PIMIENTO CHEESE FONDUE

One 8-ounce block sharp Cheddar, shredded
One 8-ounce package cream cheese, cubed
1/4 cup mayonnaise
1/4 cup heavy cream
1/4 cup pimiento peppers, chopped
2 tablespoons pickle relish
1 teaspoon onion powder
1/2 teaspoon garlic salt
A few dashes hot sauce, optional
Freshly ground black pepper
Crackers, vegetables and toast, for serving

Steps:

  • Combine Cheddar, cream cheese, mayonnaise and heavy cream in a medium saucepan over medium-low heat. Stir until melted, about 4 minutes. Stir in pimientos, pickle relish, onion powder, garlic salt, hot sauce, if using, and some black pepper. Transfer to a serving dish and serve with crackers or favorite dippers.

Steps:

  • Mix all ingredients until well blended.
  • Serve on crackers or use for sandwiches.

8 ounces extra-sharp cheddar cheese, grated with a food processor or hand grater (not pre-grated)
1/4 cup softened cream cheese (2 ounces), pulled into several pieces
Scant 1/2 cup jarred pimento or other roasted red peppers (from a 7-ounce jar), finely diced
3 tablespoons Duke's, Hellmann's or other high-quality store-bought mayonnaise
1/2 teaspoon dried red chile flakes
Salt and freshly ground black pepper to taste

Steps:

  • In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.
  • Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.

This spread has been in my family for more years than I am old. My Great-Aunt Tottie made this for the whole family for years, sometimes using five pounds of cheese at a time. She never allowed anyone else in the family to do it. After her death, over 30 years ago, we found the recipe in a drawer in her kitchen much to the delight of everyone. Cook time is chilling time for peak flavor.

1 (5 ounce) jar diced pimentos, do not drain
16 ounces sharp cheddar cheese or 16 ounces extra-sharp cheddar cheese, coarsely grated
1 cup mayonnaise
1/3 cup chopped pecans
3 -5 dashes frank hot sauce
salt and pepper

Steps:

  • Drain pimientos, but save juice.
  • Combine pimientos with mayo, toss with cheese'til thoroughly mixed.
  • Add pecans, hot sauce to your taste, S&P to taste, add the reserved pimiento juice to bring cheese spread to desired consistency.
  • Chill.
  • Serve as sandwich spread, cracker dip, veggie dip or just eat it off a spoon!

2 cups freshly grated sharp Cheddar
8 ounces cream cheese, at room temperature
4 ounces diced pimientos, drained
1/4 cup mayonnaise
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
Kosher salt
1 teaspoon chopped fresh chives
Crackers and assorted crudités, for serving

Steps:

  • Add the Cheddar, cream cheese, pimientos, mayonnaise, onion powder, cayenne, garlic powder and 1/2 teaspoon salt to a large mixing bowl. Use a hand mixer to beat the mixture until it is well combined and fluffy, about 1 minute. Salt to taste.
  • Transfer the dip to a serving bowl and garnish with the chives. Serve with crackers and assorted crudités.

This is an adopted recipe from the RecipeZaar account. Updated May 30, 2006. I have made some changes to the recipe. I added some flavour and subtracted some sugar. I like it this way.

1 egg, beaten
2 tablespoons sugar
1 tablespoon water
1/4 cup vinegar
2 cups cheddar cheese, grated
1/4 cup pimiento, diced
1 pinch cayenne
1 dash Worcestershire sauce
4 drops hot sauce
1 pinch garlic

Steps:

  • In small saucepan, beat egg and sugar until well blended.
  • Stir in vinegar and water.
  • Cook over low heat until thick. Stir with a wire whisk. Usually takes about 5 minutes. You'll know when it is ready as it will be frothy and a lemon yellow colour.
  • Set aside until cool.
  • In medium bowl, mix together cheese, pimientos and sauce.
  • Stir in cayenne, Worcestershire sauce, hot sauce and garlic. Adjust to taste.
  • Chill until ready to use.
