2 tuna steaks (8 ounces each), cut into 1/2-inch cubes
4 tablespoons olive oil, divided
2 tablespoons lemon juice
1/4 teaspoon dried oregano
1/4 teaspoon minced garlic
1/8 teaspoon salt
1/8 teaspoon pepper
1 medium cucumber, peeled and chopped
1 small red onion, thinly sliced and separated into rings
1/3 cup halved pitted Greek olives
1 large tomato, cut into wedges
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute tuna in 1 tablespoon oil until fish flakes easily with a fork; cool. , In a jar with a tight-fitting lid, combine the lemon juice, oregano, garlic, salt, pepper and remaining oil; shake well. , Drain pasta and rinse in cold water. , In a large salad bowl, combine the pasta, tuna, cucumber, onion, olives, tomato and feta cheese. Drizzle with dressing; gently toss to coat.

3 (5-ounce) cans tuna, drained
½ cup red onions, chopped
½ cup sliced pepperoncini
10-12 sweet peppers, diced (or 1 red bell pepper)
½ cup chopped parsley
5-6 cups arugula
1 teaspoon lemon zest
3 tablespoons EACH: lemon juice AND olive oil
1/4 cup mayonnaise
1 tablespoon ranch dressing mix (powder)
½ teaspoon garlic powder
1-2 teaspoons sugar
salt and pepper

Steps:

  • PASTA: prepare the pasta according to package directions. Drain and allow the pasta to cool.
  • DRESSING: Add all the ingredients for the dressing in a mason jar, screw on the cap and shake until the ingredients are well combined. Start with 1 teaspoon of sugar, taste and adjust as desired with additional sugar, salt, and pepper.
  • SALAD: Add all the ingredients for the salad in a large bowl if you plan on serving all of it right away. If not, I suggest combining everything but the arugula and tossing with the salad dressing. Add the arugula right before serving.

1 cup canned tuna, drained and flaked
1 cup sliced celery
1 cup canned white beans, drained and rinsed
1/2 cup olives, pitted and chopped

1 1/2 tablespoons lemon juice
1/2 cup chopped fresh mixed herbs

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; drain and rinse under cold water. Transfer to a large bowl.
  • Add the tuna, celery, white beans and olives to the bowl with the pasta.
  • Make the dressing: Whisk the mayonnaise, sour cream, lemon juice, herbs, and salt and pepper to taste in a bowl. Pour over the pasta salad and toss to coat. Season with salt and pepper. Chill for up to 3 hours.

White Bean and Tuna Fish Salad with Lemon Pepper Dressing image

This is my version of an old Italian favourite, and I think the addition of a sharp lemon dressing and some buttery rocket leaves gives a lovely edge. If you forget to soak the beans overnight, you can rinse them with cold water and place them in a saucepan, cover with plenty of water, bring up the boil for 10 minutes, then turn off the heat and leave them to soak for 2 hours. Next, bring them up to the boil and boil gently for 1½-2 hours, or until the beans are tender.

9 oz (250 g) cannellini beans
2 x 200 g tins tuna fish in oil
1 oz (25 g) rocket, stalks removed
2 oz (50 g) red onion, peeled and sliced into thin rounds
salt and freshly milled black pepper
3 tablespoons extra virgin olive oil
grated zest 1 lemon
3 tablespoons lemon juice
1 rounded teaspoon black peppercorns
2 cloves garlic, peeled
1 level tablespoon Maldon sea salt
1 heaped teaspoon mustard powder

Steps:

  • Begin this the night before you are going to make the salad by placing the beans in a bowl and covering them with cold water to soak. Next day, drain the beans, then put them in a large saucepan, cover with fresh water and bring them up to simmering point. Boil for 10 minutes, then cover and simmer gently for 1¼-1½ hours, or until tender. Meanwhile, empty the tuna fish into a sieve fitted over a bowl and allow it to drain, reserving the oil. Then, to make the dressing, first crush the garlic and salt using a pestle and mortar till the garlic is pulverised, then work the mustard powder into this. Now push the mixture to one side, add the peppercorns and crush these fairly coarsely. You can watch how to prepare garlic in our Cookery School Video on this page. Next add the grated lemon zest, along with the lemon juice, olive oil and 3 tablespoons of the reserved tuna oil (the rest of the tuna oil can be discarded). Whisk everything together very thoroughly, then, when the beans are cooked, drain them, rinse out the saucepan and return the beans to it. Now pour the dressing over while the beans are still warm, give everything a good stir and season generously. To serve the salad, arrange three-quarters of the rocket leaves over the base of a serving dish, spoon the beans on top and add the tuna fish in chunks. Then add the rest of the rocket leaves, pushing some of the leaves and chunks of tuna right in amongst the beans. Finally, arrange the onion slices on top and serve straight away, allowing people to help themselves. Warm, crusty ciabatta bread would be an excellent accompaniment.

6 flat filet anchovies, optional
6 cloves garlic, finely chopped
1 cup breadcrumbs, toast and grind stale bread or store bought (have frozen ends in fridge to give tip - save ends until you have a bunch, toast and grind)
2 lemons
1/2 cup flat leaf parsley, finely chopped
1/2 teaspoon crushed red pepper flakes, optional
1 pound penne or ziti rigate
4 ribs celery, finely chopped
1 red onion, finely chopped
1 (15-ounce) can white beans, rinsed and drained
2 sprigs fresh rosemary, finely chopped
1/2 cup white wine, white vermouth or chicken broth
2 cans 6 ounces each Italian tuna in oil or water, drained
1 large tomato, seeded and chopped or 1 can 15 ounces can diced tomatoes, drained, optional

Steps:

  • Heat 4 tablespoons EVOO in small pan over medium-low heat with anchovies, if using. Melt anchovies into oil until they dissolve then add garlic and stir 2 minutes then add breadcrumbs and stir and cook until deeply golden in color. Stir in zest of 2 lemons and parsley and crushed red pepper flakes. Turn off heat and transfer to a bowl.
  • Heat a large pot of water to a boil for pasta.
  • Heat a large skillet over medium heat with 2 tablespoons EVOO, couple of turns of the pan. Add celery, onions and 2 cloves garlic to the pan and cook until just tender, 5 minutes. Add white beans and rosemary and heat through 2 to 3 minutes more. Add wine, vermouth or broth, flakes tuna and tomato, if using. Stir 2 minutes then turn off heat.
  • Just before draining the pasta, add a ladle of starchy cooking water to pan along with the drained pasta, toss to combine. Serve in shallow bowls with lots of breadcrumbs and a drizzle of oil on top.

1 tbsp lemon juice
½ tsp chilli powder
1 plump garlic clove , finely chopped
410g can cannellini bean , drained and rinsed
1 small red onion or half a medium one, finely chopped
a good handful of parsley , chopped
200g can tuna , drained
110g bag mixed salad leaf and herbs

  • Boil the potatoes for about 15 minutes, until tender. Meanwhile, make the dressing.Whisk the oil, lemon juice, chilli powder and garlic in a bowl big enough to take all the salad. Tip in the cannellini beans, onion and parsley.

1 (16 ounce) can red kidney beans
4 cups cooked whole wheat pasta (penne is best)
1/4 sweet onion, finely diced
2 -3 garlic cloves, finely chopped
2 celery ribs, finely diced
2 carrots, finely diced
1/2 sweet red pepper, finely diced
6 sun-dried tomatoes
10 kalamata olives (optional)
1/4 cup olive oil

Steps:

  • Boil water with salt and set pasta to cook just until texture is beyond a la dente, but not soft.
  • Drain tuna and add to large glass bowl. Break larger pieces so tuna is flakey.
  • Drain and wash beans and add to tuna.
  • Place non-oil packed sundried tomatoes in a bowl with hot water. Let stand for 5 minutes. After five minutes, drain excess water from tomatoes, chop and add to tuna and beans.
  • Remove olive pits by cutting a slit into each olive length wise. Add to tuna, beans and tomatoes.
  • Add chopped onion, garlic, celery, carrot, bell pepper.
  • Add mustard, oregano, basil, (dried or fresh) salt & pepper to taste, olive oil and lemon.
  • Stir and serve immediately or refrigerate for use up to 2 days later.

1/4 c scallions (diced)
2 celery stalks (diced)

1/4 c pine nuts (toasted)
2 tbs extra virgin olive oil
Juice and zest of one lemon
Salt and pepper to taste

Steps:

  • Cook whole wheat penne in salty water according to package directions (about 8 minutes for whole wheat.)
  • Place pasta in a large bowl and mix in beans, tuna, red pepper, scallions, celery, parsley and tomato.

  • Blanch green beans until just tender, drain and set aside. Drain beans into colander and rinse with fresh water. Drain tuna and then mix thoroughly in a bowl with a generous squeeze of lemon, salt, pepper, and oregano (to taste). If tuna was packed in water not oil, add a drizzle of olive oil as well. Combine all ingredients (along with chopped fresh herbs) and mix gently. Add lemon juice, olive oil, salt and pepper to taste.
