Healthy Tuna Grain Bowl with Turmeric Sweet Potatoes and Spicy Yogurt Dressing image

This healthy grain bowl is loaded with fresh ingredients and vibrant flavors, thanks to the tangy, spicy yogurt sauce and turmeric-roasted sweet potatoes. Plus, you can easily make this dish from pantry staples and long-lasting freezer items. Serve with an extra squeeze of lime juice for a nutrient-packed and sustaining meal.

2 medium sweet potatoes, peeled and diced into 1-inch pieces
2 tablespoons toasted sesame oil
3/4 teaspoon ground ginger
3/4 teaspoon ground turmeric
Kosher salt and freshly ground black pepper
3 cups frozen cooked brown rice (about 24 ounces)
1/4 head red cabbage, thinly sliced (about 2 cups)
2 small carrots, trimmed and peeled into paper-thin ribbons
2 large limes, halved, 1 half cut into wedges for serving
3/4 cup nonfat plain Greek yogurt
1 tablespoon fish sauce
2 teaspoons chili paste, such as sambal oelek
1 1/2 teaspoons honey
Two 5-ounce cans albacore tuna packed in water, drained
1 cup frozen shelled edamame, thawed
2 scallions, thinly sliced
Toasted sesame seeds, for serving

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed baking sheet with aluminum foil.
  • Toss the sweet potatoes, 1 tablespoon of the sesame oil, 1/2 teaspoon of the ginger, 1/2 teaspoon of the turmeric, 1/4 teaspoon salt and several grinds of pepper on the prepared baking sheet until evenly coated. Roast until tender and lightly browned, tossing halfway through, about 30 minutes.
  • Meanwhile, heat the frozen brown rice according to package directions; keep warm. Toss the sliced cabbage, carrot ribbons, the juice from 1 lime half, a pinch of salt and a couple grinds of pepper in a medium bowl until well dressed and combined.
  • Squeeze the juice from the remaining 2 lime halves into a small bowl. Stir in the yogurt, fish sauce, chili paste, honey, the remaining 1 tablespoon sesame oil, 1/4 teaspoon ginger and 1/4 teaspoon turmeric, a pinch of salt and several grinds of black pepper until smooth. Taste and adjust the seasoning with salt and pepper.
  • Divide the warm rice among 4 shallow bowls (about 3/4 cup per bowl). Top with the roasted sweet potatoes, cabbage-carrot slaw, tuna (about 1/4 cup per bowl), edamame and sliced scallions. Drizzle with the spicy yogurt dressing, sprinkle with toasted sesame seeds and serve with the reserved lime wedges for squeezing.

This recipe comes from the Chicago Tribune, published in the 1980s. I made it often but lost the recipe one day. I searched online for years, trying to find it again, and even tried to recreate it from memory, but nothing was quite right. We're remodeling the kitchen now, and lo and behold, the recipe card fell to the floor when we took the old cabinets down! So here it is, never to be lost again.

1 (9 1/2 ounce) can tuna, drained and flaked
3/4 cup cheddar cheese, grated
1/4 cup mayonnaise
2 tablespoons parsley, chopped
1 tablespoon lemon juice
4 green onions, chopped with tops
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups biscuit mix
1/2 cup water
celery seed (optional)

Steps:

  • Heat oven to 425°F Grease a small baking sheet.
  • Combine tuna, cheese, mayonnaise, parsley, lemon juice, onion, salt, and pepper. Blend thoroughly and set aside. (Note: You can use Swiss or another kind of cheese if you like.).
  • Add water to biscuit mix, and knead 10 times on a lightly floured surface.
  • Pat dough into a 10x12-inch rectangle in the center of the baking sheet.
  • Spread tuna mixture evenly down the center of the rectangle.
  • Make 6-7 cuts down each side of the rectangle, from the outer edge to the tuna mixture.
  • Bring the opposite strips up and over the filling and seal the ends to form a braid.
  • Sprinkle with celery seed.
  • Bake 15-20 minutes at 425°F.
  • Use two large pancake turners to lift onto serving plate.
  • Cut into pieces crosswise.

2 hard-boiled eggs, chopped
1/4 cup light mayonnaise
1/4 cup chopped onion
2 tablespoons dill relish
1 diced roma tomato
1 (8 ounce) can pillsbury reduced-fat crescent rolls
1 cup shredded swiss cheese
1 tablespoon sesame seeds

Steps:

  • Heat oven to 375°F.
  • Combine tuna, eggs, mayonnaise, onion, dill pickle (or relish) and diced tomato.
  • Separate dough into 2 long rectangles.
  • Place on ungreased baking sheet with long sides overlapping 1/2 inch ; press center seam and pinch perforations together to form one large rectangle (approx. 13.5" x 8.5").
  • Spoon tuna mixture lengthwise down center of dough. Sprinkle 1/2 cup cheese over filling.
  • Cut slits 1" apart on each side of rectangle from filling to edge.
  • To give braided appearance, fold strips of dough across filling, alternating from side to side.
  • Bake for 17 to 20 min or until golden brown. Remove from oven; sprinkle with remaining 1/2 cup cheese and sesame seeds.
  • Garnish with parsley sprig.

1 medium onion, thinly sliced
1 crushed clove garlic
1 red pepper, seeded and cut in julienne strips
1 tablespoon olive oil
1 fresh tuna steak, approximately 1 1/2 inches thick, weighing 1 to 1 1/4 pounds
1 cup dry white wine
1/2 cup pitted black Kalamata olives, coarsely chopped
1 tablespoon drained capers, coarsely chopped
1 tablespoon finely shredded lemon peel

Steps:

  • Use a heavy, lidded saute pan, large enough to hold the tuna and vegetables comfortably. Over medium-low heat, saute the onion slices, garlic and julienned red pepper strips in the oil until the vegetables are soft.
  • Dry tuna steak. Push vegetables to edge of pan and turn heat to medium-high. Quickly brown tuna on both sides. (Add more oil if needed.) When tuna is nicely browned, add wine and let it come to a boil. Turn heat to low, cover pan and steam tuna in wine for 8 to 12 minutes, to desired degree of doneness.
  • Add olives, capers and shredded peel and stir to mix with vegetables.
  • Remove fish and place on a warm platter. Distribute vegetables over and around fish. Turn heat to high and rapidly boil down the juices in the pan until they are reduced to 2 or 3 tablespoons of syrupy glaze. Add to the fish and serve immediately.

1 can crescent roll dough
2 cans (6 oz. each) water packed tuna, drained
1 pkg (8 oz.) Philadelphia Cream Cheese (light or Neufchatel), softened
1/3 cup salad olives, drained

Steps:

  • Open crescent roll dough and lay out in a rectangle shape on a jelly roll pan
  • Mix remaining ingredients. Form a "log" lengthwise down center of dough with tuna mixture.
  • Make 1 inch slits in dough perpendicular to tuna mixture. Beginning at either end, alternately fold strips of dough across the center of log, forming a braid.
  • Bake 15 to 18 minutes at 375 degrees F until golden brown. Cut into four segments with spatula and serve while hot.
