- Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
- Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
- Slice in half, sprinkle with paprika and tuck in.

- Drain water from the canned tuna and add to a bowl.
- Add 3-4 Tbsp Mayonnaise. You can add more or less according to preference. (See notes)
- Stir the tuna well, so that it becomes easily spreadable.
- Add the mustard and minced shallots.
- Use a fork to mix and stir the tuna to get it more smooth and spreadable. I like it only slightly chunky. If you want it extremely smooth, mix further.
- Once the texture is to your liking, add in the freshly chopped dill, salt, pepper, and paprika. Stir till thoroughly incorporated.
- Chill the tuna spread for at least 30 minutes in the fridge for best results. The filling tastes better chilled.
- To assemble: Shred the lettuce (rinsed and dried using a salad spinner or on kitchen paper).
- For each sandwich, apply a thin layer of Mayo on both slices of Un-toasted bread. Spread a generous layer of chilled tuna filling on one slice and top with plenty of shredded lettuce. Place the second slice over the lettuce and use a baking scraper to press it down, to prevent finger impressions.
- Cut the sandwich and serve while it is still chilled.
- if you want to store them wrap in sandwich paper or saran wrap and refrigerate till ready to use.

TART AND CRUNCHY FRESH TUNA SALAD
Steps:
- Preheat the oven to 350 degrees F.
- Put a large sheet of parchment paper on a baking sheet. Arrange the lemon slices on the parchment, slightly overlapping, covering in an area just larger than the size of the tuna steaks. Season the tuna well on both sides with salt and pepper and arrange them directly on the lemon slices. Sprinkle the zest evenly over the tuna. Bring the 2 long sides of parchment together and fold down over the tuna; fold the ends of the parchment and tuck them under the fish like an envelope. Roast in the oven until cooked through, about 18 to 20 minutes; the tuna should flake easily with a fork and is no longer pink in the center.
- Open the parchment packet and let the tuna cool until it can be handled, then flake it with a fork. Transfer to a serving bowl along with any cooking juices it has released. Add the yogurt, grapes, and walnuts and stir to combine. Season with salt and pepper and freshly squeezed lemon juice, to taste. Serve immediately or refrigerate until ready to eat.
- Cook's Note: Serve this healthy salad on butter lettuce leaves, on a slice of toasted seedy whole wheat bread, with fresh cantaloupe slices, or eat straight out of the refrigerator with a fork!

- In a medium bowl, combine tuna flakes, flour, cornstarch, baking powder, minced carrots, minced onion, chopped spring onions, chili powder, pepper, salt and sugar.
- Mix all the ingredients well until incorporated. If the mixture is a bit dry, add a little water at a time. Start with about 1 tablespoon and stir it in.
- Using a spoon, scoop around 2 teaspoons of the mixture and form into balls, making about an inch size. Make the balls as uniform as possible.
- In a deep pan, heat oil over medium heat. Fry the fish balls for about 3-5 minutes or until golden brown.
- Remove from the pan and transfer to a plate lined with paper towels.
- Serve while hot with your favorite fish ball sauce.

- Make the ponzu sauce: In a small bowl, combine the soy sauce, mirin, lemon zest and juice, grapefruit juice, orange juice, bonito flakes, and kelp. Mix until well combined, then cover and let steep in the refrigerator overnight.
- Make the lime crema: In a small bowl, mix together the sour cream, lime zest and juice, garlic, and salt until smooth. Refrigerate until ready to use.
- Prep the roll: In a medium bowl, combine the imitation crab, mayo, Sriracha, sesame oil, and togarashi. Mix until well combined, then season with salt and pepper to taste. Refrigerate until ready to use.
- Melt the butter in a small pan over medium-low heat. Add the asparagus and garlic and sauté until the asparagus is tender, 2-3 minutes.
- In a separate small pan over medium heat, toast the cooked quinoa until darkened in color and crispy, 4-5 minutes.
- Assemble the roll: Slice the tuna about ⅛ inch thick.
- Lay a sheet of plastic wrap on top of the sushi mat. Carefully arrange the tuna slices, starting at the bottom of the mat, into a 9½ x 3½-inch rectangle.
