A vacation to Hawaii inspired me to create this mouthwatering brittle. Coconuts, macadamia nuts and pecans make my tropical-tasting recipe deliciously different.

2 teaspoons butter, divided
1/2 cup sweetened shredded coconut
1 cup sugar
1/2 cup light corn syrup
1 jar (3 ounces) macadamia nuts
1/2 cup chopped pecans
1 teaspoon baking soda
1 teaspoon water
1 teaspoon vanilla extract

Steps:

  • Butter a large baking sheet with 1 teaspoon butter. Sprinkle coconut in a 12-in. circle on the prepared pan. In a large heavy saucepan, combine sugar and corn syrup. Cook over medium heat until a candy thermometer reads 240° (soft-ball stage), stirring constantly. Stir in the macadamia nuts, pecans and remaining butter; cook and stir until the mixture reads 300° (hard-crack stage)., Combine the baking soda, water and vanilla. Remove saucepan from the heat; stir in the baking soda mixture. Quickly pour over the coconut. Cool before breaking into pieces. Store in an airtight container with waxed paper between layers.

1 cup sugar
1 cup light corn syrup
1 1/2 cups coarsely chopped macadamia nuts
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1 cup chopped shredded sweetened coconut

Steps:

  • Coat a large non stick baking sheet with nonstick spray.
  • Combine sugar and corn syrup into a heavy bottom 3 quart saucepan and mix.
  • Cook on medium-high heat and stir occasionally, until temp reaches 275 degrees.
  • Stir in nuts and continue cooking, stir occasionally, until temp reaches 305 degrees.
  • Set aside.
  • Quickly stir in baking soda,vanilla and coconut.
  • Spread mixture evenly onto baking sheet with a greased offset wooden spoon.
  • After brittle has completely cooled.
  • Loosen and break into medium large pieces.
  • Store in airtight container for 2 week.

2 cups milk
1 box (4-serving size) vanilla instant pudding and pie filling mix
1 teaspoon grated orange peel
1 round angel food cake (16 oz), cut into 1-inch cubes
2 tablespoons orange-flavored liqueur or orange juice
1 can (20 oz) pineapple tidbits, well drained
2 kiwifruit, peeled, cut into 1/4-inch slices
1 ripe mango, seed removed, peeled and cut into cubes
2 cups fresh strawberries, cut in half
1/4 cup shredded or flaked coconut

Steps:

  • In medium bowl, beat milk and pudding mix with wire whisk 2 minutes. Stir in orange peel. Let stand 5 minutes.
  • In 3 1/2-quart trifle bowl, place half of cake cubes. Drizzle with 1 tablespoon of the liqueur. Spoon 1 cup of the pudding over cake. Layer with pineapple, kiwifruit and remaining cake cubes. Drizzle with remaining 1 tablespoon liqueur. Spoon remaining pudding over cake. Layer with mango and strawberries. Cover; refrigerate at least 4 hours.
  • Sprinkle coconut in ungreased heavy skillet. Cook over medium-low heat 6 to 10 minutes, stirring frequently until browning begins, then stirring constantly until light brown. Cool completely; cover and set aside.
  • Just before serving, sprinkle trifle with toasted coconut. Spoon down to bottom of dish to scoop out servings.
