Perfectly crumbly, irresistibly buttery and wonderfully delicious, Scottish Shortbread has been a favorite treat for centuries!

2 cups (240 grams) all-purpose flour
2 sticks (230 grams) quality unsalted butter
1/2 cup (120 grams) caster sugar
1/2 teaspoon salt
Optional Add-Ins:
Homemade Candied Ginger ((click link for recipe))
Homemade Candied Citrus Peel ((click link for recipe))
Other options include nuts, fresh herbs, dried cranberries, etc.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 8x8 or 9x9 inch square baking pan. You can also use a round cake can and cut the shortbread into triangles.
  • Place the caster sugar, flour, salt and butter in a food processor and pulse until it's combined and looks like coarse breadcrumbs but is soft and pliable and comes together in a dough when you press it together between your fingers. If it's too dry and crumbly it needs to be pulsed a bit longer. (If using any add-ins, stir them in at this point.)Pour the mixture into the greased baking pan. Use your fingers and hands to firmly press down the mixture. Note: If the mixture is too dry to work with, including pricking with a fork (see below), then it was not pulsed long enough in the food processor. Optional: Prick the shortbread with the tines of a fork, creating rows. Some people also like run a knife between each row of fork tines to make cutting the shortbread easier after it's baked. You can also prick the shortbread with a fork immediately after it is done baking while it is still warm; the holes will be more pronounced this way as they have a tendency to close during baking.
  • Place the shortbread on the middle rack and bake for 30-35 minutes or until light golden and firm. Let cool. Cut and serve.Store the shortbread in an airtight container for up to several weeks. Its flavor and texture improves over time.

1 1/2 cups self-raising flour
1/2 cup margarine
1/2 teaspoon salt
1 egg, beaten
1 cup brown sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees and grease a baking sheet. Melt sugar, margarine and vanilla in a saucepan over low heat. Once melted, remove from heat; after the mixture has cooled, add the egg and mix. In a separate bowl, mix the flour and salt. Make a well in the center and pour in the egg/margarine/sugar mixture. Knead into a stiff dough (it will be fairly dry but needs no extra moisture). Roll out the dough on a floured surface to 1/2 inch thickness. Cut out the biscuits with a 2-inch biscuit cutter and place on the baking sheet (with sufficient space to allow them to spread). Bake for 20 minutes until light golden in color.

Another recipe I found on rampantscotland.com which is resourceful, easy, rich and makes a huge amount. Hope you enjoy this. This is the description of this on their web site. In the old days, when biscuits were sold loose, grocers sold mixed, broken biscuits at a lower price. This recipe was a good way of using them up and as a cake which requires no cooking, it can be easily made by the kids as well as experienced cooks. (Cooking time is set up time)

1 lb butter or 1 lb firm margarine
1 lb broken mixed biscuit (cookies)
1/2 lb chopped mixed, roasted nuts
1 teaspoon vanilla

Steps:

  • Melt the butter and chocolate together and stir.
  • Mix in the well broken biscuits, nuts and essence/extract and pour into a 10" by 15" baking tin, lined with greaseproof paper.
  • Smooth to a level top and leave it to set. Cut into fingers (literally a finger thick).

100g unsalted butter , softened, plus extra for the baking sheet
100g light soft brown sugar
2 tbsp golden syrup
175g self-raising flour
25g puffed rice cereal, such as Rice Krispies
dark chocolate chips, for decoration

Steps:

  • Heat oven to 160C/140C fan/gas 3. In a large bowl, beat together the butter, sugar and golden syrup until smooth.
  • Sift in the flour and mix together, then fold through the puffed rice cereal. Roll into walnut-sized balls and place, well spaced, on a lightly buttered baking sheet. Decorate each ball with a few chocolate chips.
  • Bake for 15-20 mins until golden. Leave on the baking sheet for 1 min before removing to a wire rack to cool.
