Steps:
- Preheat oven to 350°F.
- Place rice, onion, egg, milk, sage, bouillon granules and pepper in a bowl, stir to combine.
- Add turkey and mix with your hands.
- Place mixture in a a loaf pan.
- Combine honey, vinegar and mustard.
- Spoon 1/2 the honey mixture over the turkey and bake 30 minutes.
- Spoon the remaining honey mixture over the turkey and bake 20-30 minutes or until done.
- Let sit 5-10 minutes before slicing.
TURKEY AND BEEF MEATLOAF WITH CRANBERRY GLAZE

- Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
- Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
- Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
- Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. Brush the meatloaf on all sides with the remaining glaze and bake until a thermometer inserted into the center of the meatloaf registers 155 degrees F, 30 to 35 minutes. Garnish with rosemary sprigs before serving.

VERMONT TURKEY LOAF
We have been using ground turkey in place of ground beef for a while now, and I am always on the lookout for new recipes. I found this in the 2012 "Taste of Home" cookbook (if you don't own it, BUY IT NOW!) and decided to give it a try. It is a thick, dense meatloaf that is loaded with hidden veggies. Even my husband made a comment that he couldn't tell they were in there. The sauce on top also gives is a sweet tanginess that adds to the appeal. It is New England comfort food at it's best! - In a large skillet coated with cooking spray, saute the onion, mushrooms and carrot until tender.
- Remove from heat and cool slightly.
- In a large bowl, combine the vegetables, bread crumbs, salt and pepper.
- Crumble turkey over mixture and mix well.
- Pat into a greased 9x5 inch loaf pan.
- Bake, uncovered, at 375 for 35 minutes.
- Combine syrup and mustard; pour half over the turkey loaf.
- Bake 5-10 minutes longer or until a meat thermometer reads 165 and juices run clear.
- Serve with remaining syrup mixture.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

- In a small bowl, whisk the vinegar, honey and soy sauce until blended; set aside. Place eggs and bread crumbs in separate shallow bowls. Dip turkey slices into eggs, then coat with crumbs. , In a large skillet, saute turkey in oil in batches for 2 minutes on each side or until no longer pink. Remove and keep warm. - Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Mix tomato sauce, tomato paste, ketchup, sugar, onion powder, garlic powder, 1 teaspoon oregano, 1 teaspoon black pepper, and 1 teaspoon Worcestershire sauce in a bowl.
- Place stewed tomatoes in a large bowl; crush tomatoes using a fork. Add turkey, crushed crackers, onion, green bell pepper, eggs, 1 tablespoon oregano, thyme, 2 tablespoons Worcestershire sauce, garlic, and 2 teaspoons black pepper; mix until evenly combined. - In a bowl, combine egg substitute, 1/3 cup pineapple and the seasonings. Add bread crumbs; mix well. Crumble meat over mixture; mix well. Press into an 8x4-in. loaf pan coated with cooking spray. - Preheat oven to 425 degrees F (220 degrees C).
- Heat 1 tablespoon olive oil in a skillet over medium heat. Cook and stir onion in hot oil until onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low and continue cooking and stirring until the onion is crisp and dark brown, 15 to 20 minutes more. Remove from heat and set aside to cool; chop into small pieces and place into a large bowl.
- Heat remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Add carrots and mushrooms, season with kosher salt and ground black pepper to taste, and cook and stir until carrots start to soften, about 7 minutes. Stir in garlic and cook for another 3 minutes; remove from heat, add artichoke hearts, and set aside and let cool. Transfer vegetables to the bowl with onion.
- Mix in feta cheese, bread crumbs, egg, milk, Worcestershire sauce, turkey, parsley, and thyme; season with Italian seasoning and Creole seasoning. Adjust salt and pepper if desired. Thoroughly mix turkey mixture with hands and form into a meatloaf; place loaf on a baking sheet.
- Bake meatloaf in preheated oven until no longer pink inside and the juices run clear, 40 to 45 minutes. Combine tomato sauce, balsamic vinegar, and honey to make the glaze; remove meatloaf from the oven, coat with glaze, and bake until glaze has cooked onto the loaf, 5 to 10 more minutes.

- In a 6-quart kettle, combine the turkey, water, bouillon, bay leaf, and salt. Cover and simmer until meat is very tender and begins to fall away from the bone, about 2 1/2 hours. Lift out meat and set aside to cool. Add wine to cooking liquid and boil, uncovered, until reduced to 3 cups.
- Remove meat from the bones, discarding skin, tendons, and bones. Tear meat into fine shreds and combine with the thyme, sage, garlic, onion, parsley, pimento (drained), and black pepper. Pack meat mixture into a 5x9-inch loaf pan, then pour in the cooking liquid. Cover and chill until set, at least 6 hours.
- Run a knife around the pan sides to loosen. Dip pan into hot water for 5 seconds, then invert onto a serving plate and slice.

TERRIFIC TURKEY LOAF
This recipe is from the Jane Brody Good Food cookbook. This meatloaf is so moist and flavorful and healthy! My family loves it. Serve hot or cold in a sandwich. You can make this ahead and refrigerate it overnight. I mince the mushrooms up really fine so that my kids don't even know they're in there. I serve this with mashed potatoes and any kind of gravy. Be aware that you will need to bake the loaf in a pan of hot water.

- In a large skillet, heat the oil and saute the garlic, celery, leeks and red pepper, stirring until slightly softened (about 4 mintues).
- Meanwhile, boil a kettle of water, and preheat the oven to 375º.
- Stir the mushrooms into the sauted mixture, cover the pan for a few minutes until the mushrooms start to give up their liquid. Remove the cover and saute longer until all the liquid has evaporated. Remove from the heat and set aside.
- In a large bowl, combine the turkey, egg, salt, pepper, nutmeg, bread crumbs, and parsley. Add the sauteed vegetables and combine the ingredients well. Transfer the turkey mixture to a lightly greased loaf pan (4"x8") and set the pan in a large, shallow baking dish.
- Place the pans in the preheated oven, pour the boiling water into the OUTER pan to a depth of about 1" and bake the loaf for 1 hr and 15 minutes.
- When cooked, remove the loaf pan from the outer pan and from the oven. Let rest for 15 minutes and then serve.
HERBED TURKEY LOAF
I found the original recipe in an old Family Circle magazine from 2002. I changed the main ingredient from turkey to Gimme Lean ground beef style soy. Instead of the egg and I used plain Silk Coffee Creamer to brush on the puff pastry. I also added some Worcestershire's sauce and a few drops of Tabasco, some fresh basil and ground sage as well as some cubed potato and Malibar spinach instead of regular spinach. I also sprinkled some black sesame seeds on top of the loaf for interest. You can probably use ground beef, ground chicken or some other ground meat in here if you prefer.

- Preheat your oven to 400'F.
- Combine the turkey, spinach and soup mix in a bowl. Set aside.
- On a lightly floured board, unfold 1 sheet of the thawed puff pastry (I use Sarah Lee). This is Parve so I feel good about using it.
- Lay the pastry out with the with the fold lines on the pastry going vertically.
- Cut slits on each side of the pastry and mound the filling onto the pastry between the two fold marks.
- Starting at one end fold the pastry strips over the filling, alternating each side to cover.
- Place on an ungreased baking sheet. Beat the egg and brush over the pastry.
- Bake for 30-35 minutes until the pastry is crispy and golden.
- If you use an instant-read thermometer it should register 160'F when inserted through the center.
- Cool slightly, then slice and serve.
- Bon Apetit.
