Categories     Other Appetizers

Time 35m

Number Of Ingredients 6

1 pkg (8 oz) kraft philadelphia regular cream cheese, at room temperature
2 oz crab meat or 2 sticks imitation crab meat (finely diced)
1 Tbsp powdered sugar
pinch of salt
20 wonton wrappers
oil, for deep frying

Steps:

  • 1. Mix all the cream cheese, crab meat, sugar, and salt in a bowl. Stir to blend well. Place about 1 tablespoon of the cream cheese filling in the middle of a wonton wrapper.
  • 2. Fold the two ends of the wonton wrapper together. Fold the other two ends to make a tiny parcel. Pinch to seal tight and make sure that there is no leakage. Use a little water to help sealing if needed.
  • 3. Heat up a pot of oil for deep-frying and fry the crab rangoon until golden brown. Dish out with a strainer or slotted spoon, draining the excess oil by laying the crab rangoon on a dish lined with paper towels. Let the crab rangoon cools down a bit before serving them with sweet and sour sauce.
  • 4. Cook's Notes: Use real crab meat if possible. My crab rangoon is based on the version I had in Chinese buffet restaurants, with imitation crab meat. Don't serve the crab rangoon immediately after deep-frying as the filling will be too hot!

They are tantalizingly crunchy on the outside giving way to warm, melty creamy crab filling inside. Categories     Appetizer

Time 55m

Number Of Ingredients 23

36 wonton wrappers
3 tablespoons water mixed with 2 teaspoons cornstarch
6 oz. lump crabmeat canned or fresh (picked over, patted dry*)
12 oz. cream cheese (softened)
3 tablespoons mayonnaise
1/4 cup finely chopped green onions
1 teaspoon reduced sodium soy sauce
1 teaspoon Worcestershire sauce
1 teaspoon Asian chili sauce
1/2 teaspoon toasted sesame oil
1/2 teaspoon lemon juice
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/4 tsp EACH dried mustard, salt, pepper
3/4 cups sugar
1/2 cup red wine vinegar
1/4 cup pineapple juice
3 tablespoons ketchup
1 tablespoon soy sauce
2 teaspoons cornstarch
1/2 teaspoon Asian chili sauce
1/2 teaspoon salt
1/4 teaspoon ginger powder

Steps:

  • Whisk together all Sweet and Sour Sauce ingredients in a medium saucepan. Bring to a boil then reduce to a simmer until slightly thickened. Set aside. (Sauce will continue to thicken as it cools.)
  • Mix together all of the filling ingredients except the crab meat, then gently fold crab into cream cheese mixture.
  • Line a baking sheet with parchment paper (to lay assembled wontons on).
  • Working on a flat, dry surface, lay out 2-4 wonton wrappers. Keep remaining wontons covered with plastic wrap or in a large freezer bag. Place one scant tablespoon wonton filling in the center of each wonton wrapper.
  • TO FOLD ALL FOUR CORNERS: Working with one wonton wrapper at a time, lightly brush the 4 edges of the wrapper with the water/cornstarch mixture. Bring the two opposite corners of the wonton together and pinch to seal. Next, pull the other two corners up so all the tips are touching. Press the tips together to seal, then work your way down to tightly seal the edges, pressing out excess air. It is okay if the edges don't evenly meet, as long as they are sealed closed. Place finished wontons on prepared surface and cover with a clean damp towel. Repeat with remaining wontons.
  • TO FOLD INTO TRIANGLES (recommended if baking): Working with one wonton wrapper at a time, brush the top 2 sides of the wrapper with water. Bring the two opposite corners of the wonton together (2 dry, 2 wet) to form a triangle and enclose the filling, pinching edges of the wrapper together to firmly seal, pressing out any air. Place finished wontons on prepared surface and cover with a clean damp towel. Repeat with remaining wontons.
  • Fill Dutch oven with 4 inches of vegetable oil and heat to 350 degrees (medium-high). If you don't have a thermometer, make sure to test a spare wonton to ensure the oil isn't too hot.
  • Gently add rangoons in batches so they don't overcrowd the pot, about 4-6. Fry until golden brown, either pressing down with a metal spyder to submerge or turning over once to cook evenly. Drain on paper towels and repeat with remaining rangoons.

BAKED CRAB RANGOON (USING IMITATION CRAB)

Baked Crab Rangoon (Using Imitation Crab) image

This is my version of the Crab Rangoon III recipe from allrecipes.com. I found the exact same imitation crab packages at Walmart for half the price that they were at Safeway.

Provided by Greeny4444

Categories     Chinese

Time 1h15m

Yield 48 wontons

Number Of Ingredients 8

2 (8 ounce) packages cream cheese, softened (low-fat is fine)
1 (8 ounce) package imitation crabmeat, flaked
1 1/2 teaspoons garlic, minced
1/4 teaspoon paprika
1/4 cup green onion, finely chopped, green parts only
1/2 tablespoon soy sauce
1 (14 ounce) package wonton wrappers
1 large egg, beaten

Steps:

  • In a food processor, mix all ingredients, except the wontons and the egg.
  • Preheat the oven to 375 degrees F.
  • Place approximately 1 teaspoon of the cream cheese mixture in the center of wonton wrappers. Moisten wrapper edges with a small amount of egg, fold over the mixture and pinch to seal.
  • Bake the wontons for about 15 minutes, or until golden brown.
  • Serve with plum sauce or sweet and sour sauce for dipping.
  • Notes:.
  • I have found wonton wrappers at both Safeway and Walmart, but I prefer the ones from Safeway. They are about the same price, and the Safeway ones are thinner and taste better (in my opinion).
  • You can also make these ahead and freeze them: Make the filling and seal the wontons. Place them (unbaked) on a baking sheet and stick the sheet in the freezer, until the wontons are frozen. Take the wontons off the baking sheet and put them in a Ziploc freezer bag (this way they won't stick together). When ready to bake, take as many as you need from the freezer, lightly grease a baking sheet, and bake as directed.

Contrary to popular belief, imitation crab is actually made with real fish meat — generally not crab meat though. It's usually made from surimi, or white fish flesh that has been deboned and minced into a paste, which is then mixed with other ingredients including both natural and artificial flavors, starch, sugar, and sodium.
