3/4 pound reduced-fat smoked turkey sausage, cut into 1/4-inch slices
1 small onion, chopped
1 small green pepper, chopped
1 tablespoon canola oil
1 garlic clove, minced
1-1/2 cups water
1/2 cup uncooked long grain rice
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon hot pepper sauce
1 can (14-1/2 ounces) diced tomatoes with green chilies, undrained
1/4 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a large saucepan, saute the sausage, onion and green pepper in oil until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the water, rice, salt, cayenne and hot pepper sauce. Bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until rice is tender. Add tomatoes and shrimp; cook and stir until shrimp turn pink.

This is a very easy recipe that I enjoy making when I know I won't have a lot of time to cook. I also enjoy adding a few veggies to put a twist on it from time to time. If you like your jambalaya spicy, add 1/4-1/2 tsp. of Tabasco sauce to give it the kick you're looking for. I've also subsitute andouille turkey sausage which really kicks up the flavor.

12 ounces turkey sausage, cut 1/4 inch thick
12 ounces boneless chicken breasts, cut into 1-inch strips
1 green pepper, sliced
1 red pepper, sliced
1 (14 1/2 ounce) can diced tomatoes
1 cup instant brown rice, uncooked
1/2 cup chicken broth
1 bunch green onion, diced
2 garlic cloves, minced
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon ground pepper

Steps:

  • In a large skillet, heat sausage, garlic, and peppers until tender.
  • Add remaining ingredients (except for green onions) and heat to boiling.
  • Reduce heat to low, cover pan and simmer for 10 minutes or until rice is tender.
  • Remove from heat and stir in green onions before serving.

1/4 cup vegetable oil
2 cups chopped yellow onions
1 cup chopped green bell pepper
1 cup chopped celery
1/8 cup chopped garlic
3/4 teaspoon salt
3/8 teaspoon ground black pepper
1/8 teaspoon cayenne
2 bay leaves
1 lb kielbasa or 1 lb other cooked sausage, cut into 6 to 8-inch segments
2 cooked turkey legs
2 lbs cubed cooked turkey
1 cup chopped tomato, and their juices
1 1/4 cups medium-grain white rice (about 1 1/8 pounds)
8 cups water
1/2 cup chopped green onion
1/4 cup chopped fresh parsley leaves
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano leaves
1 tablespoon dried thyme

Steps:

  • In a very large roasting pan measuring approximately 21 by 17 by 7 inches with handles on both sides, heat the oil over medium-high heat.
  • Add the onions, bell peppers, celery, garlic, Essence, salt, pepper, cayenne and bay leaves, and cook, stirring, until the vegetables are very soft and starting to turn golden, about 15 minutes.
  • Add the sausages and cook, stirring, until they start to brown on the outside, about 7 minutes.
  • Add the turkey legs and meat and stir well.
  • Add the tomatoes and their juices and cook, stirring, for 5 minutes.
  • Add the rice and stir well to incorporate and coat evenly.
  • Add the water, stir well to combine, and bring to a boil.
  • Reduce the heat, cover tightly, and cook without stirring until the liquid is absorbed and the rice is tender, 35 to 40 minutes, adding more water as needed if the liquid is all absorbed before the rice is tender.
  • Remove from the heat and let sit for 15 minutes before serving.
  • Remove the bay leaves. Stir in the green onions and parsley, and serve hot.

1 lb ground turkey
1 lb turkey sausage, sliced
2 tablespoons oil
1 medium green bell pepper, diced
2 tablespoons minced garlic
1 (28 ounce) can stewed tomatoes, undrained
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 cup dried parsley
1 -2 tablespoon creole seasoning
1 cup uncooked rice
1 1/2 cups water

Steps:

  • Cook sausage in oil until browned; set aside.
  • Cook turkey, bell pepper, onions and garlic until the turkey is lightly browned; drain.
  • Add tomatoes, salt, pepper, parsley, Creole seasoning and sausage.
  • Cover and simmer 20 minutes.
  • Add rice and water; cover and cook 20-25 minutes or until rice is tender.

I was looking for a healthy tasty recipe and saw a pork recipe that inspired me to try to make my own style of Jambalaya.

1 (20 ounce) package of shady brook farms lean turkey sausage
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic (Basil, Garlic & Oregano)
1 (14 ounce) box goya yellow Spanish rice
6 garlic cloves, minced
1 small onion, chopped
1/2 red bell pepper, diced
2 tablespoons olive oil

Steps:

  • In a non-stick frying pan brown turkey sausage (all sides) under low flame. When turkey sausage is browned, remove from pan and cut to 1/4 inch then add back in with can of Del Monte Diced tomatos, simmer on a super low flame until rice is ready. In another pot, heat olive oil add garlic and onion until golden (do not brown) then add chopped up red pepper and saute about a minute or two. Add 3 1/2 cups of water, bring to a boil and add Goya Yellow Spanish Rice and follow rice instructions minus 5 minutes. Add rice mixture to turkey sausage mixture, mix well and cook for 5 minutes under low flame then serve.

2 tablespoons olive oil
1 1/2 lbs smoked sausage (I use Ekrich sausage)
1 gallon water, for boiling chicken in
3 cups yellow onions, diced
1 cup celery, diced
1 cup green bell pepper, diced
1 bunch green onion, finely chopped, green and white parts separate
8 garlic cloves, minced
1 whole chicken
3 lbs smoked turkey legs
1/4 cup tomato paste
1 teaspoon dried thyme, crumbled
1 bay leaf
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/2 teaspoon louisiana hot sauce
1 1/2 teaspoons cajun spices
5 cups chicken stock
1 1/2 cups fresh tomatoes, chopped
3 cups long-grain rice
1/2 cup fresh parsley leaves, chopped

Steps:

  • Add chicken to a large, Heavy Dutch oven, with one gallon of water. Bring to a boil, then simmer for 45 minutes, save stock, de-bone and shred in bite sized pieces.
  • In the large, heavy Dutch oven, heat the oil over medium-high heat. Add the sausage, shredded chicken and cook, stirring frequently, until browned, 4 to 5 minutes. Using a spoon, remove any excess oil that the sausage & chicken has rendered and discard. Add the onions, celery, bell pepper, scallion white parts, garlic, jalapeno peppers and continue to cook, stirring occasionally, until vegetables are tender, 4 to 6 minutes. Add the turkey legs, tomato paste, thyme, bay leaf, salt, pepper, hot sauce, Cajun Spice, chicken stock, and tomatoes and bring to a simmer. Cover, reduce the heat to low, and cook until the turkey is falling from the bones and the broth is very flavorful, 2 1/2 to 3 hours.
  • Remove the pot from the heat and remove the turkey legs. Let the Turkey legs cool! Carefully remove the meat from the bones and tear into bite size pieces. Return the meat to the Dutch oven and discard the turkey leg bones. Return the pot to the stovetop and heat over high heat until the liquid returns to a boil. Stir in the rice and green onion tops and return to a boil. Cover, reduce the heat to a simmer and cook, undisturbed, until the rice has absorbed the liquid and is tender, about 20 minutes. Remove from the heat and let sit for 5 minutes. Remove the bay leaf and gently stir in the parsley. Let stand for 10 to 15 minutes, covered, before serving. Will serve 4-6 regular folks or 2-4 hungry cajuns!

1 lb turkey, cubed
1 large onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced (or more to taste)
4 celery ribs, chopped
2 (6 ounce) cans tomato paste
1 (28 ounce) can tomatoes
8 cups chicken broth
2 teaspoons cayenne pepper
2 teaspoons black pepper
1 teaspoon oregano
1/2 teaspoon thyme
2 bay leaves

4 cups long-grain white rice, uncooked

Steps:

  • In a sauté or frying pan, sauté diced turkey meat in salt, black pepper and cayenne pepper until just warmed through. In a large pot, sauté the onions, garlic, peppers and celery in oil until onions begin to turn transparent. In the same pot, add the tomato paste and let it brown a little.
  • Once the vegetables are translucent deglaze the pan with the about 2 cups of the stock, scraping the bottom of the pan to mix up any browned bits, and stir until smooth, making sure the sautéed vegetables, paste and stock are combined thoroughly.
  • Add the remaining seasonings, tomatoes and salt to taste. Cook over low-medium heat for about 10 minutes. Add the turkey and cook another 10 minutes. Add the rest of the stock, and stir in the rice, combining thoroughly. Cook for about 20-25 minutes, or until the rice has absorbed all the liquid and is cooked through. Turn the heat down to low-medium and let the sauce thicken up a bit, with the pot uncovered, stirring frequently, for about 10 minutes. Stir thoroughly to combine all ingredients.
