2 5 oz. cans of tuna in water (well drained)
3 garlic cloves (grated)
1/4 cup finely chopped white onion
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice
1 tablespoon lemon zest
1 large egg
1/4 cup plain breadcrumbs
2 tablespoons mayo
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley
4 tablespoons plain breadcrumbs
3 tablespoons grated Parmesan cheese
2 tablespoons olive oil (divided)

Steps:

  • Start by draining canned tuna from water. I use a small colander to do that.
  • Next, combine it with garlic, onion, salt and pepper, lemon juice and zest, egg, breadcrumbs, mayo, 1/4 cup of grated Parmesan cheese and dried parsley. Mix well.
  • Combine remaining breadcrumbs and grated cheese in a shallow dish. Scoop 1/4 cup of tuna mixture, form into a patty and lightly coat with breading mixture.
  • Fry cake in pan with oil, until nicely browned on each side. Remove from pan and let rest for 5 minutes. Serve with spinach or other greens, additional lemon wedge or even simple aioli.

Another great recipe from my "Flavors of Cape Cod" cookbook. The author is J.L.R. and wrote: "We always had codfish cakes with baked beans on Saturday night, and I think everyone else on Cape Cod had the same 50 years ago.

1 lb salt codfish, freshened and shredded
5-6 potatoes, cubed
1 egg
2 Tbsp butter
salt and pepper

Steps:

  • 1. To freshened fish, soak in warm water for several hours, changing water three times. When ready to prepare recipe, simmer in fresh water until fish will flake easily.
  • 2. Cook potatoes and mash together with codfish. Add other ingredients. Mix well. Shape into patties and fry in 1/4" oil in fry pan. (best if you can use a cast iron frypan)

I was never much a fan of tuna patties, but I was tired of the same old same old tuna, and wanted the convenience they offer, I kept experimenting until I came up with these. I think they are very good, and are even better with one of the three dipping sauces I like to make with them (the mustard dill sauce is adapted from the Joy of Cooking). Made smaller into bite-sized pieces they also make great appetizers when served with the sauces. They are great cold as well, and even will tend to keep a bit of the crispness. Prepare the dipping sauce first so they can sit a bit in the fridge to let the flavors blend. If you can make the sauces the day before or early in the day, even better. Any creamy dill sauce is also good with these, or feel free to use your own favorite. They are even good plain without any sauce. As far as the crackers go, Ithe recipe calls for Ritz crackers, but I have also used Club, and even plain saltines or soda crackers in a pinch, although a bit of the richness of flavor is lost. I've also combined crackers when I've had some of each left over. Although you can make them into crumbs in a blender, I like to use my tabletop electric mini-chopper because it gives a better, coarser texture. The blender crumbs are very fine and will give excellent results as well, I think the slightly coarser crumbs are a bit better.

20 buttery crackers (like ritz)
2 (7 ounce) cans canned tuna, drained and well-flaked
1/4 cup very finely minced onion
2 tablespoons very finely minced bell peppers
1 slice American cheese, finely minced or 2 tablespoons finely shredded cheddar cheese
1 tablespoon mayonnaise
1 egg
1/4 teaspoon salt (to taste)
1/4 teaspoon fresh ground black pepper (to taste)
1/2 teaspoon ground ginger
1/4 teaspoon dried dill
oil (for frying)
3 tablespoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons minced fresh dill or 2 teaspoons dried dill
1 -2 tablespoon sugar
salt and pepper
1/2 cup olive oil or 1/2 cup vegetable oil
3 tablespoons Dijon mustard or 3 tablespoons your favorite mustard
1/4 cup honey
1 -2 tablespoon mayonnaise, depending on how mild you like the sauce
2 teaspoons white wine (optional)
1/4 teaspoon dried mint
salt and pepper
1/2 cup mayonnaise
1 teaspoon curry powder
1/2 teaspoon sugar

Steps:

  • In a food chopper, processor or blender, process the crackers into crumbs and set aside.
  • In a bowl, combine the flaked tuna, onion, bell pepper, cheese, mayonnaise, egg, salt, pepper, giner and dill. Add 6 tablespoons of the cracker crumbs and mix very well with a fork, making as smooth as possible. The texture should be soft, but firm enough to be able to form into patties. If needed, add a bit more of the cracker crumbs.
  • Put the remainder of the cracker crumbs in a shallow dish. Scoop out a scant 1/4 cup of the tuna mixture, roll into a ball, put into the crumbs, press down to flatten the pattie to about 1/2 to 3/4 inch thick, then turn and dredge the other side with the crumbs. Put on a plate and continue until all the tuna mixture is used up.
  • If you can, let the tuna patties sit in the fridge for about 1/2 hour to set a bit.
  • In a large skillet (I like to use my electric set at 375) add enough oil to coat the entire bottom with a thin layer. When heated, add the patties and cook until well-browned and crispy on one side, then turn to brown and crisp the other side. Add more oil if needed as you go along. Remove to a plate lined with a paper towel and top with a 2nd paper towel to help drain some of the oil, then serve with your favorite dipping sauce, or even plain. They are also good served cold.
  • Mustard Dill Sauce: In a bowl, combine the mustard, lemon juice, dill, sugar, salt and pepper and whisk until smooth. Add the oil gradually while whisking until all the oil is incorporated and the sauce is thickened. Let this chill in the fridge to blend flavors.
  • Honey Mustard: Combine all the ingredients in a bowl and whisk until smooth and well blended. Let chill in the fridge to blend flavors.
  • Curried Mayonnaise: Combine all the ingredients in a bowl and whisk until smooth and well-blended. Let chill in the fridge to blend flavors.

1 cup seasoned bread crumbs, divided
1 egg, beaten
1/4 cup finely chopped green onion
1/4 cup finely chopped sweet red pepper
1/4 cup reduced-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 tablespoon butter

Steps:

  • In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
  • Divide mixture into eight portions; shape into 2-inch balls.
  • Roll balls in remaining bread crumbs.
  • Flatten to 1/2 inch thickness.
  • In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.

TUNA LOAF

I was looking for a tuna loaf recipe and found Carol Junkins 'Tuna Cakes~Flavors of Cape Cod.' I made few changes and additions, and on Carol's suggestion, here it is. Loaf will be on the dry side, since it's tuna and therefore, no fat, so you may want to serve with tartar sauce, a dill mayo, or any of your choice.

5 can(s) tuna, packed in water, drained
1 1/2 - 2 c ground oatmeal (i used my food processor)
1/2 green pepper, finely chopped
4 stalk(s) celery, finely chopped
6-8 baby carrots, finely chopped
3 eggs
4 Tbsp light cream cheese (i had whipped, so that's what i used)
2 Tbsp minced garlic
1 Tbsp lemon juice
1 Tbsp dill
seasoning (such as mrs. dash)
few turns of fresh ground pepper

Steps:

  • 1. Chop oatmeal in food processor. Set aside. Chop celery, pepper, and carrots.
  • 2. Mix all ingredients together until well blended; shape into loaf. Place in 8x8 baking dish sprayed with cooking spray.
  • 3. Bake at 350 for 30-45 minutes. Let rest 15 minutes before slicing.
  • 4. Serve with tartar sauce or a dill mayo.

Two 5- to 6-ounce cans tuna packed in oil or water, drained
2 to 3 slices sandwich bread, torn into small pieces (about 1/2 cup total) or 1/2 cup plain breadcrumbs
1 tablespoon brown or Dijon mustard
1/3 cup mayonnaise
1 large lemon, zested and juiced
1/4 small red onion, finely diced (about 2 tablespoons)
1/4 cup parsley, finely chopped
1 large garlic clove, grated
2 teaspoons seafood seasoning, such as Old Bay seasoning (can substitute Cajun seasoning)
1/2 teaspoon kosher salt
2 large eggs, lightly beaten
Olive oil, for frying

Steps:

  • For the tuna cakes: Place the drained tuna in a large bowl. Add the bread or breadcrumbs, mustard, mayonnaise, lemon zest and juice, onion, parsley, garlic, seafood seasoning, salt and eggs. Toss until evenly combined. Let sit 5 to 10 minutes to let the ingredients absorb the liquid.
  • Meanwhile, make the lemon chili mayo: Whisk together the mayonnaise, lemon zest and juice, chili powder and cayenne in a small bowl. Set aside.
  • Heat 2 tablespoons of olive oil in a 10- to 12-inch heavy-bottomed nonstick or cast-iron skillet over medium heat.
  • Scoop out about 1/3 cup of the tuna mixture at a time and pat into a round patty shape in your hands, then immediately place it in the skillet. Repeat, working in batches so that you're cooking 3 to 4 tuna cakes at a time, spaced 1 to 2 inches apart. Cook until crisp on the bottom, about 2 minutes, then flip and cook until crisp on the sides and fully cooked through, 2 to 3 minutes.
  • Serve the tuna cakes hot with your favorite side, a drizzle of the lemon chili mayo and lemon wedges, if desired.
