2 large yellow onions, chopped
10 cloves garlic, chopped
3 tablespoons chili powder
1 tablespoon dried oregano
Kosher salt
1/4 cup tomato paste
3/4 cup olive oil
3 chipotle chiles in adobo sauce, coarsely chopped, with 3 tablespoons sauce
4 pounds ground turkey
Four 12-ounce Mexican lager-style beers
Two 28-ounce cans whole peeled tomatoes, with their juices
Four 15-ounce cans kidney beans, rinsed and strained
Optional garnishes: Sliced scallions, cilantro sprigs, avocado, sour cream, grated Monterey Jack cheese and/or tortilla chips

Steps:

  • Heat the oil in a large Dutch oven or pot over medium-high heat. Add the onions, garlic, chili powder, oregano and 4 teaspoons salt, and cook, stirring, until fragrant, about 4 minutes. Stir in the tomato paste and chipotle chiles and sauce, and cook 1 minute more. Add the turkey, breaking it up into bite-sized chunks with a wooden spoon, and cook until the meat loses its raw color, about 7 minutes. Add the beer, and simmer until reduced by about half, about 35 minutes. Add the tomatoes, crushing them with your fingers into the skillet, along with their juices and the beans; bring to a boil. Cook, uncovered, stirring occasionally, until thick, 1 hour to 1 hour 10 minutes.
  • Let the soup cool to room temperature, then divide among four 1-quart containers and freeze for up to 1 month.
  • To reheat: Let the soup thaw in the refrigerator overnight. Bring it to a simmer over medium-low heat, stirring frequently, until heated through. Thin it with a little water if desired, and add salt to taste. Serve with optional garnishes.

  • 1. Heat oil in medium pot over medium heat. Stir in peppers, onions and garlic; cook until tender, 5-7 minutes. Add turkey, cumin and Adobo. Cook, breaking up turkey with spoon, until browned, about 5 minutes.
  • 2. Stir in beans, tomato sauce, 1 cup water and chipotle; bring liquid to boil. Reduce heat. Simmer until chili thickens and flavors come together, about 10 minutes. Season with Adobo.

3 dried ancho chiles, stemmed and seeded
2 dried guajillo or pasilla chiles, stemmed and seeded
3 cups beef stock
1 tablespoon vegetable or olive oil
1 pound fresh Mexican chorizo, casings removed or 1/3 pound center-cut bacon, finely chopped
1 1/2 pounds ground beef chuck (ask butcher for a coarse grind)
Kosher salt and coarse black pepper
1/4 cup Worcestershire sauce
1 tablespoon coriander (about a palmful)
1 tablespoon cumin (about a palmful)
1 1/2 teaspoons Mexican oregano (about 1/2 palmful)
1/4 teaspoon ground cloves
Pinch cinnamon
4 cloves garlic, chopped
1 fresh red Fresno or jalapeno chile, seeded and chopped, or sliced with seeds for extra heat
1 large onion, chopped
Manchego or Monterey Jack cheese, shredded
12 ounces dark lager beer, such as Negra Modelo
3 tablespoons masa harina or corn meal
1 tablespoon honey
Cilantro leaves
Lime wedges
Minced raw onions
Pepitas
Pickled sliced jalapenos or chopped giardiniera mix
Sour cream
Crushed tortilla or other chips, such as Fritos

Steps:

  • Place the ancho and guajillo chiles in a small saucepot and cover with the stock. Bring to a low boil, reduce the heat to low and simmer gently 10 to 15 minutes. Puree and reserve.
  • Meanwhile, heat the oil in a Dutch oven over high heat. Add the chorizo and begin to render the fat. Pat the beef dry with paper towel and sprinkle with salt and black pepper before adding into the Dutch oven with the Worcestershire. Cook until a nice crusty brown develops on the beef (the salt helps make a nice crust on meat). Add the coriander, cumin, oregano, cloves, cinnamon, garlic, chile and onions and cook until the onions are soft. Pour in the beer to deglaze the pan, scraping up any brown bits that have accumulated on the bottom of the pan. Add the dried chili puree, masa harina and honey. Reduce the heat to low and simmer to thicken and develop flavor, 45 minutes.
  • Serve with the toppings of your choice.

This is a chili I've been making every year during football season since I was 10. Depending on the year, the heat of the chili changed. It all depends on the people I was serving. I totally made up this chili recipe as a kid, putting in it what I thought would taste good. Little has been added or changed throughout the years. It is requested by family and friends that I make this chili at least 4 times during the season. I've never had a name for it, but at one time, when it was its hottest ever, we termed it "Liquid Evil." Figured "Touchdown Chili" is good enough for now. As you'll be able to tell from the recipe, it makes about 8 quarts. A bit of a secret: I serve a piece or two of chocolate with the chili. Have never found anything better to sooth a scortched tongue.

1 lb Chorizo, removed from casing
1 lb Hot Italian Sausage, removed from casing
1 lb Chuck, cut into bite-size pieces
2 lb Hickory-smoked bacon
10 Habenero peppers
5 Scotch Bonnet peppers

4 Poblano peppers
4 Banana peppers
4 Anaheim peppers
2 cans chipotle peppers in adobo sauce
2 large onions
10 cloves of garlic
2 bottles Negro Mordelo
2 cups Quervo 1800
2 cups Wild Turkey
2 large cans tomato paste
1 large can tomato sauce
2 cans Rotelle Extra Hot diced tomatoes
2 cans kidney beans
1 can black beans
1 can pinto beans
1 can navy/great northern bean
1 can garbanzo
1 bar dark bakers' chocolate
1/4 cup chili powder
1/4 cup cumin
1/4 cup basil
1/4 cup oregano
Salt and pepper to taste

Steps:

  • Add the spices and the liquid ingredients (beer, tequila, whiskey, tomato past and sauce) to an 8 quart pot. Slowly bring to a boil.
  • Dice the bacon and fry until softened and the fat begins to render. Add the bacon and the bacon fat to the pot. Brown the Chorizo, sausage and chuck in a large pan, drain and add to the pot. Slowly bring to a boil again.
  • For the peppers, remove the caps and ends, halve lengthwise and slice about 1/4 inch thick. Peal and crush the garlic cloves. Drain the beans. Dice the onions, then add the peppers, garlic, beans and onion to the pot. Reduce the heat, and slowly rise to, once again, bring to a slow boil, with a the lid only partially convering the pot. Taste adjust salt and pepper if neccessary.
  • After about an hour, in a double boiler, melt the chocolate then add to the pot. Again, bring to a slow boil. This time, reduce to head to a simmer and let cook for another 3 hours.
  • I serve plain or over rice, with chocolate treats to ease the heat.

1 tablespoon olive oil
2 yellow onions (chopped)
2 red bell peppers (finely chopped)
1 orange bell pepper (finely chopped)
1 yellow bell pepper (finely chopped)
1 (28 ounce) can tomatoes (diced and peeled)
1 (28 ounce) can crushed tomatoes
2 (7 ounce) cans diced green chilies
1 (15 1/4 ounce) can dark red kidney beans
1/2 bunch cilantro (chopped)
1/2 lime (squeezed)
1 corn on the cob (roasted and de-cobbed)
1 (1 3/4 ounce) chili seasoning mix (Package, Mild Wick Fowler False Alarm)
4 teaspoons cocoa powder

Steps:

  • Start with a large non-stick pot and carmelize the onions in the olive oil until golden brown. Add-in the peppers, green chiles, and ground turkey and stir continuously so that the turkey meat doesn't clump-up. Continue this until all of the meat is browned and has no clumps. Then add-in the canned tomatoes, kidney beans, cilantro, lime, spices, corn and cocoa powder. Stir occasionally and cook for about 30-40 minutes on simmer. Add in a little more salt to taste if needed.
  • If you wish to substitute fresh tomatoes for the canned ones - go for it! If you can't find the Wick Fowler's spice kit, just use chili powder, oregano, cumin, salt, paprika, masa, and salt to taste. Wick Fowler also makes spicier versions of this kit. I get mine at Big Lots for $1.00/ea. Regarding the corn, it is best to use freshly roasted corn-on-the cob, but you can use canned or frozen corn instead. Also, Trader Joe's sells a roasted corn in the frozen section, which works well too - just don't use much, as this adds calories and carbs. As far as the turkey, I use either Jennie-O's or Foster Farmsand this is the standard "LEAN" type of ground turkey. They also make a ground turkey breast version which is fat free, but will provide a result which is a bit dry for my taste, thus the standard LEAN type seems to work best.

Freezes nicely, but doesn't last long. We buy the large packages of ground turkey at a warehouse club and make up a big batch, to save time and money. Garlic is thought to help boost the immune system, so don't be shy with it. The cloves should be fresh and firm, and when mashed (with the side of the knife) and chopped they should smell sweet and not too pungent.

Steps:

  • Heat a large soup pot on medium heat. Add oil, making sure the pot is not so hot that the oil smokes. Saute the onions and peppers for a minute or two, then add the minced garlic. Soften the garlic but don't let it burn.
  • Add ground turkey to the pot. Stir frequently to brown the turkey throughout. When the meat is no longer pink, carefully ladle off as much of the fat as possible. Dispose of the discarded fat by placing it in an unwanted container (such as an empty can) and freeze it - don't pour it down the drain.
  • Add tomatoes with their juices. Add remaining ingredients and stir gently. Simmer, uncovered, at least 20 minutes. Taste for seasonings, and adjust if necessary. Serve with a dollop of sour cream and a sprig of fresh cilantro.
  • If your family prefers a mildly spiced chili, omit the chipotle. For a spicier chili, add your favorite chili sauce (Tabasco, Cholula, etc.) at the table.

Steps:

  • Heat the olive oil in a large, heavy skillet over medium-high heat.
  • Add the onion, garlic, salt, chili powder, and oregano and cook, stirring, until fragrant, about 3 minutes.
  • Stir in the tomato paste and the chipotle chile and sauce; cook 1 minute more.
  • Add the turkey, breaking it up with a wooden spoon, and cook until the meat loses its raw color, about 3 minutes.
  • Add the beer and simmer until reduced by about half, about 8 minutes.
  • Add the tomatoes-crushing them through your fingers into the skillet-along with their juices and the beans; bring to a boil.
  • Cook, uncovered, stirring occasionally, until thick, about 10 minutes.
  • Ladle the chili into bowls and serve with the garnishes of your choice.
  • Cook's Note: A skillet's larger surface area reduces sauces faster than simmering in a saucepan.

2 (15.5 ounce) cans white beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15.25 ounce) can whole kernel corn
1 (14.5 ounce) can diced tomatoes
3 cups turkey stock
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper

Steps:

  • Combine leftover turkey, white beans, black beans, corn, and tomatoes in a large pot. Stir in turkey stock, chili powder, garlic powder, onion powder, and cayenne. Cook over high heat until boiling, stirring often, about 5 minutes. Reduce heat and let simmer for 30 minutes. Serve warm.

Had a sample in the store and it was very good and easy. I tasted it with turkey but you can use either turkey, beef, chicken or tofu. The bean salad is a 3 bean medley (Chickpeas, red kidney, and Romano beans) in a lemon and white vinegar marinade with garlic, onion, and oregano called Marinated Bean Salad and it is sold as a Trader Joe's brand product.

This is my family's favorite turkey chili for a crowd that we serve with freshly baked cornbread, sour cream, and shredded cheeses for a topping. The secret ingredient is the cinnamon that makes this special. We like spicy so be careful adding the cayenne pepper. This is even better the second day.

1 tablespoon olive oil
2 pounds ground turkey
1 extra large onion, diced
1 jalapeno pepper, finely chopped
2 tablespoons minced garlic
2 cups chicken broth
2 cups chicken stock
2 (28 ounce) cans fire-roasted diced tomatoes
1 (16 ounce) can kidney beans - rinsed, drained, and mashed
4 tablespoons chili powder
2 tablespoons brown sugar
2 teaspoons ground cinnamon
1 ½ teaspoons kosher salt
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground black pepper
½ teaspoon cayenne pepper, or to taste

Steps:

  • Heat oil in a large pot over medium heat. Place turkey into the pot and cook evenly until browned, crumbly, and no longer pink, 5 to 7 minutes. Stir in onion and cook until tender, 5 to 7 minutes. Stir in jalapeno and garlic and cook for 1 minute. Pour broth and stock into the pot.
  • Mix in tomatoes, kidney beans, chili powder, brown sugar, cinnamon, kosher salt, paprika, oregano, cumin, black pepper, and cayenne. Bring to a boil; reduce heat to low, cover, and let simmer for 30 minutes. Serve immediately.
