CRISPY TROUT WITH KITCHEN BUTTER SAUCE
Steps:
- If it's convenient, set the serving plates to warm in a low oven (175 degrees F) as you prepare the fish.
- For the sauce, melt 1 tablespoon of the butter in a small saucepan over medium heat. Add the garlic and thyme and cook them briefly until lightly browned. Add the cream, bring it to a boil and reduce quickly by half. Add the remaining 10 tablespoons butter gradually, pat by pat, whisking until incorporated. When the sauce is smooth and thick, discard the garlic and thyme and add the chives, sherry vinegar, tarragon and salt and pepper to taste.
- Heat two large cast-iron skillets over medium-high heat. Sprinkle both sides of the fish with salt and pepper and dust the skin sides with the flour. When the pans are hot, add enough canola oil to thinly coat the bottom of each and add a fish to each pan, skin-side down. Cook until the skins turn golden brown and opaque doneness creeps into the pink flesh of the fish. You want to cook the fish nearly all the way through on the skin side. Flip the fish and transfer them to a plate to keep warm in the oven. Cook the remaining fish.
- Pour 3 to 4 tablespoons of sauce onto each warm plate, top with a trout, skin side pointing up, and serve immediately.
RAINBOW TROUT WITH YOGURT SAUCE
Steps:
- In a medium bowl combine the yogurt, cucumber, dill, lemon zest, olive oil and salt and pepper. Mix well and set aside.
- Turn oven broiler on. Coat a broiler pan with non-stick cooking spray.
- Sprinkle fillets with lemon pepper and place on broiler pan. broil for about 8 minutes or until fish flakes with a fork. To serve spoon yogurt sauce over fish.

SAUTEED RAINBOW TROUT WITH GREEN TOMATO AND BLACKBERRY SAUCE

- Preheat oven to 450 degrees F.
- Put the tomato and lemon juice in a food processor or blender and puree it. Transfer the tomato puree to a medium saucepan and heat over medium heat, bringing it to a low boil. Add the celery, lemon zest, sugar, cinnamon, nutmeg, and water. Reduce the heat to low and simmer until the sauce is thick, like a marinara sauce. Remove from the heat and gently mix in the blackberries. Add salt, to taste.
- Lightly flour both sides of the trout and sprinkle it with salt and pepper. Heat a large skillet over medium-high heat and add enough olive oil to sear the trout. When the oil is hot, add the trout and sear on both sides just until brown. Place the skillet in the oven and continue cooking until the fish is flaky, about 10 minutes. Top with the sauce and serve immediately.
TROUT WITH CAPER SAUCE
this is a very quick easy meal that even a novice can cook. to make it easier buy your trout at the fishmongers and get them to gut and clean the fish.

- a few hours before cooking put oil in a bowl with the crushed garlic and lemon juice and beat together then add capers and salt and pepper to taste.
- then leave to infuse.
- when ready to cook fish, remove grill rack from pan and line with foil, pre heat grill and arrange the trout over the foil,.
- then gash the trout twice in the thickest part of the body and brush with a little oil and a sprinkle of salt and pepper.
- then pour over the caper sauce.
- grill under a high heat untill the skins become crispy brown (3-4 mins each side).
- then serve with the pan juices alongside a nice fresh salad or good old fashioned chips.

BAKED TROUT WITH SPINACH-BUTTER SAUCE

- Preheat the oven to 375° F.
- Clean the trout and wash well, making sure to remove the line of blood from the inside near the backbone. Dry with paper towels and season inside and out with salt and freshly ground pepper. Put a lump of butter and a sprig of fennel into the center of each trout. Take a large sheet of aluminum foil and smear a little butter on the center. Put the trout onto the buttered bit and fold over the edges into a papillote shape. Seal well to ensure that none of the juices can escape. Repeat with the other trout. Put the two foil parcels on a baking sheet, making sure they are not touching. Bake in the preheated oven for about 30 minutes.
- Meanwhile, make the spinach-butter sauce. Remove any large stems from the spinach and wash well. Cook in 2 1/2 cups salted boiling water for 4-5 minutes or until just soft and tender. Drain, pressing out every last drop of water, then mince the spinach. Put the cream into a saucepan and simmer on low heat until reduced to about 3 tablespoons. Then, on a very low heat, whisk in the butter bit by bit as though you were making a hollandaise sauce. Stir in the spinach.
- When the fish is cooked, open the parcels and use some of the delicious juices to thin the sauce. Put the two parcels on a hot serving dish and bring to the table. Skin the fish and lift the juicy pink flesh onto hot plates. Spoon the spinach-butter sauce over the fish and eat immediately.
BAKED TROUT WITH GARLIC & MUSHROOMS

- To cook trout, wash and dry the fish inside and out and coat sides with a little olive oil.
- Slice mushrooms and place half in the bottom of a shallow baking dish.
- Salt and pepper fish, inside and out, to taste and place in dish on top of mushrooms.
- Sprinkle bread crumbs over fish along with the minced parsley, chopped garlic and the green onion.
- If using fresh lemons, squeeze 1 or 2 directly over the entire trout including the inside.
- Meanwhile melt butter, add to olive oil and the juice of 2 lemons.
- Pour slowly over fish saving about half of the mixture.
- Bake for 20-25 minutes at 375 degrees or until they are tender and bread crumbs are light brown.
- Fish is done when the meat flakes easily when a fork is inserted into the flesh and lifted up slightly.
- Just before the fish are done, saute 1-2 minutes , the remaining mushrooms in the sauce that is left and pour over top after placing trout on a serving plate.
- Garnish with a few lemon wedges and a few sprigs of fresh parsley.
- Serve this Italian Trout recipe with rice, or Italian pasta, and a vegetable.

- Open each trout flat like a book. Sprinkle generously with salt and pepper. Dust trout with flour and shake off excess. Heat 1/2 tablespoon olive oil in heavy large skillet over medium-high heat. Add 1 trout and sauté until coating is crisp and trout is just opaque in center about 2 minutes per side. transfer trout to plate and tent with foil to keep warm. Repeat with remaining 1/2 tablespoon oil and trout.
- Wipe out skillet with paper towels. Set aside 2 tablespoons green onions. Add remaining green onions, wine and butter to same skillet.
