This easy frittata recipe is the perfect option for when you are craving the classic Italian combo of sausage and peppers. Cooking the peppers and onions before adding the egg ensures every bite out of the oven is sweet and tender.

1 tablespoon olive oil
8 ounces sweet Italian sausage, casings removed and broken into small pieces
1 medium red bell pepper, diced
1 small onion, diced
1 tablespoon chopped fresh rosemary
12 large eggs
1/3 cup heavy cream
1 cup shredded Italian blend cheese
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F.
  • Heat the olive oil in an oven-safe, 10-inch nonstick skillet over medium-high heat. Add the sausage and cook, stirring occasionally and breaking up the pieces with a wooden spoon, until no longer pink in the middle and cooked through, 6 to 7 minutes. Use a slotted spoon to remove the sausage to a plate. Add the pepper and onion to the skillet and cook, stirring occasionally, until softened, 5 to 6 minutes. Stir in the rosemary and cook until just fragrant, about 1 minute.
  • Meanwhile, whisk the eggs, cream, cheese, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until combined. Remove the skillet from the heat and add the sausage. Pour the egg mixture on top and gently stir to incorporate the fillings. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes.
  • Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

2 tablespoons extra virgin olive oil, divided
2 cups sliced Grimm's Fine Foods Kolbossa Sausage Bites (1/4-inch thick)
1 cup chopped red onion
3/4 cup chopped red pepper
3/4 cup chopped green pepper
1/4 cup chopped jalapeño pepper
3 cloves garlic, minced
6 large eggs
1/2 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground black pepper

Steps:

  • Add 1 tablespoon of oil to a 10-inch cast iron skillet and heat over medium heat.
  • Add the sausage slices to the skillet and brown on both sides. This should take about 5-7 minutes. Transfer to a plate and set aside.
  • Carefully grease the bottom and sides of the skillet with the remaining 1 tablespoon of oil. Add the chopped peppers and onions and sauté for 2-3 minutes, or until they start to soften. Add in the garlic and cook for another 2 minutes, stirring frequently to ensure the garlic doesn't burn.
  • Add the sausage back in and stir everything around to ensure even distribution.
  • In a medium-sized bowl, whisk together the eggs, salt, red pepper flakes and pepper. Pour over the sausage mixture. (You may need to reduce the heat to medium-low to ensure the frittata doesn't burn on the bottom. You can also swirl the egg around the edges of the pan to help it seep down around the frittata and cook quicker).
  • Cook for 5-7 minutes, or until the eggs start to set around the edges.
  • Place the frittata in the oven and broil for 2-3 minutes, or until the eggs are set and the frittata is browned on top.
  • Remove from oven and let rest for a few minutes before cutting into slices and serving.
  • Store any leftovers in an airtight container in the refrigerator and enjoy within 3-4 days.

Extra-virgin olive oil
3 links hot Italian sausage, removed from the casing and crumbled
1 red bell pepper, 1/4-inch dice
1 yellow bell pepper, 1/4-inch dice
1 cup grated Parmigiano-Reggiano
12 eggs, beaten with 1/4 cup water

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
  • In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

Steps:

  • Preheat oven to 350 F.
  • In a cast iron skillet, cook sausage over medium-high heat, stirring occasionally, until browned and crumbly, about 5 minutes. Transfer to a plate.
  • Heat 1 Tbsp olive oil over medium-high heat, and cook onion and bell peppers until soft. Add chopped sweet potatoes; season with salt, black pepper, oregano. Cover and cook, stirring occasionally, until tender, about 8 minutes.
  • Add cooked sausage, eggs, and stir everything. Cook until bottom is set, about 2 minutes.
  • Bake in a preheated oven for about 5 - 7 minutes, just until set. Garnish with chopped parsley and sliced avocado, if desired.

Steps:

  • Heat oven to 350ºF.
  • Cook sausage in large skillet until done, stirring frequently to break patties into small pieces. Add peppers and 3 Tbsp. chives; mix well. Cook 5 min., stirring frequently.
  • Whisk eggs and sour cream in large bowl until blended. Add VELVEETA and sausage mixture; mix well.
  • Pour egg mixture into 9-inch pie plate sprayed with cooking spray.

2 tablespoons olive oil
1 large brown onion, peeled and diced
1 red bell pepper, deseeded and diced (capsicum)
1 spicy sausage, chopped (Chorizo or spicy Italian works great!)
1 small sweet potato, peeled and diced
5 large eggs
1/2 cup skim milk
4 tablespoons parmesan cheese, grated

Steps:

  • Preheat a cast-iron skillet (or ovenproof frying pan) with the oil, then add the onion and bell pepper (capsicum) and fry till slightly softened over medium heat, then add the chopped sausage and fry till the sausage is cooked.
  • Meanwhile, either steam/boil/microwave the chopped sweet potato till it is almost completely cooked (i.e. soft enough to pierce all the way through but not mushy), then add this to the pan and stir it through for a few minutes to take on the other flavours of the dish.
  • Preheat your broiler.
  • Beat together the eggs and milk in a bowl, then carefully pour it over the top of the mixture, giving it a little stir to ensure the egg is getting right between all the chunks of sausage and vegetables.
  • Sprinkle grated parmesan over the top, then lower the heat of the burner and leave to cook till the bottom and sides have just set, then place under the broiler to cook the top.
  • Once it's finished cooking, remove and serve either warm or cold with a spicy tomato salsa or chutney and some green salad on the side.

Being onion lovers, I added a whole onion rather than 1/2 as the recipe stipulated. NOTE: It's okay if potatoes are not cooked evenly. Some will be browned; others only transparent. The original recipe suggests using an 8-inch skillet.
