Overnight Triple Berry Oatmeal is a protein and calcium packed breakfast that is perfect for back-to-school or an on-the go snack. Oats are soaked overnight with milk and Greek yogurt and paired with three berries: blueberries, raspberries and strawberries. You can't beat a quick and easy breakfast that also tastes delicious!

1/4 cup blueberries
1/4 cup raspberries
1/4 cup strawberries, hulled and sliced
1 cup oatmeal {you can use regular oats or steel cut oats}
1 cup fat-free milk
3 TBSP low or reduced fat Plain Greek Yogurt
1 teaspoon vanilla extract
2 teaspoons honey
1 large or 2 small mason jars or Tupperware with lids
Extra berries
Nuts {almonds, walnuts or pecans work great}
Shredded coconut
Extra honey
Chia seeds

Steps:

  • In each mason jar put layer of berries {I like to mix them up and use some of each}. Add half the oatmeal, milk, yogurt, vanilla and honey and stir to combine everything. Top your overnight oats with the remaining berries and seal the mason jars. Put the mason jars in the fridge overnight. When you are ready to eat them remove them from the fridge and garnish with your favorite toppings. For these Triple Berry Oats I like to add more fresh berries, a sprinkle of chia seeds, nuts and some honey.

These oats deliver a triple dose of blueberries - compote, dried and fresh - giving them a bright purple colour. If you can't find dried blueberries you can use currants instead or leave them out.

1 cup frozen blueberries
2 tablespoons granulated sugar
1 tablespoon water
2/3 cup old fashioned oats
2/3 cup milk, of choice (cow's, almond, soy, rice...)
3 tablespoons dried blueberries
1/2 cup fresh blueberries

Steps:

  • Heat the frozen blueberries, sugar and water in a small pot over a medium heat. Once the mixture starts to bubble, turn the heat down to low and let simmer and soften for 10 minutes. Take off the heat and mash slightly with the back of a fork.
  • In a medium bowl, mix the oats, milk, cooked blueberries and dried blueberries until combined.
  • Divide between two bowls or mason jars and store in the fridge overnight.
  • In the morning, top with the fresh blueberries and serve.
