This is an absolute hit!! It's the classic recipe, just easier to make it because you're using a blender. It takes 5 minutes and it's perfect.

1/4 cup parmesan cheese (grated)
4 anchovy fillets
2 egg yolks
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1 lemon, juice and zest of
1/2 cup extra virgin olive oil (good quality)
2 garlic cloves

Steps:

  • In blender, mix egg yolks, garlic and anchovies into a paste.
  • Add remaining ingredients EXCEPT olive oil. Mix a few seconds.
  • Slowly add olive oil until dressing is thick and creamy. Add more or less olive oil depending on desired consistency.
  • Serve mixed in chopped romaine lettuce.

2 teaspoons chopped fresh parsley
1 teaspoon lemon zest
1/4 teaspoon finely minced garlic
1/4 cup red wine vinegar, plus more if needed
1 lemon, juiced, plus more if needed
Salt and freshly ground black pepper

Steps:

  • Combine the mayonnaise, anchovy paste, capers, parsley, lemon zest and garlic. Whisk in the red wine vinegar, lemon juice and season with salt and pepper. Add more or less red wine vinegar and lemon juice depending on your preference of acidity and consistency of the dressing. If you prefer the dressing to be looser but less acidic, use water instead of vinegar.

About 1/2 cup extra virgin olive oil
1 cup rustic bread, cut into 1-inch cubes
Salt
freshly ground black pepper
1 clove garlic, halved
2 eggs
2 tablespoons freshly squeezed lemon juice
2 to 3 tablespoons minced anchovies, or to taste
Dash Worcestershire sauce
1 large head romaine lettuce, washed, dried and torn into pieces
1/2 cup freshly grated Parmesan

Steps:

  • Put 2 tablespoons of the oil in a skillet large enough to hold the bread in a single layer and turn heat to medium. When oil shimmers, add bread and sprinkle with salt and pepper; brown lightly on all sides, adding a little more oil if necessary. Remove and set aside.
  • Rub the inside of a salad bowl with the garlic clove; discard it. Bring a small pot of water to a boil. Pierce a tiny hole in the broad end of each egg with a pin or needle and boil them for 60 to 90 seconds; they will just begin to firm up. Crack them into the salad bowl, being sure to scoop out the white that clings to the shell.
  • Beat eggs with a fork. Gradually add lemon juice and 6 tablespoons oil, beating all the while. Stir in anchovies and Worcestershire. Taste and add salt if needed, and lots of pepper. Toss well with lettuce; top with Parmesan and croutons; toss again at table. Serve immediately.

I was searching forever for a caesar recipe that was true to the original. I found it difficult to find a recipe that didn't include something silly like mayonaise or yogurt. And then when i thought i did find one, they had to ruin it by adding anchovies! (contrary to popular belief, anchovies were not in the original caesar salad, that came years later). So i had to write my own recipe. After several attempts, this is what i came up with. I recommend not using a food processor, as it tends to put too much air into the eggs, i have better results with a bowl and a whisk

3/4 cup grated parmesan cheese

fresh cracked black pepper

If having trouble getting the anchovy to mash, add a couple of croutons. They provide sort of an anti-skid surface, and the hard edges of the croutons cut into the anchovy.

3 anchovy fillets
½ lemon, juiced
2 tablespoons red wine vinegar

½ head romaine lettuce, chopped
