I'm on a constant quest to provide lean but still delicious food for my family. This is my most recent take on chili. Top with your favorite garnishes, or enjoy as is!

Steps:
- Coat a large saucepan with cooking spray and cook 1 chopped sweet onion over medium heat until tender, about 5 minutes. Add chili starter, oregano, and chicken broth; increase heat to medium-high and simmer for 20 minutes.
- Coat a large stock pot with cooking spay and cook remaining 1/2 chopped sweet onion, green bell pepper, and jalapeno pepper over medium heat until tender, 5 to 8 minutes. Add ground cumin, cocoa powder, chili powder, garlic salt, paprika, and cayenne pepper; cook 2 minutes. Mix in ground turkey and pork; cook and stir until meat is crumbly, evenly browned, and no longer pink, about 10 more minutes. Drain and discard any excess grease.
- Stir diced tomatoes with green chiles, fire-roasted tomatoes, and diced tomatoes with green peppers and onions into chili; simmer for about 3 hours.

CROCK POT CHILI WITH TURKEY & SAUSAGE

- In a 5-quart crockpot combine canned tomatoes and beans, cover and turn on high while you prepare the rest of the ingredients.
- Brown the turkey and sausage together in the same skillet, seasoning with seasoned salt,regular salt, and pepper, drain and add to crockpot.
- (Note: If I have a 1-lb package of each, I usually cook all of it and freeze half for the next time I make chili.) Saute green pepper and onion in a little olive oil until tender and add to crockpot.
- Season to taste with chili powder, basil, oregano and garlic powder.
- NOTE: If you use pre-seasoned canned tomatoes, you may not need to add additional seasonings, or not as much.
- I usually add a small spoonful of sugar or a squirt of ketchup to take the acid edge off the tomatoes and sweeten it up just a bit.
- You'd be surprised at the difference this makes!
- Once everything is in the pot, add as much or as little of the tomato or V8 juice as you like to get the desired consistency.
- Cover and cook on high 4-5 hours, longer if you use low.
- Serve with Corn Bread.
- Variations: You can substitute chili hot beans or black beans for one of the cans of kidney beans, or use ground beef in place of the turkey.
- You can add a can of tomato paste to thicken it (just add a bit more sugar or ketchup).

- Gently mix ground pork, ground turkey, chili powder, coarse salt, and dried oregano and ground cumin. Divide into eight equal portions; shape into 4 1/2-inch-diameter patties.
- Heat grill to high. Lightly oil grates. Place patties on grill; cover grill, and cook until centers are no longer pink and register 165 degrees on an instant-read thermometer, about 3 minutes per side. (If desired, place a slice of cheese on top of each burger about 1 minute after flipping.) Serve on a whole-wheat bun spread with Chipotle Mayonnaise (optional).

- Put slow cooker on high and add red onion, carrots and bell pepper.
- Then put the turkey on top of the veggies.
- Add 1/2 cup of chicken stock and chili seasoning and mix into the turkey meat.
- Cover with zucchini, corn, tomatoes, beans, chipotle peppers, the remainder of your chicken stock, salt and pepper to taste.
- Stir in your slow cooker until combined.
- Cover slow cooker and let the chili cook for at least 4 hours on high, or 10 hours on low.
- Taste throughout cooking and adjust salt and pepper levels to your desire.
- Serve with cheddar cheese, sour cream, chopped scallions and enjoy!

- Heat the olive oil in a large pot over medium heat. Add the onion and sauté 5-6 minutes until onion is translucent and softened.
- Add the garlic and spices and sauté 30 seconds. Add the ground turkey and 1/4 cup water and stir, breaking up the meat into pieces with a wooden spoon. Cook, stirring occasionally, until the turkey is no longer pink, about 5-6 minutes.
- While the turkey is cooking, mash one cup of the rinsed and drained beans in a bowl with a fork. When the turkey is cooked through, add the mashed beans, whole beans, tomatoes and chicken broth, and stir until combined. Bring to a boil, reduce heat slightly, and simmer 20-30 more minutes until thickened.
- Remove from heat and add the lime juice, cilantro, salt and pepper to taste. Serve with lime wedges and avocado if desired and enjoy!

PAT'S FAMOUS BEEF AND PORK CHILI

- In large heavy-bottomed Dutch oven, cook the bacon over medium heat until lightly crisp, stirring occasionally. Once the bacon is browned, add the garlic, onions, bell peppers, chili powder, cumin, chipotle chili powder, oregano, and smoked paprika and season with salt and pepper, to taste. Cook until the vegetables are tender and seasonings are aromatic. Add the beef and break it up with a wooden spoon. Once beef is broken up and beginning to brown, add the pork. - 1. In a large pot, heat the oil until shimmering and add the ground turkey, onion and garlic. Sauté over medium-high heat for five minutes and add the next eight ingredients (salt through the bay leaf) and stir occasionally until the meat is cooked for about five additional minutes. Add the beer and reduce the heat to medium. 2. Add the diced tomatoes with their juice and the sauce. Stir to combine. 3. Rinse the beans thoroughly and add to the chili. Stir to combine, and bring to a boil. Cover and reduce the heat to low. Simmer for at least two hours and up to five, stirring occasionally and making sure to keep the heat low enough to avoid burning. 4. Serve with cornbread, shredded cheddar cheese, sour cream and a lime wedge.
