1 medium mango, peeled and cubed
1 medium green apple, cubed
1 medium red apple, cubed
1 medium pear, cubed
1 medium navel orange, peeled and chopped
2 medium kiwifruit, peeled and chopped
10 seedless red grapes, halved
2 tablespoons orange juice
1 firm medium banana, sliced
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, combine the first 7 ingredients. Drizzle with orange juice; toss gently to coat. Refrigerate until serving. Just before serving, fold in banana and sprinkle with coconut.

4½ titanium-strength gelatine leaves
1 litre coconut cream
220 gm (1 cup) caster sugar
2 limes, zested and juiced
1 tbsp finely grated ginger
1 tbsp finely shredded mint leaves
2 star fruit, sliced
1 large mango, cut into wedges
½ papaya, cut into wedges
1 small pineapple, sliced
1 young coconut, flesh removed

Steps:

  • To make jelly, soak gelatine leaves in a large bowl of cold water until softened (5 minutes). Combine half the coconut cream and half the sugar in a saucepan over low heat, stirring to dissolve the sugar. Bring to a simmer then add the squeezed gelatine and mix well. Stir in half the zest and juice and remaining coconut cream, then pour into a 1-litre capacity shallow tray and transfer to the fridge until set (4 hours).
  • Meanwhile, to make syrup, combine remaining sugar, 125ml (½ cup) water and ginger in a small saucepan over medium heat, stirring to dissolve sugar. Remove from heat and add remaining lime zest and juice. Transfer to the fridge to chill (30 minutes), then stir in mint.
  • Arrange fruit and coconut in serving bowls. Inverting jelly onto a board; cut into 2cm pieces and scatter over fruit. Drizzle over ginger syrup to serve.

1 can (11 ounces) mandarin oranges, drained
1 medium banana, sliced
1 cup miniature marshmallows
1-1/2 cups vanilla yogurt
1/4 cup sweetened shredded coconut
1/4 cup slivered almonds, toasted

Steps:

  • In a large bowl, combine the tropical fruit, oranges, banana and marshmallows. Add yogurt; toss gently to coat. Sprinkle with coconut and almonds. Refrigerate until serving.

1 mango
1 papaya
1 small pineapple (extra-sweet)
2 oranges, juice of
2 small bananas
1 (7 ounce) container fromage frais with added cream
4 teaspoons dark muscovado sugar

Steps:

  • Cut a thick slice off each side of the mango to reveal the large, flat stone.
  • Cut the flesh away from the stone, peel the fruit, then cut into slices.
  • Halve the papaya, scoop out the black seeds, peel away the skin then slice the fruit.
  • Cut the top and skin away from the pineapple.
  • Cut it into quarters then core and slice it.
  • Mix the fruits with the juice of the oranges, then chill until ready to serve.
  • Mash the bananas and stir them into the fromage frais.
  • spoon the fruits into bowls and top with the fromage frais and a sprinkling of the muscavado sugar.

To make jello a little more interesting, I added my favourite tropical fruits and it worked beautifully! This is so refreshing on a hot day and the low sugar version is great for waistline-watchers. I use sugar free jello but feel free to use a small packet of regular peach jello. I have been told that fresh pineapple prevents gelatin from setting so only use canned for this recipe. Cook time is chilling time.

1 (1/3 ounce) package sugar free peach Jello
1/2 cup boiling water
1/2 cup cold water
3/4 cup canned pineapple chunk (cut into smaller cubes if desired)
1 cup pineapple juice, from the can of pineapple chunks
1/2 cup diced fresh mango

Steps:

  • In a heatproof jug, mix the jello powder with the boiling water until dissolved.
  • Add the cold water and pineapple juice. Put in the fridge for about an hour, until starting to set but not set yet.
  • Add the fruit, evenly scattered through the jello (if it immediately falls to the bottom, put it back in the fridge to set a little more).
  • Put back in the fridge until completely set.

2 tablespoons coconut extract
1/2 lemon, juiced

1 dash cardamom
1/2 teaspoon butter, if desired to prevent foaming

Grate apple – skin, core and all – into pan. Bring to the boil, reduce heat to low and simmer, prodding lime skins under the surface occasionally, to infuse and to extract pectin (30 minutes). Pass mixture through a fine sieve into a clean saucepan, pushing with the back of a spoon to extract juice (discard solids). Add sugar to juice, return pan to heat and bring to the boil, stirring to dissolve sugar. Boil rapidly until liquid is reduced by half (12-15 minutes). Cool to room temperature.
  • Meanwhile, whisk eggs and honey in an electric mixer until firm peaks form (4-6 minutes). Open chilled coconut cream and spoon hardened top layer into a bowl (you'll need about 180gm). Stir mascarpone and vanilla through coconut cream, then fold in egg mixture, a third at a time, until smooth.
  • Layer mango and papaya into serving glasses, then spoon coconut-mascarpone cream on top, smoothing the surface. Stir apple jelly until smooth, gently fold in finger lime pearls and carefully spoon over the cream layer. Refrigerate to chill and set (at least 30 minutes), before serving.
