TURKEY SPINACH MEATBALLS
These tender-baked turkey and spinach meatballs are packed with veggies and protein! Enjoy them over whole grain pasta, zucchini noodles or a bed of spagehtti squash. I love adding them to my weekend meal prep, so I have them on hand for easy weeknight meals.

Steps:
- Preheat oven to 400ºF and line two rimmed baking sheets with parchement paper (or spray with cooking spray).
- Add ground turkey to a large bowl along with the onions, mushrooms, spinach, Romano cheese, panko breadcrumbs, egg, egg whites, nutmeg, salt and pepper. Use your hands to gently combine all of the ingredients together.
- Scoop a heaping tablespoon of the mixture and roll into a ball. If the mixture is very sticky, wet your hands to make this process easier.
- Place the meatball on the prepared baking sheet and repeat until you have used all of the meat. You should have 35-40 meatballs when you are done.
- Bake for 20 minutes or untl the internal tempertaure of the meatballs reaches 165ºF.
- *OPTIONAL: heat tomato sauce in a large saue pan or shallow pot (I like to use my cast-iron skillet) and transfer cooked meatballs into the sauce. Simmer for 5-10 minutes, serve and enjoy!

- Heat oven to 375°F.
- Cover rimmed baking sheet with foil; spray with cooking spray. Mix all ingredients except gravy just until blended.
- Shape into 24 meatballs, using about 1 Tbsp. turkey mixture for each meatball; place on prepared baking sheet.
- Bake 20 min. or until meatballs are done (165°F), heating gravy as directed on jar after 15 min.
- Spoon meatballs into serving dish; drizzle with gravy.

- In a bowl, combine spinach, egg, bread crumbs, onion and seasoned salt. Add turkey and mix well. Shape into 2-in. balls. Place meatballs on a greased rack in a shallow baking pan. - Preheat oven to 400 degrees F. Prepare a large baking sheet by spraying with cooking spray. I actually line my baking sheet with foil and then spray with cooking spray.
- In a frying pan on medium heat, heat olive oil until hot. Then add onion, garlic, salt, pepper, thyme, oregano, and red pepper flakes. Sauté until onion is tender (about 5-6 minutes total time).
- Add spinach to pan and combine with onion mixture. Add Worcestershire sauce and chicken broth and mix well to combine. Cook until most of the liquid has cooked out (evaporated). I don't have much liquid in my pan after I combine all these, but it will depend on how well you drained your spinach. Remove from heat and allow to cool to room temperature.
- In a large bowl, combine the turkey, bread crumbs, and egg. Add cooled onion/spinach mixture to the meat. I do all of this step with my hands, but you can use a spoon if you prefer.
- With your hands, create meatballs that are about 1 - 1 1/2 inches in diameter and place them on the baking sheet. Leave a little bit of space between each meatball. When you are done shaping your meatballs, you will probably have about 40-42 meatballs from this recipe. Don't need that many? Freeze them after baking or cut this recipe in half (but I say freeze them and then you've done the work only once and have a future meal).
- Bake until your meatballs are cooked through with an internal temperature of 160 degrees F - which was about 20 minutes for my oven. Remove from oven and serve as desired.

TURKEY AND SPINACH MEATBALLS

- Combine ground turkey, spinach, ricotta cheese, parsley, Parmesan cheese, salt, garlic powder, and red pepper flakes in a bowl.
- Gently pack turkey mixture into a ¼ cup measuring cup or ice cream scoop and form into meatballs. Lightly season the outside of meatballs with additional salt.
- Spray meatballs all over with cooking spray and arrange in a single layer in the frying basket, working in batches as needed.
- Lower the frying basket into the cooking pot and close the air fryer lid. Cook at 420°F until meatballs are browned on top and have an internal temperature of 165°F, about 12-14 minutes. Repeat with remaining meatballs.

- Heat the oil in a large wide pot over medium-high heat. Add the onion, celery, bell pepper and garlic and cook, stirring frequently, until soft, about 5 minutes. Transfer to a large bowl and cool. Reserve the pot.
- Meanwhile, add the turkey, oats, Parmesan, Worcestershire, spinach, 1/2 teaspoon salt and 1/4 teaspoon pepper to the cooled vegetables. Mix well and form into 24 small meatballs.
- Pour the marinara into the reserved pot and bring to a simmer. Add the meatballs, cover and cook, turning once or twice, until cooked through, about 8 minutes.
- Serve the meatballs and sauce over spaghetti and serve Parmesan on the side.

FLORENTINE MEATBALLS

- Preheat oven to 400 degrees F.
- Wring defrosted spinach dry in a clean kitchen towel. Place turkey in a bowl and make a well in the middle of it. Add the spinach, all but 3 tablespoons of the onion, all of the garlic, 1 large egg, about 1/4 cup milk, bread crumbs, grated Parmesan, salt and pepper. Mix well. Form into 12 large balls and drizzle with extra-virgin olive oil. Arrange on a nonstick cookie sheet and roast 20 minutes, or until cooked through.
- While balls are in the oven, heat a small sauce pot over medium heat. Add a drizzle of extra-virgin olive oil and 2 tablespoons butter. Melt butter, add remaining finely chopped onion and cook 2 minutes then whisk in flour. Cook flour 1 minute, then whisk in 1 1/2 cups milk and 1 cup stock. Bring liquid up to a boil then stir in shredded provolone or blended Italian cheeses. Season the sauce with salt, pepper and nutmeg, turn heat to lowest setting.
- Place 3 balls on dinner plates and top with sauce, garnish with parsley.
SPINACH MEATBALLS
This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.Update: 03/13/2010 Elainemae, a reviewer suggested we use infant's rice cereal instead of breadcrumbs and it serves a dual purpose - increase the iron content. Great idea! :)

- Preheat oven to 350°F.
- In a medium bowl, combine ground beef, spinach, egg, onion powder, garlic powder, bread crumbs, salt & pepper.
- Mix all ingredients well and form into small meatballs.
- Place meatballs on jelly roll pan and place into preheated oven; bake for 40-50 minutes (depending on size of meatballs).
- While meatballs are cooking, prepare pasta according to package directions, drain and keep warm.
- In a large skillet or sauce pan, pour jar of prepared spaghetti sauce.
- When meatballs are fully cooked, remove from oven and place in sauce.
- Simmer on medium heat 6-8 minutes.
- Serve meatballs and sauce over cooked pasta.
- Top with grated Parmesan cheese.

These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets."
