2 jars (12 ounces each) red-pepper relish, such as Fourth Creek
1 small onion, chopped
2 cloves garlic, chopped
1 tablespoon plus 1 teaspoon extra-virgin olive oil, plus more for brushing
2 tablespoons low-sodium soy sauce
2 pounds ground dark turkey
4 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 slice soft white bread, torn into pea-size pieces (1 cup)
Coarse salt and freshly ground pepper
3 tablespoons Heinz Chili Sauce, plus more for brushing
1/2 cup mayonnaise
2 cups packed finely shredded kale
1/2 teaspoon balsamic vinegar
8 potato rolls, split
4 tablespoons unsalted butter, melted

Steps:

  • Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
  • Heat 1 tablespoon oil in a skillet over medium-high; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt, and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
  • Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees, 5 to 6 minutes more.
  • Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining 1 teaspoon oil; season with salt and pepper. Brush split sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili-sauce mixture, remaining relish, and kale.

A meatloaf style turkey burger that's moist and flavorful. My kids love these burgers and don't realize it's a lighter alternative to beef burger. My kids just slap on some mayo and head to town. Great served with lettuce, tomato, and your choice of condiments, with a side of chips or raw crispy veggies.

2 pounds ground turkey
1 ⅓ cups seasoned bread crumbs
1 small onion - grated, and juice drained
2 eggs
3 tablespoons applesauce
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon kosher salt
2 tablespoons olive oil
8 hamburger buns, split

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix the turkey, bread crumbs, onion, eggs, applesauce, chili powder, paprika, and kosher salt in a large bowl until thoroughly combined. Divide mixture into 8 equal portions, then shape into patties.
  • Heat olive oil in a large skillet over medium-high heat. Arrange the patties in the skillet and cook until browned, 3 to 5 minutes on each side. Place the browned patties on a paper towel-lined plate to drain. Transfer the patties to a 9x13-inch baking dish.
  • Bake the turkey burgers in the preheated oven until no longer pink in the center and the juices run clear, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve the turkey burgers on the hamburger buns.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced
¼ teaspoon ground black pepper
½ cup ketchup
¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. 1 lb ground turkey, dark meat preferred
2 tablespoons vegetable oil
1 tablespoon butter
1 small onion, finely chopped
1 stalk celery, finely chopped
1 tart apple, peeled and grated
1/3 cup breadcrumbs
2 teaspoons poultry seasoning
2 teaspoons Dijon mustard
sat and pepper, to taste
1/4 cup chopped parsley
1 egg, beaten
1 mild red onion, sliced
1/3 cup whole cranberry sauce
2 tablespoons sour cream
2 tablespoons chopped chives
4 slices white cheddar cheese, sharp
4 romaine lettuce leaves
4 kaiser rolls or 4 other favorite buns, just not the hamburger variety

Steps:

  • In medium skillet over medium high heat, saute onion, celery in oil/butter until soft.
  • Add apple and continue cooking another 3 minutes.
  • Place in a bowl and let cool.
  • Add the crumbs, seasonings, parsley, mustard, egg and turkey.
  • Mix and shape into 4 patties.
  • In small bowl combine cranberry sauce, sour cream and chives.
  • set aside.
  • In large non stick skillet over medium high heat, fry the patties until done.
  • top with cheese and let melt slightly.
  • Meanwhile gently toast cut buns.
  • On bottom bun, place some onion, lettuce leaf, patty and spoon on some sauce.
  • Place top on the patty.
  • Serve with your favorite crudities.

My intent was to make Cranberry Bog Turkey Burgers, ala Rachael Ray. Upon discovering that I had defrosted both beef and turkey rather than 2 pounds of turkey, I took her recipe and added my own twists to make a tender and moist meatloaf. The listed amounts of spices and herbs yield a mild flavor so if you like more punch, you'll want to increase them. For better slicing, let the loaves rest after baking or they will crumble under your knife. Mashed potatoes and cranberry sauce make great side dishes with this recipe.

1 lb lean ground beef (I use 90/10%)
1 lb ground turkey (93/7%)
1 1/2 teaspoons poultry seasoning
2 tablespoons Italian parsley, chopped
2 slices bread, cubed
3/4 cup milk
2 eggs
2 tablespoons butter
1 small apple, peeled, cored & diced
1 small onion, diced
2 celery ribs, diced
1/2 teaspoon salt
1/4 teaspoon thyme, ground
water

Steps:

  • In a large bowl, mix the beef, turkey, poultry seasoning & parsley. Set aside.
  • In a small bowl, slightly beat the eggs then stir in the milk. Submerge the bread cubes, mixing gently to break them up.
  • In a medium fry pan, melt the butter then add the apple, onion & celery. Sprinkle with salt & saute until the onions are translucent.
  • Stir apple, onion, celery mixture into the meats then add the bread, milk & eggs.
  • Work the mixture gently (I use my hands) until well combined.
  • Divide in half & shape 2 loaves in a 9X13" baking dish.
  • Tent with foil and bake in a 350º oven for 45 minutes.
  • Remove from oven, pour off juices and reserve.
  • Return loaves to oven (minus their tent) for another 15 minutes or until juices run clear. Let rest for 5-10 minutes while you make the gravy.
  • Gravy:.
  • Strain reserved pan juices and if needed, add water to equal 1 cup.
  • Pour drippings & water into the pan you used to saute the apples/onions/celery. Whisk in the flour.
  • Cook and stir over medium low heat until gravy thickens. Stir in the ground thyme & cook for 2-3 minutes more. Salt and pepper to taste.
  • Slice the loaves into portions, top with the gravy and serve.

2 garlic cloves, minced
2 finely grated carrots (3/4 cup)
2 tablespoons tomato paste
1 tablespoon Dijon mustard
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
8 ounces mozzarella cheese, cut in 8 slices
8 slices crispy bacon, each cut in half
2 tomatoes, cut in 4 thick slices

Steps:

  • In a large bowl, combine ground turkey with the onion, garlic, grated carrots, tomato paste, Dijon mustard, kosher salt, and freshly ground black pepper.
  • Form into 8 patties, each 3/4 inch thick.
  • Place on a medium-hot grill and cook 5 minutes per side. (Or to cook on the stove top, heat 2 tablespoons olive oil in a grill pan over medium heat. Place the burgers in the pan and cook 7 to 8 minutes; flip and cook 5 minutes more.).
  • Top with sliced mozzarella. Cook 2 to 3 minutes longer, until the cheese melts. Top each with 2 pieces of crispy bacon and 1 slice of tomato and serve.

I cut out this recipe a few years ago and used it a couple of times. Since cutting it out I change a couple of things - more turkey for one thing.

2 cups leftover cooked turkey, chopped very small
4 -5 cups of leftover prepared stuffing
2 lightly beaten eggs
1 small onion, diced (only if you like onions)
cranberry sauce (optional)
lettuce (optional)
mayonnaise (optional)
mustard (optional)

Steps:

  • Preheat oven to 425°F; grease cookie sheet.
  • In large bowl stir chopped turkey, stuffing and eggs, and optional onions - mix well. (Also if mixture seems dry add a little water).
  • Scoop mixture into cookie sheet, and make 3 inch round flat patties for burgers, and for loaf just mound mixture into a loaf.
  • Roast burgers for about 20 minutes, or until lightly browned on both sides, and for loaf roast for about 35 minutes or until light browned and with a temp of 165°F inside (cook fully).
  • Serve burgers however you like them! or serve loaf just like a meatloaf!
