TWO-INGREDIENT DOUGH
This fan-favourite dough is a quick (and healthy!) way to have all your favourite carbs. Our basic version will help you make impressive bagels, pastries, calzones, pizza, and more. Make sure to let your ball of dough rest for five minutes before use so it's easier to work with. Add dry or fresh seasonings to the dough to add a touch of flavour. Baking times and temperatures vary based on the items being made with the dough but in general, the dough cooks well at 350°F for about 10-15 minutes. Swap in gluten-free self-rising flour for regular self-rising flour, if desired.

If dough is too sticky to knead, add more flour, 1 Tbsp at a time, until no longer sticky; let sit five minutes. Divide dough into 8 equal pieces and roll or form into the shape for your desired recipe.

- Preheat oven to 400°F(200°C).
- In a large bowl, mix the self-rising flour and greek yogurt until it comes together to form a ball.
- Transfer the dough ball to a lightly floured work surface and use your hands to begin flattening and shaping the rough into a roughly 8-inch (20 cm) disk.
- Using a bench scraper or knife, cut the dough into 4 equal pieces.
- One at a time, roll each piece of dough into a log roughly 8 inches (20 cm) long. Shape the log into a ring and transfer to a parchment paper-lined baking sheet.
- Brush the tops of the bagels with egg wash and sprinkle generously with everything seasoning.
- Bake for 20-25 minutes, until the bagels are golden brown.

- Preheat the oven to 180C/350F. Line a baking tray with parchment paper and set aside.
- In a large mixing bowl, combine your flour and Greek yogurt and mix well, until fully combined and a ball of dough remains.
- Lightly grease a kitchen surface with extra flour. Place the ball of dough on top, and top with a little extra flour.
- Gently kneed the dough on both sides, flattening it out into a circular shape. Slice into 4 even pieces.
- Use your hands to roll the dough into a thin, sausage shape. Join both ends of the dough to form a bagel shape. Place on the lined tray and repeat until 4 bagels are formed. Lightly brush the tops of each bagel with either butter, egg, milk or water. Sprinkle the seeds on top.
- Bake the bagels for 20-22 minutes, or until golden brown. Remove from the oven and allow to cool completely.

- Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment.
- Stir the flour and yogurt together in the bowl of a heavy-duty stand mixer using a spoon until the dough just becomes crumbly. Use your hands to mix the dough to form a smooth ball; the dough will feel slightly sticky. Attach the bowl to the mixer and beat with the dough hook on medium speed until the dough pulls away from the sides of bowl and forms a smooth ball, about 5 minutes (be sure not to overmix as the dough will become sticky again).
- Divide the dough into 6 balls. Roll each ball into a 3/4-inch-thick rope, then pinch the ends together to form a circle. Place on the prepared baking sheets. If using, brush the top of each bagel with egg wash and sprinkle on the desired topping.
