Flavor this homemade hot cocoa with peppermint extract, and serve it with a peppermint stick.

4 cups low-fat milk (2-percent)
3/4 cup sugar
1/2 cup unsweetened cocoa powder (not Dutch process)
4 ounces semisweet chocolate, finely chopped
1/2 teaspoon pure vanilla extract
1/8 to 1/4 teaspoon pure peppermint extract
Whipped cream and peppermint sticks, for serving

Steps:

Heat the milk, sugar, cocoa powder, chocolate and vanilla in a medium saucepan over medium heat, whisking occasionally until the sugar dissolves, the chocolate melts and the mixture is hot and steaming. Stir in the peppermint extract, adding the full amount for a stronger mint flavor. Divide between 4 mugs and serve with a spoonful of whipped cream and a peppermint stick.

1/2 teaspoon pure vanilla extract
3/4 cup sugar
1/2 cup unsweetened cocoa powder
4 ounces semisweet or bittersweet chocolate, finely chopped
3 tablespoons crushed peppermint sticks, plus more for serving
Pinch kosher salt
Unsweetened whipped cream, for serving
Peppermint sticks, for serving

Steps:

Heat the milk and vanilla in a medium saucepan over medium heat until hot and steaming. Combine the sugar, cocoa powder, chocolate, crushed peppermint and salt in a bowl, then whisk into the milk. Reduce the heat to low and simmer, stirring, until the chocolate and peppermint melts and the cocoa thickens slightly, about 2 minutes. Divide among 4 mugs, top with dollops of whipped cream. Sprinkle with crushed peppermint and serve each with a peppermint stick.

3 peppermint stick candy (4 1/2")
1 cup confectioners' sugar
1 cup non-dairy powdered coffee creamer
3/4 cup unsweetened cocoa
licor 43 vanilla liqueur (optional)
whipped cream

Steps:

Place peppermint crushed sticks in a food processor till fine powder.
Add with sugar, creamer and cocoa.
Pulse till mixed.
Add 1/4 cup mix to 3/4 cup boiling water for each serving.
If you like serve with a shot of 43 and top with whipped cream.
