Turkey mushroom pot pie is a delicious way to use up leftover turkey!

3 tablespoons butter
1/2 onion (, chopped)
2 cups chopped mushrooms
2 garlic cloves (, minced)
3 tablespoons all-purpose flour
2 cups turkey or chicken broth
1 cup milk
1 heaping teaspoon fresh chopped thyme
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups chopped leftover turkey
1 single pie crust
1 egg + 1 tablespoon water (, for egg wash (optional))

Steps:

  • Preheat oven to 400°F.
  • In a medium skillet, melt butter over medium heat. Add onions and mushrooms and cook until soft, about 5 minutes. Add garlic and cook for 1 minute.
  • Add flour and stir until vegetables are coated.
  • Add broth slowly while whisking constantly. Mixture will be lumpy but should become smooth as you whisk. Once all broth is incorporated, whisk in the milk.
  • Stir in thyme, salt, and pepper. Bring to a boil and cook for a few minutes until thickened.
  • Remove from heat and stir in cooked turkey.
  • Add mixture to a 9 inch pie plate and top with pie crust. Crimp edges and brush with egg wash, if using. (See note.)
  • Bake until crust is golden and filling is bubbling, about 30-35 minutes.

It doesn't get much more comforting than the classic British pie - add streaky bacon and thyme and serve in individually portioned dishes

Number Of Ingredients 11

1 tbsp butter
1 large onion , finely chopped
4 rashers streaky bacon , chopped
140g chestnut mushrooms , sliced
250g turkey mince (thigh is best)
25g plain flour
200ml chicken stock
a few thyme sprigs , leaves picked
½ x 375g sheet ready-rolled puff pastry
1 egg yolk , beaten
wilted spring greens , to serve

Steps:

  • Heat the butter in a large pan. Add the onion and cook for 8-10 mins until softened. Add the bacon and mushrooms, and cook until both are browned. Add the turkey mince, breaking up with a wooden spoon, and cook for another 5 mins until browned.
  • Add the flour, stir for 1 min or so, then pour in the chicken stock and add the thyme. Mix well and cook over a medium heat for 1-2 mins until it boils and thickens slightly. Season to taste and set aside to cool for 10-15 mins.
  • Heat oven to 220C/200C fan/gas 7. Once cooled, divide the turkey mixture between 2 ramekins or mini pie dishes. Unroll the pastry and cut out 2 squares to sit on top. Press the edges down the side of the dishes and glaze with the egg yolk. Bake in the oven for 30 mins until golden and cooked through. Serve with wilted spring greens.

1 small onion, chopped
1/4 cup all-purpose flour
3 cups chicken stock
3 cups cubed cooked turkey breast
1 package (16 ounces) frozen peas and carrots
2 medium red potatoes, cooked and cubed
3 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme
1/4 teaspoon pepper
1 sheet refrigerated pie crust
Additional fresh parsley or thyme leaves, optional
1 large egg
1 teaspoon water
1/2 teaspoon kosher salt

Steps:

  • In a Dutch oven coated with cooking spray, saute onion until tender. In a small bowl, whisk flour and stock until smooth; gradually stir into Dutch oven. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat. Add turkey, peas and carrots, potatoes, parsley, thyme and pepper; stir gently., Preheat oven to 425°. Divide turkey mixture among eight 10-oz. ramekins. On a lightly floured surface, unroll crust. Cut out eight 3-in. circles. Gently press parsley into crust if desired. Place over turkey mixture. Beat egg and water; brush over tops. Sprinkle with salt., Place ramekins on a baking sheet. Bake 20-25 minutes or until crusts are golden brown. Freeze option: Securely wrap baked and cooled potpies in plastic and foil; freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 425°. Unwrap potpies; bake in oven until heated through and a thermometer inserted in center reads 165°. Cover top with foil to prevent overbrowning if necessary.

2 medium potatoes, peeled and cut into 1-inch pieces
3 medium carrots, cut into 1-inch slices
1 medium onion, chopped
1 celery rib, diced
2 tablespoons butter
1 tablespoon olive oil
6 tablespoons all-purpose flour
3 cups chicken broth
4 cups cubed cooked turkey
2/3 cup frozen peas
1/2 cup plus 1 tablespoon heavy whipping cream, divided
1 tablespoon minced fresh parsley
1 teaspoon garlic salt
1/4 teaspoon pepper
2 sheets refrigerated pie crust
1 large egg

Steps:

  • Preheat oven to 375°. In a Dutch oven, saute potatoes, carrots, onion and celery in butter and oil until tender. Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in turkey, peas, 1/2 cup cream, parsley, garlic salt and pepper. , Spoon into two ungreased 9-in. pie plates. Unroll crusts; place over filling. Trim crusts and seal to edge of pie plates. Cut out a decorative center or cut slits in crusts. In a small bowl, whisk egg and remaining 1 tablespoon cream; brush over crusts., Bake until golden brown, 40-45 minutes. Let stand 10 minutes before cutting. Freeze option: Cover and freeze unbaked potpies up to 3 months. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 425°. Place pie on a baking sheet; cover edge loosely with foil. Bake 30 minutes. Reduce oven setting to 350°; remove foil. Bake until golden brown and a thermometer inserted in center reads 165°, 55-60 minutes longer.
