1/4 cup sugar
One 3-inch piece fresh ginger, peeled and chopped
Zest of 1 lime
1 pint strawberries, hulled and halved or quartered
2 kiwi, peeled, sliced and quartered
1 mango, cut into chunks
1 orange, segmented
1 small pineapple, cut into chunks
1 papaya, cut into chunks
Handful fresh mint, chopped

Steps:

  • Combine the sugar, 1/4 cup water, ginger and lime zest in a small saucepan. Bring to a boil and cook until the sugar is melted. Remove it from the heat and refrigerate until cold.
  • Strain the mixtures into a large bowl and toss in the strawberries, kiwis, mango, oranges, pineapple and papaya to coat. Cover and refrigerate again until cold, at least 1 hour.
  • Serve in small bowls and garnish with the chopped mint.

CITRUS POPPY SEED DRESSING:
12 mandarin oranges, divided (for dressing and salad)
2 cup strawberries, sliced
1 pineapple, cut into bite size chunks
5 kiwi, sliced
3 mangoes, cut into bite size chunks
1 medium lemon
1 lime
1/4 cup honey
1/2 teaspoon Gourmet Garden Ginger Paste or fresh grated ginger
1/2 teaspoon poppy seeds

Steps:

  • Wash and dry lemon, lime and 2 mandarin oranges. Zest the washed and dried citrus with a zester or fine grater. Add to 1 cup measuring cup or small bowl. Cut each in half and squeeze the juice into the measuring cup. (You should get about 1/2 cup juice). Add honey, ginger and poppy seeds to juice mixture and whisk until combined. Set aside or place in the refrigerator if serving later. Prepare remaining fruit. Slice strawberries and kiwi. Section remaining oranges. Cut pineapple and mango into bite size chunks. Place fruit in a large bowl. Pour dressing on top of fruit about 30 minutes before serving. Gently toss to coat. Serve and enjoy! Cook's note: This fruit salad is fabulous with whatever you have on hand. I love carambola (star fruit) and papaya in this salad as well. Bananas are lovely, but have to be added at the last minute or they will get soft and not look pretty.

1 honeydew melon
1 pineapple
1 pint strawberry
1 large banana
1 (8 ounce) carton vanilla yogurt (or lemon, or pineapple)
2 ounces swiss cheese

Steps:

  • Cut the honeydew and pineapple into 3/4" cubes. Slice the strawberries in half. Slice the banana. Shred the cheese.
  • Place half of the lettuce in a large salad bowl.
  • Layer fruits on top of the lettuce.
  • Top fruit with remaining lettuce.
  • Spread yogurt over top, sealing to sides of bowl. Sprinkle with cheese.
  • Cover and chill 2-3 hours before serving.

1 honeydew melon or 1 cantaloupe, peeled, seeded & cubed
1 (20 ounce) can pineapple chunks, drained
1 pint strawberry, halved

1/2 cup shredded swiss cheese

Steps:
