HEALTHY TUNA LETTUCE WRAPS

Steps:
- Brush the tuna with a little oil. Heat a non-stick pan, add the tuna and cook for 1 min each side, or a min or so longer for a thicker fillet. Transfer to a plate to rest.
- Halve and stone the avocado and scoop the flesh into a small bowl. Add the mustard powder and vinegar, then mash well so that the mixture is smooth like mayonnaise. Stir in the capers. Spoon into two small dishes and put on serving plates with the lettuce leaves, and tomatoes.
- Slice the tuna (it should be slightly pink inside) and arrange on the plates. Spoon some 'mayo' on the lettuce leaves and top with tuna and cherry tomatoes and a few extra capers. To eat, roll up into little wraps.

- 1. Combine tuna, mayonnaise, onion, lemon juice and zest in a bowl. Mix well ,until blended
- 2. Put a good amount of the spinach leaves, some carrot and tomato pieces in the center of each tortilla or wrap. Place equal amount of tuna mixture on top. Fold in edges and cut in half and place on plate. use string or toothpicks to hold together.

Steps:
- In a saucepan, add the water and salt; bring to a boil.
- Add the green beans and cook for 2-3 minutes or until the beans turn bright green and are crisp-tender.
- Drain the water from the pan and rinse the beans with cold water; drain beans and set aside.
- In a small bowl, add the lemon juice, mustard, celery salt, and pepper to taste; whisk until smooth and well combined.
- Gradually add the olive oil and continue to whisk until fully blended.
- In another bowl, add the green beans, tuna, olives, bell pepper, onion, and tarragon; stir to combine.
- Add the dressing and toss to coat.
- Evenly sprinkle the cheese onto the tortillas, leaving a 1 inch margin around the edge.
- Spoon salad mixture onto tortillas; roll-up/wrap.
- Serve immediately.

- Combine tuna, carrot, raisins, peanuts, red onion, red bell pepper, cilantro, and jalapeno peppers in a bowl.
- Stir mayonnaise, cream cheese, lime juice, curry powder, and jalapeno juice (to taste) together in a separate bowl; mix into tuna mixture until evenly combined. Spread tuna mixture onto tortillas and roll tortilla around filling. Refrigerate wraps for 1 hour before slicing.
