GARLIC CHEESE BREADSTICKS
Warm, fluffy and soft garlic cheese breadsticks are perfect side for borscht soup or other soups. Also, this mouth watering cheesy garlic breadsticks recipe is very simple and easy. It takes around 15 minutes to bake!

Steps:
- Pour 1 cup and 3 tablespoons of water into a Bosch mixer. Then, add 1 tablespoon of yeast, 2 tablespoons of sugar and 3 tablespoons of vegetable oil. Turn on mixer the lowest setting (1), to mix them a little bit. Let it wait for 5 minutes.
- While it's waiting, put 3 cups of bread flour, 1 and 3/4 teaspoons of salt, 1/2 teaspoon of garlic powder, 1/2 tablespoon of vital wheat gluten and 1/2 tablespoons of dough enhancer into a big bowl and mix them well.
- After that, turn on the mixer at the lowest setting (1), add the flour mixture into yeast mixture slowly. When the dough is coming together, increase higher setting to (3). Let it run for 5 minutes.
- Take the dough out and put it into a bowl and cover with a wet cloth. Let the dough rise for 45 minutes to an hour at room temperature. (My trick to speed up the time for dough rising is to preheat an oven for 200F and turn off. Then, put the dough in the oven cover with a wet cloth and let it rises for 20-30 minutes.)
- Next, divide the dough into 13 pieces.
- Roll the pieces into a long rope shape.
- Put a parchment paper on a cookie sheet and spray some oil. Then, lay the rolled dough on the tray and cover with a wet cloth let them rise again. (My trick to speed up the time for dough rising is to preheat an oven for 200F and turn off. Then, put the dough in the oven cover with a wet cloth and let it rises for 15-30 minutes.)
- At the meantime, melt 4 tablespoons of butter in a microwave for 20 seconds. Then, add 1 teaspoon of garlic powder, 1/4 teaspoon of salt and mix well.
- The dough rise again and double its size. Preheat oven for 400 F.
- Brush melted garlic butter on the dough.
- After, sprinkle 2 teaspoons of dried parsley on the dough.
- The following, sprinkle one cup of mozzarella cheese on the dough. And, bake them at 400F for 12-16 minutes. (I did it for around 15 minutes.)

- Pre-heat the oven to 190C/375F degrees.
- Line a baking tin with parchment paper.
- Place the broccoli in a food processor and blitz until it looks like small breadcrumbs.
- Put the broccoli in a bowl with the other ingredients and stir well.
- Spread out on the baking tin and cook for 20 minutes. If you are adding cheese for the topping put it on top for the last 5 minutes of cooking.
- Remove from the oven and cut into sticks

- Preheat the oven to 475 degrees F. Line a rimmed baking sheet with parchment and coat with cooking spray.
- Add the cauliflower and garlic to a food processor and pulse until finely ground and the consistency of couscous. Transfer the cauliflower mixture to a large bowl. Add the Italian seasoning, red pepper flakes if using, eggs, 1 cup Cheddar, 1/2 cup Parmesan, 1/2 teaspoon salt and a few grinds of pepper and combine until the mixture holds together when squeezed.
- Spread the cauliflower mixture into an 8-by-12-inch rectangle about a 1/4 inch thick on the prepared baking sheet. Use the straight edge of the parchment as your guide to keep the cauliflower mixture edges straight too. Bake until the crust turns golden brown all over, 18 to 20 minutes.
- Remove the baking sheet from the oven and lay another piece of parchment on top of the crust. Fit a second rimmed baking sheet on top so the bottom of the baking sheet is touching the parchment. Using oven mitts, hold the 2 baking sheets together and flip them over so the crust is now on the parchment on the upside-down baking sheet. Remove the first parchment from the crust, cut the crust into 1 1/2-inch-thick strips (you should have 8 to 9 strips) and spread them apart a little. Sprinkle with the remaining 1 cup Cheddar and 1/2 cup Parmesan. Bake on the upside-down baking sheet until the cheese is melted and turning brown in spots and the visible crust is a deep golden brown, 8 to 10 minutes.
- Let cool for 5 minutes, then transfer the sticks on the parchment to a serving plate and serve with the marinara sauce for dipping.

- In food processor, combine the flour, salt, cayenne and baking powder.
- Pulse several times to mix.
- Add the butter and cheese, then pulse for about 30 seconds, or until the ingredients are well mixed (it should resemble slightly moist flour).
- Add the sour cream and pulse on and off for about 1 minute, or until the ingredients come together as a moist, doughy clump.
- Remove the dough from the food processor, form into a ball, then cover in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven to 425 degrees.
- Line a baking sheet with parchment paper, or coat it with cooking spray.
- On a lightly floured counter, roll out the dough into a large rectangle about 1/8-inch thick.

- Combine the scraps and repeat with remaining dough to make about 18-24 sticks.

- Add warm water,oil,3/4tsp salt,to a 1 1/2lb to 2lb bread machine.
- Add 2c.bread flour, parmesan cheese, Italian seasoning,1/2tsp black pepper, Monterey Jack cheese than add the last 1cup of bread flour.
- Make a hole in dough and add the yeast.
- Set machine to the dough cycle.
- After cycle has finished, punch dough down and cover and let rest 10 minutes.

- Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up. Add in oil, salt, garlic, onion powder and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!)
- Continue mixing for an additional 3-4 minutes, then cover with plastic wrap and let sit in a warm place for 15 minutes. In cold weather, I like to turn my oven on for about 3 or 4 minutes, then turn it off and let my dough rest in the oven.
- Preheat oven to 400 degrees F. Spray a cookie sheet with non-stick spray.
- Spray counter top and rolling pin with non-stick cooking spray and roll dough out into a large rectangle about 1/4" thick. Brush with 3 TBSP melted butter and 1 tsp garlic salt, if desired. Sprinkle the top half of your dough rectangle with 2-3 cups shredded cheese. I use 2 cups of cheese, but if you adore those oozing cheese types of recipes, use 3 cups.
- Take the bottom half of the rectangle and fold it up over the top half, so that it rests on top of the cheese. Press edges to seal.
- Use a pizza cutter to cut 1"-2" strips of cheesy dough. Gently take each strip and twist a couple times. Some cheese will fall out- if you use 3 cups of cheese, I recommend 2" strips, instead of skinnier 1" ones. Line cookie sheet with twisted dough.
- Bake for 20-25 minutes, until dough is golden brown and some cheese is bubbling. Let cool. Dip in marinara sauce or ranch dressing for an added treat!

- Remove the base or leaves and cut cauliflower into florets. Rice cauliflower by using a food processor. Cook for about 8 to 10 minutes, you can use a microwave or a toaster oven. Allow to cool.
- Pre-heat oven at 450F.
- Once riced cauliflower has cooled, place in a kitchen towel and strain the liquid. Transfer to a mixing bowl.
- Season cauliflower with sage, oregano, thyme and mustard seed. Mix well.
- Season egg with ground black pepper. Pour beaten egg, 3 tablespoon cheese and combine with seasoned cauliflower. Allow for eggs to set at the bottom of the bowl and spoon the excess eggs out.
- In a greased baking sheet, spread cauliflower until about 1/4 inch thick, rectagular shape.
- For the heart-shaped Cauliflower "Bread" Sticks, use a heart-shaped cookie cutter. 1/2 cup of cauliflower mixture makes about 9 heart-shaped in different sizes. Bake for about 8 to 10 minutes. Top with 1/2 cup cheese and bake in the oven for 5 more minutes or until cheese is melted and golden.
- For the remaining 1 cup of cauliflower mixture formed into a rectagular shape, bake for about 10 to 15 minutes. Top with the remaining cheese and bake for 5 to 8 minutes or until cheese is melted and golden in color.
- Cool for about 2 to 3 minutes and slice with a pizza cutter.
- Garnish with freshly minced parsley. Serve with marinara sauce or with a Creamy Cheese Sauce (see note).

- 1. Preheat oven to 425.
- 2. Mix butter and garlic in a small bowl and set aside.
- 3. Unroll pizza dough onto a parchment paper lined baking sheet and brush with butter and garlic mixture.

- In a large bowl or stand mixer combine 1/2 cup of the warm water with the sugar and yeast. Stir to combine and let rest for 5 minutes. Add the remaining 1/4 cup warm water, olive oil, salt and vinegar.
- Begin mixing on medium-low speed and gradually add the flour --knead for a few minutes, or until the dough is smooth and elastic (it should be slightly sticky, but not so sticky that it sticks to your clean fingertip). Mine is usually ready with 1 1/2 cups flour) Cover the bowl with a dry towel and allow to rest in a warm place for 1 hour.
- Preheat oven to 475 degrees F with a pizza stone inside or upside down cookie sheet inside.
- Gently punch the dough down. Place a large piece of parchment paper on your counter and use your hands (or a rolling pin, but it's easier with your hands) to spread the dough into a rectangle about 1/3 inch thick.
- Mix melted butter and garlic in a small bowl then spread mixture evenly over dough, all the way to the edges. Top with parmesan and mozzarella cheeses.
- Transfer the dough (still on the parchment paper) onto the hot pizza stone in the oven. Bake for 8-12 minutes or until golden and bubbly.

- Prepare pizza dough through step 3. Punch the risen dough down to release the air bubbles. Divide in half. (Make a pizza with the other half or freeze half of the dough for another time. See dough recipe for freezing instructions.)
- Preheat oven to 425°F (218°C).
- On a lightly floured work surface or on a piece of parchment paper or a silicone baking mat sprinkled with cornmeal (I skipped the optional cornmeal in the video above), roll the dough out into a 9×13 inch rectangle. The dough will want to be round, so do your best to shape it into a thin rectangle around this size- doesn't have to be perfect.
- Combine the butter, garlic, and Italian seasoning together in a small bowl. Brush over shaped dough. Cover evenly with shredded cheese.

ALMOST-FAMOUS STUFFED CHEESY BREAD

- Make the dough: Whisk the sugar and 3/4 cup warm water (about 105 degrees F) in a bowl. Sprinkle the yeast on top and set aside until foamy, about 10 minutes. Stir in the vegetable oil. Whisk the flour and salt in a large bowl. Make a well in the center, pour in the yeast mixture and stir with a wooden spoon to make a shaggy dough. Turn out onto a generously floured surface and knead until smooth and elastic, about 5 minutes, dusting with more flour as needed. Form into a ball. Slice the dough crosswise at 1-inch intervals, stopping just before the folded edge. Sprinkle with half of the cheese-garlic mixture. Move the dough to 1 side of the baking sheet. Repeat with the remaining dough, mozzarella and cheese-garlic mixture on the other side of the baking sheet. Slide the bread on the parchment onto the hot baking sheet in the oven. Bake until the dough is cooked through and the cheese is golden brown, 12 to 14 minutes. Let cool slightly, then pull apart into breadsticks.

The dough should be sticky but not so sticky that it's unmanageable to roll out. If it's started to come away from the sides of the bowl, you're good. If it's too dry you can add in a little bit of water to loosen it up. Continue to knead for 6-7 minutes-- the dough will be elastic and smooth.
- Form the dough into a loose ball, set back into the bowl, cover and let rise for about an hour or until it has doubled in size.
- Remove the risen dough and place on a lightly floured counter top. Roll out into a rectangle (2'x1') and cut into strips . Then, cut the strips in half so that they fit in a baking sheet width-wise.

- In a large mixing bowl or the bowl of your stand mixer fitted with a hook attachment, combine the yeast and warm water. Stir it around and let sit for 5 minutes of until the yeast is foamy and dissolved. This is called “proofing” the yeast. If the yeast doesn’t dissolve, your yeast is dead. Start again with active yeast. Add flour, olive oil, salt, and sugar. Mix by hand or with the dough hook on low speed for 1 minute.
- Once all of the ingredients are mixed, knead for 7 minutes by hand or with your dough hook on low-medium speed. If your dough is too wet, add up to 1/4 cup more flour. After kneading, your dough should be smooth and elastic. Poke it with your finger – if it slowly bounces back, your dough is ready to rise. If not, keep kneading.
- Shape the dough into a ball and place in a large mixing bowl that has been coated lightly with olive oil. Turn it over to coat all sides. Cover tightly with plastic wrap and allow to rise in a warm environment (about 75F-80F). I simply placed my bowl on top of the oven as the garlic roasted, which warmed the oven’s surface. Depending on your type of yeast, your dough will have doubled in size in about 1 – 2 hours. I use Red Star Platinum and my dough took 1 hour, 20 minutes.
