- Combine all ingredients in a large kettle; bring to a boil. Boil for 5 minutes. Reduce heat; cover and simmer for 30 minutes. Remove cloves and cinnamon stick. Serve warm.

CRANBERRY ORANGE CIDER

- Place a medium sauce pot on medium heat. Rinse cranberries and place into pot. Prepare your oranges. If you want extra orange flavor, zest your oranges before you juice them. If not, juice your oranges and pour the juice into the pot. Do not worry if pulp falls into the juice; everything will be strained out. Allow the cranberries and orange juice to come to a simmer, allowing the cranberries to pop. Stir frequently. Once the pot has come to a simmer, put in the apple cider, water, cinnamon stick, and spices. Stir to combine. Allow liquid to come to a boil, stirring occasionally. Once liquid is hot, strain out the large pieces and serve. If you are going to keep it warm over a longer period, place liquid in a slow cooker on low with cinnamon stick. Add hot water to preference if the flavor is too strong.
HOT SPICED CRANBERRY CIDER

- Remove two, 3-inch-long strips of peel from the orange and set aside until needed.
- Next juice and strain the orange.
- To a medium pot, add the orange, pineapple and cranberry juices, orange peel, cinnamon sticks, ginger, allspice and cloves.
- Make sure to sample and add the sugar if desired.
- Heat over medium-high heat until it starts to simmer, then reduce the heat to low and continue to simmer 30 - 45 minutes.
- Strain the cider, pour into warm mugs, add orange slices and serve immediately.

- In large pan combine cranberry juice, cider, nectar, spices, orange and lemon peel.
- Bring to boil, reduce heat and simmer, uncovered 20-30 minutes.
- Remove from heat, strain through a fine-mesh strainer lined with cheesecloth.
- Taste punch and sweeten accordingly. Apple Cider and Cranberry Juice vary greatly in sweetness - you may need no sugar, or you may need a little more than listed.
- Add rum and butter, stirring until butter melts. Or, if having a non-alcoholic alternative is desirable, hold off on adding the rum to the entire punch and add 1 to 2 tbsp of rum to each mug, then fill to the rim with hot punch.

- In a large saucepan, bring 1-qt. of water and cranberries to a boil. Reduce heat; cover and simmer for 8-10 minutes or until berries begin to pop. Drain, reserving liquid and berries. Put berries through a fine strainer or food mill. In a Dutch oven or large kettle, combine the sugar, red-hots, lemon juice, cranberry liquid and pulp, and remaining water., Place cloves and cinnamon sticks on a double thickness of cheesecloth. My father used to always make hot spiced cider at Christmas time, and I loved it - one of my favorite Christmas treats. But, with a combination of apple, orange, and pineapple juices, it was pretty high-carb - and now I am diabetic, so it's a definite no-no. But I have missed it so much, so I started trying to think of a low-carb alternative. This is what I came up with, and it's pretty darn good!! From what I have calculated, the whole pot has less than 60 carbs, so it is pretty guilt-free!! Enjoy!
