2 pounds frozen blackberries, thawed
1 ¼ cups white sugar
1 ½ tablespoons all-purpose flour
1 ½ tablespoons butter
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
2 tablespoons white sugar
¼ cup softened butter
⅔ cup milk
1 large egg, beaten

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Toss the blackberries with 1 1/4 cups sugar and 1 1/2 tablespoons flour in a mixing bowl. Spread into a 9x9-inch baking dish, and dot with 1 1/2 tablespoons of butter. In a separate bowl, whisk 1 1/2 cups flour together with baking powder, salt, and 2 tablespoons sugar. Cut in the softened butter until the mixture resembles cornmeal. Stir in the milk and egg until combined. Drop the batter over the berries by the spoonful.

2 lbs blackberries (frozen or fresh)
1/2 cup granulated sugar
1 1/2 cup water
1/4 cup fresh lemon juice
2 tsp vanilla extract
2 tbsp all purpose flour
1 stick of butter
Pastry/crust
1 1/2 cup all purpose flour
1 tsp baking powder
3/4 cup granulated sugar
1 cup milk

Steps:

  • Place blackberries, 1/2 cup sugar, 1 cup water, lemon juice, and vanilla extract in a pot. Place the pot on a burner, and turn the heat on to medium high. Bring to a boil.
  • In a small cup or bowl, combine 1/2 cup water and 2 tbsp of all purpose flour. Mix, then pour into the blackberry mixture, and stir.
  • Remove the pot from the heat.
  • In a separate bowl, add 1 1/2 cup flour, 3/4 cup granulated sugar, 1 tsp baking powder, and 1 cup water. Mix until the batter is smooth.
  • Place a stick of salted butter in a bake dish, then place the bake dish in a oven preheated on 350. Let the butter melt down, then remove the bake dish out of the oven.
  • Pour the pastry/crust in the center of the bake dish along with the butter.
  • Next, spoon out or pour the blackberry mixture into the center of the dish.
  • Bake the cobbler on 350 F, for about 35 to 40 minutes.
  • Remove the cobbler from the oven, and let cool.
  • Serve along our with ice cream or whipped cream.

1 1/2 c bisquick baking mix
2/3 c milk
2/3 c granulated sugar
1/2 stick butter
1 can(s) blackberry pie filling
1 tsp brown sugar

Steps:

  • 1. Preheat the oven to 400F.
  • 2. Melt butter in square baking dish in oven.
  • 3. Add the Bisquick, milk and granulated sugar, stir until smooth.
  • 4. Drop spoonfuls of pie filling over the batter. DO NOT STIR.

1 stick unsalted butter
5 cups fresh or frozen blackberries, (if using frozen, thaw first and drain extra juice)
3/4 cup water
1 cup granulated sugar, divided
1 sprig of fresh thyme
1/2 cup light brown sugar
1 cup self-rising flour (see notes for directions using all-purpose)
1/4 teaspoon baking soda
1 1/4 cup whole fat buttermilk
1 teaspoon vanilla extract
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 350°. Melt butter in a 13x9 inch baking dish.
  • Place blackberries in a saucepan and stir in 1/2 cup granulated sugar with water. Add thyme and bring to a boil then turn down to simmer. Cook for 5 minutes and remove from heat.
  • Whisk together flour and baking soda, then add remaining 1/2 cup of granulated sugar and 1/2 cup brown sugar and whisk until well blended. Stir in buttermilk and vanilla extract.
  • Once butter is melted, slowly pour in batter over the butter but do not stir. Remove thyme from blackberries and discard, then gently spoon the blackberries and any accumulated juices over the batter and do not stir.
  • Sprinkle the turbinado sugar over the top then bake for 40-45 minutes until golden brown. Serve hot or room temperature with vanilla ice cream or homemade whipped cream.
