Easy Au Jus image

This is a simple aujus that goes well with most beef or steak dishes. Enjoy!

2 c beef broth
1 tsp onion powder
1 Tbsp flour
1/4 c butter or better than butter, the pan drippings from some type of beef
salt to taste

Steps:

  • 1. Heat your beef fat drippings or butter in skillet
  • 2. Add flour and brown in pan with beef fat drippings. NOTE: This sauce is not thick like a gravy, it's a thin broth, the flour just gives it a little substance, but it's shouldn't be thick.
  • 3. Add onion powder and beef broth.
  • 4. Bring just to a boil and turn off.
  • 5. Salt to taste.
  • 6. Ladel into small ramekins or dipper cups. Serve with roast beef, steak, French dip sandwich or any beef you like!

I found this on the Mama Loves Food blog. It's an Au Jus that you can make without pan drippings. Straining is optional; we found that we like the onions and garlic left in the au jus. We love this with our french dips!

olive oil, just enough to saute
1/4 cup red onion, chopped
1 teaspoon garlic, minced
1/8 cup white wine
1 tablespoon Worcestershire sauce
2 1/2 cups beef broth
1 teaspoon flour

Steps:

  • Caramelize the onions in the olive oil.
  • Add garlic and cook for a minute or two.
  • Deglaze the pot with white wine, then add Worcestershire sauce and cook for another minute, stirring constantly.
  • Add beef broth and bring to a light boil. Reduce heat and simmer for about 30 minutes.
  • Strain broth, if desired, and return to pot.
  • Add flour and simmer for an additional 5 minutes.

1 teaspoon soy sauce
1/4 teaspoon garlic powder

Steps:

  • Place the water in a medium sauce pan and bring to a boil.
  • Reduce heat to low; whisk in the beef bouillon.
  • Whisk in the soy sauce, garlic powder and salt and pepper to taste.
  • If you like a thicker Au Jus gravy, you can also whisk in a little flour to thicken it.

1 cup Beef Broth or juices from roast beef
1 tablespoon Worcestershire Sauce
1 cup Red Wine

Steps:

  • Place the roasting pan from cooking roast beef on the stove over low heat after removing the roast from the pan. Alternatively, you can use another pan to cook the au jus sauce. Whisk Worcestershire Sauce and Red Wine into the dish along with drippings from the beef. If using the roasting pan, scrape up any brown bits from the bottom of the pan. A wooden spoon works best for this.
  • Add beef broth or juices from the roast beef. Bring to a simmer. Serve hot with sliced roast beef.

3 cups cold water or leftover juice from roast, drained of fat
3 tablespoons beef base (Better Than Bouillon)*
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon Worcestershire sauce
2 teaspoons dark balsamic vinegar
½ teaspoon pepper
1 teaspoon cornstarch
1 tablespoon butter

Steps:

  • In a medium saucepan bring water to a boil.
  • Reduce heat to medium-low and whisk in the beef base, garlic powder, onion powder, Worcestershire sauce, balsamic and pepper.
  • Pour 1/4 cup of cold water into a measuring cup. Add 1 teaspoon cornstarch and whisk until smooth. Add to simmering broth mixture in pan. Whisk, turn up heat to medium high.
  • Add 1 tablespoon butter to hot au jus, whisk until melted. Serve while hot.

3 lbs chuck roast
1 package au jus mix (dry)
1 package Good Seasonings Italian salad dressing mix (dry)
1 (14 ounce) can beef broth
1/2 can water

Steps:

  • Spray crockpot with non stick spray.
  • Place roast in crockpot.
  • Combine all other ingredients and whisk until smooth.
  • Pour over roast.
  • Cover and cook on high for 6 hours or low for 10 to 12 hours.
  • Shred beef and trim fat.
  • Place meat back in juice.
  • Serve on French rolls.
  • Fill rolls with beef and add a little beef juice to sandwich.

This recipe was given to me 35 years ago as a beef romanoff dish. The dish required sour cream and cooked noodles added to the gravy. It was delicious but not my family's favorite dish. I adjusted the recipe to suit my family's taste by eliminating the sour cream and noodles and by slicing the roast very thin, placing the meat inside a hot yeast roll, serving with a small dish of gravy for dipping. After serving this to my son-in-law 16 years ago, this dish has become one of his favorite request when he visits. This meal is sliced roast beef in a large hot yeast roll served with the gravy for dipping. The gravy will not be thick.

1 (3 lb) rump roast
2 cups soup (Campbells beef broth bouillon , no substitutes)
1 tablespoon flour
salt
pepper
1 onion, sliced
1 dozen dinner roll
2 tablespoons olive oil

Steps:

  • Heat a tablespoon of olive oil in a large cast iron skillet.
  • Brown the roast in the skillet on all sides.
  • Cover the outside of the roast on all sides with lots of black pepper.
  • Place covered skillet in oven for at least one hour at 350.
  • At the end of one hour add flour to the hot oil in the skillet until it is dissolved.
  • Add both cans of soup to the roast and the onion.
  • Cook another hour in the oven.
  • Salt if needed. (Soup is salty).
  • Serve the roast thinly slice within the hot rolls and a small dish of the gravy.

HOMEMADE AU JUS - DRY MIX

Knorr makes onion bouillon. Just crush the cube(s) for the required amount. Makes about 1/3 cup mix yielding eight 1-cup servings.

1/8 teaspoon garlic powder
2 tablespoons cornstarch

Steps:

  • Combine all ingredients in a blender or food processor; whirl to a fine powder. Pour mix into a jar, label with directions and store at room temperature.
  • To use: Put 2 1/4 teaspoons mix into a small saucepan; stir in 1 cup of cold water. Heat to boiling, stirring constantly; mix in a few drops Kitchen Bouquet and, if you wish, a pat of butter.
