tablespoon chopped fresh chives or 1 teaspoon dried chives

Steps:

  • 1. Place a 7-inch round baking pan in the air-fryer basket. Set the air fryer to 325°F for 8 minutes (this will preheat the pan so the butter will melt faster).
  • 2. Carefully remove the pan from the fryer and add the butter, lemon juice, garlic, and red pepper flakes. Place the pan back in the fryer.
  • 3. Cook for 2 minutes, stirring once, until the butter has melted. (Do not skip this step; this is what infuses the butter with garlic flavor, which is what makes it all taste so good.).
  • 4. Carefully remove the pan from the fryer and add the shrimp, broth, basil, and chives. Stir gently until the ingredients are well combined.
  • 5. Return the pan to the air fryer and cook for 5 minutes, stirring once.
  • 6. Thoroughly stir the shrimp mixture and let it rest for 1 minute on a wire rack. (This is so the shrimp cooks in the residual heat rather than getting overcooked and rubbery.).
  • 7. Stir once more, sprinkle with additional chopped fresh basil, and serve.
