1 cup freshly squeezed lime juice
1 thin onion slice
1 quart freshly squeezed orange juice
hot sauce, or to taste
salt to taste
¼ cup pomegranate juice

Steps:

  • Pour lime juice into a glass container and add onion slice; let sit until flavors combine, 20 to 30 minutes. Remove and discard onion.
  • Mix orange juice, hot sauce, and salt into lime juice; stir well. Stir pomegranate juice into mixture.

32 ounces tomato juice
2 cups fresh orange juice
1 cup Tequila (recommended: Herradura Blanco)
1 cup fresh lime juice
1/4 cup agave juice
5 dashes hot pepper sauce (recommended: Tabasco)
2 dashes Worcestershire sauce
Caramelized Spanish Onion, recipe follows
1 guajillo chile, stemmed, seeded, soaked in boiling water for 15 minutes and finely chopped
1/4 teaspoon freshly ground black pepper
1 tablespoon smoked paprika
1 tablespoon kosher salt
Lime wedged and sliced, for garnish and moistening glass rim
1 tablespoon canola oil
1 Spanish onion, peeled, halved, thinly sliced

Steps:

  • Combine into a pitcher the tomato juice, orange juice, tequila, lime juice, agave, hot sauce, Worcestershire sauce, onion, chile, and pepper. Stir to combine, cover and refrigerate. In a shallow bowl or plate, combine the smoked paprika and salt. Moisten the rim of the glass with a lime wedge, and dip into the paprika-salt mixture. Put ice into a glass, and pour the mixture over and garnish with a lime slice.;
  • Heat 1 tablespoon canola oil in a medium saute pan over medium heat, then add the onion and cook, stirring occasionally, until golden brown and caramelized, about 25 minutes. Let cool before adding to the drink.;

A zingy way to use up the bounty of garden tomatoes and a traditional accompaniment to tequila. When you're ready for the fun, drink the tequila, follow with very cold sangrita, then lime. You can simplify the whole preparation by using canned juices, but the result won't be quite as good as when you use fresh tomatoes and fruits. Use any leftover sangrita as marinade for meat. Chilling time not included in preparation time.

1 lemon, juice of
2 limes, juice of
3 -4 green chilies, seeded (canned is fine)
1 medium onion, peeled and chopped
1 teaspoon sugar
1/4 teaspoon hot pepper sauce or 1/4 teaspoon Tabasco sauce
salt, to taste
lime slice

Steps:

  • Place first eight ingredients into a blender; whirl until smooth.
  • Add salt to taste.
  • Refrigerate until very cold.

Sangrita ('little blood') is the traditional Mexican chaser for tequila. It's a mix of FRESH orange and lime juices with salt and a spicy touch. You can give it the bloody appearance by adding a splash of pomegranate juice - or try using blood oranges when available (they really make it better).

1 dash Mexican-style hot sauce (such as Valentina® or Cholula®), or to taste
salt to taste

Steps:

  • Combine the lime juice and onion slice in a bowl, making sure the onion is completely covered with the juice. Allow to soak 2 to 3 hours; remove the onion and discard.
  • Stir the orange juice, hot sauce, and salt into the lime juice; chill the sangrita before serving.

While in Mexico this past winter I was introduced to Sangrita ("little blood ), a spicy, non-alcoholic Mexican drink served as a chaser (co-sip) with tequila. The traditional method is to alternate sips of tequila with sangrita, but it is sometimes mixed with the tequila and served in a single glass. A tequila-and-sangrita serving is called a 'completo'. There are several recipes on RZ for Sangrita, but this is the way I was taught to make it. This is one of those concoctions that you mix to your taste, so add the spices a little at a time.") Sangrita is a popular beverage to drink with tequila. Not to be confused with "sangria," a fruit and wine concoction, this beverage is a tangy mixture of tomato and orange juices, usually spiked with hot chiles and lime juice. It may sound odd in flavor, but sangrita is the perfect accompaniment to good quality tequila, like an aged anejo or a good reposado. The tequila and sangrita are poured into separate shot glasses and the two are alternately sipped, not chased. First the tequila, then the chilled sangrita. Slowly, one after the other. (from Wikipedia definition) This is a spicy drink, if you are concerned about it being too hot, only add in half of the spicy ingredients. You can always add more later!

18 ounces tomato juice (or V-8)
9 ounces orange juice
1/3 cup lime juice
1 teaspoon Worcestershire sauce
1 teaspoon sugar
1 dash salt
1 teaspoon pepper (preferably red pepper, but black will do)
1/4 teaspoon celery salt
1 teaspoon Tabasco sauce or 1 teaspoon hot sauce
1/4 teaspoon dried cilantro
2 serrano peppers
1 small white onion

Steps:

  • Chop to the point of Liquid, the serrano peppers and the onion in the food processor, you may need to add some of the tomato juice with it to get it to chop up all of the way. It won't go totally liquid, but don't feel that you can chop it too much.
  • Mix the rest of the ingredients, Tabasco and Cilantro are optional, but add nice flavor and color. Put them in a blender or in a jar that you can shake them up inside.
  • Mix in the onion and serrano peppers.
  • For best flavor, Let sit for 24 hours.
  • If you prefer, after 24 hours you can strain the mixture. Keeping the liquid part. It is a personal preference.
  • If the drink is too spicy for you, add in more tomato and orange juice, keeping them in a 2 to 1 ratio.
