How to Cook Oatmeal (traditional method) image

The traditional method for preparing overnight oats and cooking oatmeal the next morning that results in a bowl of porridge that is very digestible, filling and nourishing compared to modern convenience methods.

1 cup rolled oats (preferably organic)
2-3 cups filtered water
1-2 Tbl lemon juice (optional)
1/2 tsp sea salt

Steps:

  • Mix the oats, 2 cups of water, and lemon juice in a pot. Cover and leave on the counter (NOT in the refrigerator) for at least 7 hours or overnight. If you have trouble digesting grains, feel free to soak for as long as 24 hours.
  • When soaking is complete, add 1/2-1 cup additional filtered water to the pot. Bring to a boil with the salt. Cook oatmeal thoroughly for 5 minutes. You do not need to rinse the oats before cooking.
  • Traditional oatmeal is best served with butter and/or cream for optimal assimilation of minerals. A natural sweetener, nuts, raisins or other fruit may be added as desired.
  • Refrigerate leftovers.

This recipe calls for soaking the oats overnight in order to reduce anti nutrients and deactivate enzyme inhibitors, making it a true super food. Make sure to eat it with plenty of butter or cream to guarantee you absorb all of the vitamins and minerals. From Nourishing Traditions by Sally Fallon

Number Of Ingredients 7

1 cup old fashioned rolled oats, organic
1 cup warm filtered water
2 tablespoons lemon juice or 2 tablespoons vinegar
1/2 teaspoon sea salt
1 cup filtered water
1 tablespoon flax seed (optional)
2 -4 tablespoons butter

Steps:

  • Mix oats with warm water and acid (whey, yogurt etc).
  • Leave in a warm place for at least 7 hours, up to 24.
  • When ready to cook, bring additional 1 cup of water to a boil with sea salt.
  • Add soaked oats, reduce heat, cover and simmer for about 5 minutes.
  • While oats are cooking, grind flax seeds in a coffee grinder.
  • Remove from heat and stir in flax seeds.
  • Sweeten with raw honey, maple syrup, molasses etc.
  • Add 2 to 4 tablespoons butter or cream.
  • Add chopped nuts or shredded coconut if desired.
