I love breakfast sausage, but most store-bought brands are high in calories and fat and not very diet-friendly. Try this slightly sweet version made with real maple syrup. The apples help keep the sausage moist. I like to cook up a batch on Sundays and store in the fridge for quick breakfasts all week. Take care not to overcook the patties.

1 pound lean ground turkey
1 small apple - peeled, cored, and finely chopped
1 tablespoon pure maple syrup, or more to taste
¾ teaspoon salt
½ teaspoon dried sage
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
¼ teaspoon dried marjoram
⅛ teaspoon ground cinnamon
1 dash ground cloves
1 tablespoon olive oil

Steps:

  • Combine turkey, apple, maple syrup, salt, sage, garlic powder, black pepper, marjoram, cinnamon, and cloves in a bowl; mix well. Form into 10 small patties.
  • Heat olive oil in a skillet over medium heat. Fry patties until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 large apple
1 large egg, lightly beaten
1/2 cup chopped fresh parsley
3 to 4 tablespoons minced fresh sage
2 garlic cloves, minced
1-1/4 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1-1/4 pounds lean ground turkey
6 teaspoons olive oil, divided

Steps:

  • Peel and coarsely shred apple; place apple in a colander over a plate. Let stand 15 minutes. Squeeze and blot dry with paper towels., In a large bowl, combine egg, parsley, sage, garlic, seasonings and apple. Add turkey; mix lightly but thoroughly. Shape into sixteen 2-in. patties. Place patties on waxed-paper-lined baking sheets. Refrigerate, covered, 8 hours or overnight., In a large nonstick skillet, heat 2 teaspoons oil over medium heat. In batches, cook patties 3-4 minutes on each side or until golden brown and a thermometer reads 165°, adding more oil as needed. Freeze option: Place uncooked patties on waxed-paper-lined baking sheets; wrap and freeze until firm. Remove from pans and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time to 4-5 minutes on each side.

8 ounces lean ground turkey
nonstick spray coating

Steps:

  • In a large bowl combine bread crumbs, apple, sage, black pepper, salt, paprika, ground red pepper and nutmeg.
  • Add turkey and mix well.
  • Shape mixture into 4 patties (1/2 inch thick).
  • Spray the unheated rack of a broiler pan with nonstick cooking spray.

I was suprised how spicy and flavorful these were. My husband really enjoyed them, and he hates turkey and all forms of fruit combined with meat. Go figure.

2 garlic cloves, minced
1 1/4 lbs lean ground turkey
1/2 cup chopped fresh parsley
1/4 cup finely chopped fresh sage

1/2 teaspoon black pepper
1 large egg, beaten
2 teaspoons olive oil (for cooking)

Steps:

  • Peel and core apple; coarsely shred apple with a hand grater. Place in a wire mesh strainer; drain well, pressing gently with paper towels.
  • Combine all ingredients except oil; stir until blended.
  • Shape mixture into 16 patties (about 2 tablespoons each).

It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

1 teaspoon salt
2 teaspoons sage
1 teaspoon fennel seed
