SLIGHTLY SWEET CRANBERRY COCKTAIL NUTS



Slightly Sweet Cranberry Cocktail Nuts image

Dried cranberries add a slightly sweet touch to mixed nuts coated with paprika, dry mustard and cinnamon.

3 tablespoons sugar
1 1/2 teaspoons paprika
1 1/2 teaspoons minced fresh thyme
3/4 teaspoon ground mustard
1/4 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the baking sheet
1 large egg white
1 cup unsalted raw cashews
1 cup unsalted raw peanuts
1 cup unsalted raw pecans
1 cup unsalted raw walnuts
1 cup dried cranberries

Steps:

  • For the cocktail spice blend: Mix together the sugar, paprika, thyme, mustard, cinnamon, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a small bowl and set aside.
  • For the nuts: Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
  • Put the egg white in a large bowl and whisk until frothy. Add the cashews, peanuts, pecans and walnuts and toss to coat in the egg white. Add the spice blend and toss to coat again.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then stir in the cranberries and transfer to a large bowl.

3 berry (blank)s whole allspice berries, crushed
1 (750 milliliter) bottle red wine
3/4 cup spiced simple syrup (recipe above)
3 cups sparkling water
¼ cup fresh orange juice
1 orange, thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced
2 cups ice cubes

Steps:

  • Spiced Simple Syrup: Place all of the ingredients in a medium saucepot, stir.
  • Place on high heat, bring to a boil. Reduce heat, and simmer 5 minutes.
  • Remove from heat, allow to cool completely.
  • Pour syrup through a strainer to remove spices.
  • Pour syrup into a jar with lid and store refrigerated. Shake before using.
  • Sangria: Combine wine, 3/4 cup spiced simple syrup, sparkling water, orange juice, and fruit slices. Stir briskly.
  • Serve over ice in large red wine glasses.

Steps:

  • Heat oil in a large pot over medium heat. When the oil is hot, add Truvia® natural sweetener, salt and popcorn and stir to coat. Cover and shake constantly over medium heat until most of the corn has popped, about 4 to 5 minutes.
  • When the popping slows to once every 2 to 3 seconds, remove the lid and shake until all popping has stopped. remove from the heat and quickly transfer to a serving bowl. Salt to taste.

1 tsp. ground cinnamon
1 sheet of puff pastry (1/2 pound)
2 tbsp. melted butter

Steps:

  • Preheat oven to 400 degrees F. line two baking pans with parchment paper.
  • Combine Truvia® natural sweetener and cinnamon in a small bowl. on a lightly floured surface, roll out the pastry dough into a large rectangle, about 15 by 12 inches. use a pastry brush to spread the butter all over the pastry.
  • Sprinkle the cinnamon mixture evenly over the pastry. roll the pastry inward from the outsides of the two long ends of the rectangle (like a scroll) until they meet in the middle. Brush the pastry with the water where it meets to hold together.
  • Slice the pastry crosswise into 14-inch palmiers and lay them on the prepared baking sheets. Bake until they puff and turn evenly golden brown, about 15 minutes. Cool and serve at room temperature.
