A popular and refreshing drink, the caipirinha features Brazil's cachaça. The recipe is very simple, so grab a lime and some sugar, and mix it up.

1/2 lime
1 1/2 to 2 1/2 teaspoons superfine sugar, to taste
2 ounces​ cachaça
Garnish: lime wheel

Steps:

  • Gather the ingredients.
  • Cut half of a lime into small wedges.
  • Place the lime and sugar into an old-fashioned glass and muddle well .
  • Top the drink with cachaça and stir well .
  • Fill the glass with small ice cubes or cracked ice , stir again, and garnish with a lime wheel. Serve and enjoy.

Cachaça, a liquor made from sugarcane, gives these drinks their distinctive flavor. In Brazil it is traditional to make caipirinhas one or two at a time, as we do here. For ease of entertaining, however, you can simply combine all the ingredients in a pitcher.

4 limes
1/2 cup sugar
Ice cubes
1 1/2 cups cachaça (from a 500-ml bottle)

Steps:

  • Quarter 1 lime lengthwise, then cut each quarter in half crosswise and divide pieces between 2 (6-ounce) glasses.
  • Add 1 tablespoon sugar to each glass, then muddle lime pieces by pounding and pressing with a wooden spoon until sugar is dissolved. Fill each glass with ice and add 3 tablespoons (1 1/2 ounces) cachaça to each, stirring well. Make 6 more cocktails in same manner.

2 limes , chopped into wedges, plus extra lime wedges to serve (optional)
5 tbsp golden caster sugar
200ml cachaça
ice

Steps:

  • Put the lime wedges in a large jug with the sugar, then use a muddler or the end of a rolling pin to break them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup - you can also do this with a large pestle and mortar. Discard the lime peel.
  • Divide the syrup and cachaça between four glasses, then top with the crushed ice. Serve garnished with lime wedges, if you like.

I found this cocktail recipe on the CookBrazil website. The Caiprinhia cocktail was designated the National Cocktail of Brazil, and has simple ingredients of limes, Cachaca liqueur, superfine sugar and crushed ice. For flavor variations, you can add other fruits like raspberries or cherries, or even cucumbers are popular in the summertime. But the authentic version is the lime Caipirinha.

Licor 43, or Cuarenta Y Tres, is a bright yellow liqueur made by Diego Zamora S.A. in Spain. It is made from citrus and fruit juices, flavored with vanilla and other aromatic herbs and spices, in total 43 different ingredients. It is 31% alcohol by volume at 62 proof. Licor 43 has gained increasing popularity within the last years and is more and more often used as an ingredient for a cocktail named "Caipirinha 43", in where it replaces the commonly used cachaca. Although the liquor is popular and available all over the globe, it is only recently that this liqueur is finding itself in regular liquor stores in the USA. Previously it was found in specialty shops and liquor stores of notable size. The history of this fine liqueur supposedly dates back to the ninth century B.C.E when Phoenician traders found Carthage. The culture that emerged soon found themselves noted for their libations. The Carthaginians were repeatedly invaded and overrun throughout history, but managed to hold onto the recipes of their liqueurs. One of these ancient recipes survived and ingratiated itself into the Spanish culture and was even present on the trans-Atlantic voyages of Columbus. The recipe contained forty three different citrus fruits, aromatic plants and other ingredients. It came to be known simply as 'Cuarenta Y Tres'.

Impera_Magna led me to this recipe when I was looking for a citrus chicken dish like one I'd had at a Thai restaurant. While this was nothing like the restaurant dish, it was very tasty and the family loved it! The recipe is from Nikibone.com, which has many recipes that look worth trying! I have not browsed the rest of the site. Cooking time includes two hours of marinating time.

6 boneless skinless chicken breast halves
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1 garlic clove, peeled and minced
1 tablespoon chives, chopped
1 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons fresh lime juice
2 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon balsamic vinegar
2 tablespoons vegetable oil
2 tablespoons heavy cream

Steps:

  • Between two layers of plastic wrap, pound chicken breasts with meat mallet to an even thickness of about 1/2 inch. Place chicken in large, self sealing plastic bag.
  • In a medium bowl, whisk together lemon zest, orange zest, garlic, chives, salt, pepper, lime juice, lemon juice, honey and balsamic vinegar.
  • Pour into bag, over chicken. Close bag securely and turn to distribute marinade.
  • Refrigerate at least 2 hours or as long as 24 hours, turning occasionally.
  • Remove chicken from bag. Shake excess marinade into bag and reserve.
  • In large, heavy, nonstick skillet over high heat, warm oil.
  • Saute chicken until browned, about 2 to 3 minutes per side.
  • Lower heat to medium and continue cooking until chicken is done, about 2 more minutes per side.
  • Transfer to serving platter and cover to keep warm.
  • Pour reserved marinade into skillet and bring to a boil over high heat. Scrape the bottom of pan with a wooden spoon to loosen any browned bits.
  • Add any liquid that has collected around chicken and let mixture boil for 2 minutes, until slightly thickened and reduced.
  • Stir in cream; cook for another minute. Pour hot sauce over chicken breasts.
  • Garnish with slices of lime, lemon or orange. Serve with rice or couscous, a green salad or vegetable and sliced mangoes for dessert.
