2 slices center cut bacon (cut in half)
2 slices whole grain bread (Daves Killer Bread thin sliced Good Seed)
1 tablespoon light mayo
2 slices iceberg lettuce
3 ounces turkey breast (sliced thin (Boars Head))
2 slices ripe tomato

Steps:

  • Cook bacon until crisp then drain fat on a paper towel.
  • Toast the bread the spread mayo on both pieces. Top with 1 slice lettuce, turkey, tomato, bacon and remaining lettuce and close.
  • Slice in half and enjoy!

2 pounds skinless, boneless turkey breast, cut into 2-inch cubes
1 tablespoon vegetable oil, plus more for the grill
1 teaspoon grated lemon zest
1 teaspoon paprika
Kosher salt and freshly ground pepper
12 slices bacon
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Split French bread rolls, Little Gem lettuce and halved grape tomatoes, for serving

Steps:

  • Make the kebabs: Combine the turkey, vegetable oil, lemon zest, paprika and 1 teaspoon each salt and pepper in a large bowl; toss to coat.
  • Preheat a grill to medium. Thread the turkey onto six 12-inch skewers. Wrap 2 bacon slices around each skewer, overlapping slightly, to cover the turkey.
  • Brush the grill grates with vegetable oil. Grill the kebabs, turning often, until the turkey is cooked through and the bacon is crisp, about 25 minutes.
  • Meanwhile, make the dressing: Combine the mayonnaise, buttermilk, lemon juice and parsley in a small bowl; season with salt and pepper.
  • Serve the kebabs in rolls with lettuce and tomatoes; drizzle with the dressing.

1/2 gallon water
2 cups salt
1 cup dark brown sugar
1 onion, sliced
2 cloves garlic, smashed
Pinch of crushed red pepper flakes
6 leaves sage
1 sprig rosemary
1 sprig thyme
6 pound turkey breast, rinsed
1/2 bag ice cubes
6 to 8 slices bacon
1 cup mayonnaise
2 tablespoons olive oil
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons paprika
1 tablespoon Italian seasoning
3 tablespoons salt
2 tablespoons black pepper
12 pieces wheat bread
Cilantro Mayonnaise Sauce, recipe follows
1 tomato, sliced
Lettuce leaves
1 avocado, pitted, peeled and sliced
1 cup mayonnaise
2 tablespoons freshly chopped cilantro leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Pinch coarse black pepper
1/4 teaspoon salt

Steps:

  • In a large saucepan filled with 1/2 gallon of water, bring water to a simmer. Add all Brine ingredients and stir. Allow to come to a boil, then cool broth. Add turkey and place in refrigerator for 2 to 4 hours.
  • Place bacon strips onto cookie sheet. Place in oven for 12 to 14 minutes. Remove from the oven and drain on paper towels.
  • Preheat the oven to 350 degrees F
  • Remove turkey from brine and place into a roasting pan. Pat dry turkey. Combine mayonnaise, olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt and black pepper. Rub this mixture all over the turkey breast and under the skin. Place in the oven and roast for about 1 1/2 hours or until the turkey reaches 165 degrees F on an instant-read thermometer. Make sure to let the turkey rest before slicing.
  • Slice the turkey and assemble the sandwiches by topping 1 piece of bread with the Cilantro Mayonnaise Sauce, turkey, bacon, another piece of bread, Cilantro Mayonnaise Sauce, turkey, tomato, lettuce, avocado, and a final piece of bread spread with the Cilantro Mayonnaise Sauce. Repeat with remaining bread and ingredients.
  • Combine all the ingredients and mix well.

12 slices roasted deli turkey
12 slices sharp cheddar
60 g mayonnaise
2 tbsp. Dijon mustard
1/2 head iceberg lettuce, shredded
1 pt. cherry tomatoes, chopped
1 avocado, chopped
8 slices bacon, cooked and chopped

Steps:

  • Preheat oven to 200°C (180ºC fan) and lightly grease muffin tin with cooking spray.
  • Place a slice of turkey into each muffin cup. Add a slice of cheddar, then bake until turkey is sturdy and cheese is melted, about 10 minutes. Let cool slightly.
  • Meanwhile, in a small bowl, mix together mayo and Dijon. Add a dollop to the bottom of each turkey cup and spread around. Fill with lettuce, cherry tomatoes, avocado, and bacon.
  • Repeat to fill cups.

2 tablespoons apple cider vinegar
8 slices turkey bacon
1 Hass avocado, halved and pitted
1/2 cup nonfat plain Greek yogurt
Kosher salt and freshly ground pepper
8 slices whole-grain bread, lightly toasted
8 small leaves romaine lettuce
1 tomato, cut into 8 slices
12 ounces sliced low-sodium deli turkey breast
1/2 small English cucumber, sliced

Steps:

  • Toss the onion with the vinegar and 2 tablespoons water in a small bowl. Let stand 15 minutes, then drain. Meanwhile, cook the turkey bacon as the label directs until crisp.
  • Mash the avocado with the yogurt in another small bowl until smooth. Season with salt and pepper.
  • Lay 4 slices of bread on a cutting board and spread with half of the avocado-yogurt mixture. Top with the lettuce and tomato and season with salt and pepper. Add a layer of turkey breast, bacon, cucumber and red onion. Spread the remaining avocado mixture on the remaining 4 bread slices and place spread-side down on top of the sandwiches.   • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.
