1 green plantain
3 cups cold water
salt to taste

Steps:

  • Peel the plantain and cut it into 1-inch chunks.
  • Heat the oil in a large skillet. Place the plantains in the oil and fry on both sides,; approximately 3 1/2 minutes per side.
  • Remove the plantains from the pan and flatten the plantains by placing a plate over the fried plantains and pressing down.
  • Dip the plantains in water, then return them to the hot oil and fry 1 minute on each side. Salt to taste and serve immediately.

3 to 4 large unripe (green) or barely ripe (slightly yellow) plantains
about 2 cups olive or canola oil for frying

Steps:

  • With a sharp small knife cut ends from each plantain and cut a lengthwise slit through skin. Cut plantains crosswise into 1-inch-thick pieces and, beginning at slit, pry skin from pieces. In a 12-inch nonstick skillet heat 1/2 inch oil over moderate heat until just hot enough to sizzle when a plantain piece is added. Fry plantains in batches, without crowding, until tender and just golden, 2 to 3 minutes on each side. With tongs transfer plantains as fried to paper towels to drain.
  • Remove skillet from heat and reserve oil. With the bottom of a heavy saucepan or a wide solid metal spatula flatten plantains to 1/4 inch thick (about 3 inches in diameter). Into a bowl of warm salted water dip flattened plantains, 1 at a time, and drain them well on paper towels.
  • Heat reserved oil over moderate heat until hot but not smoking and fry flattened plantains in batches, without crowding, until golden, about 3 minutes. With tongs transfer tostones as fried to paper towels to drain and season with salt if desired.
  • Serve tostones immediately.

2 large green plantains
2 teaspoons garlic powder
1 teaspoon kosher salt
1 cup peanut oil

Steps:

  • Cut the tips off the plantains. Score the plantains lengthwise on both sides and place in a bowl. Cover with boiling water. Let sit for 10 minutes. Peel, using a small sharp knife, and slice into 1/2inch slices.
  • Heat the oil to rippling in a large frying pan over medium heat. Cook the plantains for 10 minutes. Remove the plantain slices from the oil (reserving the oil) and place in one layer on a tea towel or several layers of absorbent paper on a counter top. Turn to remove excess oil. Using bunchedup absorbent paper or another tea towel, press down on each slice. Heat the reserved oil to 375 degrees and fry the plantains until crisp and golden. Season with garlic powder and salt.

Steps:

  • Peel the plantains and cut into 1-inch thick slices.
  • In a large skillet, heat the oil over medium heat. Fry the plantains until lightly golden on both sides, about 5 minutes. Transfer to a plate lined with a paper towel.
  • Using the bottom of a bottle, small saucepan, or tostonera if you have one, press down the plantains to flatten them to about half their original size.

Tostones are fried green plantains; actually they're twice fried green plantains.

2 Green Plantains
Canola Oil (enough to cover the bottom of a medium pot by 1 inch)
Salt (to taste)
You will also need paper towels (good quality)

Steps:

  • Peel the plantain by cutting off the ends and running a knife tip down the plantain, scoring the peel. Using your fingers, get under a piece of the peel and pop it up. Keep running your thumb or finger between the peel and the plantain.
  • Cut the plantain into roughly 1-1½ inch pieces.
  • Add enough oil to a medium pot to cover the bottom by 1 inch of oil. Use a pot that is big enough that when the plantains are added, the oil will not rise beyond the middle of the pot.
  • Heat the oil over medium-high heat. When the oil is hot, but not smoking, add a test piece.
  • Fry the plantains for 4-5 minutes or until they are golden. Give them a gentle stir occasionally.
  • Remove the pot from the heat and remove the plantains with a slotted spoon. Place them on a paper-towel lined plate.
  • Keep the pot off the heat. While we wait for the plantains to cool a bit, then make the tostones.
  • Fold two paper towels in half. Make sure it's cushiony, if it's not, use three. It's really important to use good quality paper towels, economy ones will stick to the plantain.
  • Cool the plantain pieces for at least 5 minutes, more if needed.
  • Place the plantain on the folded paper towel. Make an imaginary line down the middle, and place the plantain in the middle of one of the halves.
  • Fold the paper towel over the plantain and using the palm of your hand press down firmly and in one motion. Peel back the paper towel and repeat with the remaining pieces.
  • Once all of your tostones are shaped, place the pot back over medium-high heat. When the oil is hot, but not smoking, add a few tostones.
  • Cook the tostones until they are golden and crispy around the edges. This should take anywhere from 3-5 minutes, move the tostones around gently, occasionally.
  • Remove the tostones and place on a paper towel lined plate. Sprinkle with salt as soon as they come out of the frying oil.
  • Repeat with the remaining tostones.
  • Serve with extra salt, limes and hot sauce if desired. Enjoy!

3 large green plantains
⅓ cup vegetable, canola, grapeseed, avocado or peanut oil
Kosher salt or sea salt flakes (to taste)

Steps:

  • Start by slicing the plantains. Cut off the ends of each plantain and discard them. Use the tip of a paring knife to slit the peel lengthwise, then cut the plantain in half. Using your thumb (or a spoon), lift the edges of the peel to help loosen it from the plantain. Remove and discard the peel.
  • Once peeled, slice the plantains at an angle, into 1 to 1 ½-inch pieces.
  • In a large skillet, heat the vegetable oil over medium heat. Working in batches if necessary, add the sliced plantains and fry for about 1 minute per side, or until they soften slightly and gain some color.
  • Remove them from the pan and, using a tostonera press or a flat bottomed ramekin (or glass), gently press each slice until about 1/4 inch thick.
  • Return the pieces to the hot pan, and fry until crispy, about 2 minutes per side.
  • Transfer the tostones to a cooling rack (or a paper towel lined plate) and season generously with salt while they are still hot.
  • Serve immediately!

2 plantain (green, unripe)
½ cup vegetable oil (with a high smoke point, like peanut, corn or canola oil)
1 tablespoon salt ((or more, to taste))
1 tomato (chopped)
4 sprigs parsley
1 clove garlic
¼ teaspoons pepper (freshly-cracked, or ground)
1 tablespoon olive oil

Steps:

  • Peel the plantains (see how to), discard the ends of the plantain and cut the flesh into 1 inch [2.5 cm] thick slices.
  • To fry the tostones, heat the oil over medium heat in a small saucepan, and lower the plantain slices into the oil with a slotted spoon. Fry the plantains till light golden (about 5 mins). Flatten the plantains using a tostonera (Amazon affiliate link) to about ¼" [0.5 cm] (I prefer thin tostones as they are crispier and stay so longer). You can also use the bottom of a big jar and press on a cutting table if you don't have a tostonera.Fry the plantains again until they turn golden yellow on both sides (about 5 minutes).
  • Sprinkle with salt to taste and serve immediately. Best served freshly fried.

1/2 cup vegetable oil or 1/2 cup olive oil
1 tablespoon adobo seasoning or 1 tablespoon salt
1/2 cup ketchup
1/2 cup mayonnaise

Steps:

  • In a skillet heat 1/2 cup of oil.
  • Peel skin off plantain by making a surface cut lengthwise and peeling to the sides (plantains can be tricky to peel).
  • Cut the plaintain in diagonal wheels about 1/2 inch thick.
  • Make sure oil is sizzling, fry plantains turning once for about 5 minutes (2-1/2 minutes each side).
  • Remove plaintains from oil.
  • Pat dry plantains, flatten each wheel (use a piece of wax paper folded for thickness) and sprinkle with Adobo or salt.

A staple dish throughout the Caribbean and Latin America, tostones are crisp, flattened plantains that are often served as appetizers and side dishes. Unlike sweet maduros, which are made with very ripe, almost black, yellow plantains, savory tostones are made with unripe green plantains. Tostones are fried twice: The first fry sears the cut sides of the plantains, establishing a base layer of color; the second fry ensures that every edge is golden and crunchy. Tostoneras, wooden tools designed to create the perfect tostone shape, come in handy here, but a flat-bottomed cup will do just fine in its place.

Neutral oil, such as vegetable or canola oil, for frying

Steps:

  • Trim and discard the ends of the plantains. Use a paring knife to cut a slit along the length of the plantain to easily remove the peel, carefully avoiding cutting into the flesh. If the peel is too firm, use a spoon to lift the edges, then discard the peel. Slice the plantain crosswise into 1-inch rounds (about 8 pieces per plantain).
