1/2 cup brown sugar, packed
1/2 cup sugar
2 teaspoons vanilla
1 egg
2 1/4 cups Bisquick baking mix
1 cup semi-sweet chocolate chips (6 oz)
1/2 cup nuts, chopped, if desired (optional)

Steps:

  • Heat oven to 375°F.
  • In large bowl, mix butter, both sugars, vanilla and egg.
  • Stir in Bisquick mix, chocolate chips and nuts.
  • Onto ungreased cookie sheet, drop dough by rounded teaspoonfuls about 2 inches apart; flatten slightly.
  • Bake 8-10 minutes or until golden brown. Remove from cookie sheet to cooling rack.

1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups semisweet chocolate chips
1 cup coarsely chopped nuts, if desired

Steps:

  • Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.
  • Beat in egg and vanilla until smooth. Stir in flour mixture just until blended (dough will be stiff). Stir in chocolate chips and nuts.
  • Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 8 to 10 minutes or until light brown (centers will be soft). Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.

2/3 c shortening
2/3 c butter or margarine, softened
1 c granulated sugar
1 c brown sugar, packed
2 eggs
2 tsp vanilla extract
3 c flour
1 tsp baking soda
1 tsp salt
1 c chopped nuts
12 oz semi-sweet chocolate chips

Steps:

  • 1. Heat oven to 375°F.
  • 2. Mix thoroughly shortening, butter, sugars, eggs and vanilla. Blend in remaining ingredients. (For a softer, rounder cookie, add another 1/2 cup flour.)
  • 3. Drop dough by rounded teaspoonfuld 2 inches apart onto ungreased baking sheet. Bake 8-10 minutes or until light brown. Cool slightly before removing from baking sheet.
  • 4. NOTE: If using self-rising flour, omit baking soda and salt. BETTY'S "RED SPOON" NOTE: To bake fresh cookies on short notice, keep a supply of cookie dough in the freezer, wrapped in foil or plastic wrap and stored in airtight container. Thaw dough just soft enough to spoon onto baking sheet. Both cookie dough and baked cookies can be frozen for 9-12 months.

1/2 cup butter, room temperature
1/4 cup granulated sugar
3/4 cup light brown sugar
1 egg, plus 1 yolk
1 Tbsp vanilla
2 1/2 cups Bisquick
1 1/2 cups chocolate chips

Steps:

  • Preheat oven to 375°
  • Line a baking sheet with parchment paper. Set aside.
  • In bowl of stand mixer beat butter and both sugars for 1 -2 minutes until light and fluffy. Add in vanilla, egg and yolk and beat until mixed evenly, scraping sides as necessary.
  • Turn mixer to low and add in Bisquick and mix until just combined.
  • Stir in chocolate chips.
  • Drop cookie dough onto lined baking sheet, about 2-3 inches apart. Bake for 8-9 minutes until edges just get golden. Allow to cool on baking sheet for 3-4 minutes before transferring to a wire rack to cool completely.

1 level tbsp ground flax meal mixed with 3 tbsp water, I used golden flax meal
1 stick vegan butter/margarine, slightly softened and cut into chunks
1/2 cup coconut sugar or brown sugar
1/2 cup pure cane sugar or granulated sugar
2 tsps vanilla extract
2 1/4 cups Bisquick, no need to sift
1/8 tsp fine sea or kosher salt
1 1/4 cups vegan chocolate chips, I used Lily's Sweets

Steps:

  • 1.Preheat oven to 350 degrees, line two cookie sheets with parchment paper and set aside.2.In a large mixing bowl, add flax mixture. Add in vegan butter with sugars. I mixed by hand but you can use an electric mixer. Combine until fluffy.3.Add vanilla Bisquick, and sea salt. Mix batter until all the dry is well incorporated into the wet. Toss in chips. Fold gently.4.Place batter in fridge for 5 to 10 minutes.5.Take out of fridge and scoop with cookie scoop onto prepared cookie sheets. (I like to bake each batch one at a time.) Slightly flatten with the palm of your hand or the bottom of a glass. Bake for about 8 to 11 minutes. Turn pan around after 5 minutes. Check cookies after 8 minutes. Should be lightly browned on top.6.Let cool on pan for 15 minutes. Bake your second batch as directed. That's it! Ready to grab a few and enjoy. They are so yummy! *Recipe Note: Store in a covered container on the counter up to 3 days.
