Our family is big on soup. This favorite is quick to make and very tasty, and it gives me plenty of time to have fun with my kids and grandkids while it slow-cooks. -Nancy Heishman, Las Vegas, Nevada

1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
3 large tomatoes, chopped
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
3 medium carrots, thinly sliced
1-1/2 cups cut fresh green beans (1-inch pieces)
1 medium zucchini, quartered lengthwise and sliced
1 large sweet red or green pepper, chopped
8 green onions, chopped
4 cups chicken stock
1 can (12 ounces) tomato paste
1/2 teaspoon seasoned salt
1/3 cup minced fresh basil

Steps:

  • In a large skillet, cook sausage over medium heat 8-10 minutes or until no longer pink, breaking into crumbles; drain and transfer to a 6-qt. slow cooker., Add tomatoes, beans, carrots, green beans, zucchini, pepper and green onions. In a large bowl, whisk stock, tomato paste and seasoned salt; pour over vegetables., Cook, covered, on low 6-8 hours or until vegetables are tender. Just before serving, stir in basil. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add stock if necessary.

12 ounces ground turkey (preferably dark meat)
3 tablespoons Pesto, plus more for serving
6 tablespoons panko breadcrumbs
1 lightly whisked egg
3 tablespoons grated Parmigiano-Reggiano, plus more for serving
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground pepper, plus more for serving
1 smashed and peeled garlic clove
4 cups low-sodium chicken broth
2 sprigs fresh basil
1 cup chopped escarole

Steps:

  • In a large bowl, mix together ground turkey (preferably dark meat), pesto, panko breadcrumbs, lightly whisked egg, grated Parmigiano-Reggiano, kosher salt, and freshly ground pepper with a fork until just combined. Cover with plastic wrap; refrigerate.
  • Heat smashed and peeled garlic clove in a saucepan over medium-high until fragrant, about 30 seconds; add low-sodium chicken broth and fresh basil. Bring to a boil, then reduce heat to medium and simmer, partially covered, 10 minutes. Form turkey mixture into tablespoon-size balls. Remove basil and garlic from liquid; gently drop in meatballs. Remove from heat; let stand, covered, until meatballs are cooked through, about 8 minutes. Stir in chopped escarole. Serve immediately with more Parmigiano-Reggiano and pepper, and drizzled with more pesto.

4 Italian turkey sausage links, casings removed
1 large onion, chopped
1 cup chopped fennel bulb
1 cup chopped peeled celery root or turnip
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
3 cups water
4 bay leaves
1 tablespoon reduced-sodium beef base
2 teaspoons Italian seasoning
1/2 teaspoon pepper
2 cans (15 ounces each) cannellini beans, rinsed and drained
Shaved Parmesan cheese, optional

Steps:

  • In a Dutch oven, cook sausage, onion, fennel and celery root over medium heat 4-5 minutes or until sausage is no longer pink, breaking into crumbles; drain. Stir in tomatoes, water, bay leaves, beef base, Italian seasoning and pepper., Bring to a boil. Reduce heat; simmer, covered, 20 minutes or until vegetables are tender. Stir in beans; heat through. Remove bay leaves. If desired, top servings with cheese. Freeze option: Freeze soup without cheese in freezer containers. To use, partially thaw in refrigerator overnight. 1 can (14 1/2 ounces) no salt added diced tomatoes undrained
1 tsp McCormick® Oregano Leaves
1 tsp McCormick® Rosemary Leaves finely crushed
1 tsp McCormick® Thyme Leaves
1 package (6 ounces) baby spinach leaves
1/2 cup uncooked small pasta such as mini bowties or elbows

Steps:

  • Heat oil in large saucepan on medium heat. Add sausage; cook and stir 3 minutes. Add onion; cook and stir 3 minutes longer or until onion is tender and sausage is browned.
  • Pour chicken broth, beans and tomatoes into saucepan. Stir in oregano, rosemary and thyme. Bring to boil. Reduce heat to low; simmer 10 minutes.

2 cups packed fresh basil leaves
1 tablespoon fresh lemon juice
1 1/2 cups frozen peas, thawed
1/3 cup extra-virgin olive oil, plus more for drizzling
1/3 cup grated Parmesan, plus more for serving
Kosher salt and freshly ground pepper
12 ounces sweet Italian turkey sausage (3 to 4 links)
1 pound short pasta, such as penne rigate

Steps:

  • Preheat oven to 450 degrees. In a food processor, combine 4 cups spinach, basil, lemon juice, 1/2 cup peas, and olive oil; process until combined. Pulse in cheese; season with salt and pepper. Using kitchen shears, snip sausage into 1-inch pieces. Drizzle with oil; roast on a rimmed baking sheet until undersides are brown, 7 to 8 minutes. Flip and push to one side. Lightly drizzle remaining 3 cups spinach with oil; season with salt and pepper. Scatter evenly over other half of sheet; roast until sausage is cooked through and spinach is crisp, 5 to 6 minutes more.
  • Meanwhile, cook pasta in a pot of salted boiling water according to package directions. Drain, reserving 1 cup pasta water. Return pasta to pot; add pesto, sausage, remaining 1 cup peas, and pasta water, 1/4 cup at a time, until evenly coated. Season with salt and pepper. Serve, topped with crisped spinach, more cheese, and a drizzle of oil.

1 red bell pepper, diced

1 (15 ounce) can black beans, rinsed and drained

1 chipotle pepper, minced
1/4 teaspoon cumin

Steps:

  • Spray a soup pan with cooking spray and bring up to medium high heat. Add onions and cook for about 2 minutes. Add the sausage and cook for another two minutes. Add the bell pepper and garlic. Cook an additional 2 minutes.
  • Add the broth, cumin, and tomatoes. Bring to a boil. Reduce the heat to a simmer and add chipotle and beans. Cook covered for about 10 minutes.
  • Season to taste with salt and pepper.
  • Serve with a sprinkle of Cilantro or some fat free sour cream.
  • **Variation Idea: I have tried this as a smooth soup -- brown off the turkey in a separate pan, following all of the other directions up until the point the beans are added. I use a hand held blender to blend up the soup. Afterwards I add the turkey and some additional beans to give a little texture.

3 sweet Italian sausage links, cut in 1-inch slices
1 cup chopped onion
1 cup water
2 cups cooked turkey, cubed
turkey stock, to cover
4 -5 small red potatoes, cut in quarters
1 cup frozen chopped spinach
1 cup frozen cut green beans
salt and pepper (to taste)
1 pinch red pepper flakes (to taste)
1/4 teaspoon coriander
1/2 teaspoon thyme
1/2 teaspoon celery salt

Steps:

  • Saute the sausage and onions til brown and onions soft.
  • Add the rest of the ingredients and simmer for an hour.
  • Serve with a good crusty bread.

1/2 cup purchased pesto sauce

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Add sausage, bell pepper, mushrooms and green onions. Sauté mixture until vegetables soften, about 7 minutes. Add pasta, pesto sauce and 1/2 cup Parmesan. Toss until mixture is combined. Season to taste with salt and pepper. Divide pasta mixture among plates. Pass additional Parmesan separately.

Steps:

  • Heat olive oil in heavy large Dutch oven over medium-high heat. Add turkey sausage and chopped garlic and sauté until sausage is golden brown and cooked through, breaking up sausage with back of fork, about 5 minutes. Reduce heat to medium. Add tomatoes with their juices, sliced jalapeño chili, ground cumin and chopped fresh rosemary and simmer 10 minutes, stirring frequently. Add garbanzo beans with their liquid and chicken broth and bring to boil. Reduce heat and simmer soup 15 minutes. Stir in fresh lemon juice. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat before continuing.)
  • Ladle soup into bowls. Sprinkle soup with chopped fresh cilantro and top with sliced avocado. Serve immediately.
