These delicious tostadas de jaiba are the perfect meal for the hot summer weather.

1 lb imitation crab meat
1/4 red onion
1 English cucumber
2 serrano peppers
4 roma tomatoes
1/2 cup cilantro
1 avocado
1 1/2 tsp garlic salt (I use Lawry's)
1 tsp Worcestershire sauce
1 tsp soy sauce
1/2 cup lime juice
1/4 cup ketchup
2 cups clamato juice
tostadas

Steps:

  • Chop up the red onion, cucumber and serrano peppers. Put them in a large bowl.
  • Then chop up the tomatoes, cilantro and avocado and add them to the bowl.
  • Chop up the imitation crab meat and add it to the bowl. Give everything a good mix with a large spoon.
  • Next add the garlic salt, Worcestershire sauce, soy sauce, lime juice, ketchup and clamato juice to the bowl. Give it another good mix.
  • Cover the bowl and transfer it to the fridge to chill for at least an hour before serving.
  • Serve on tostadas.

Yum... love the addition of the mayo! The creamy crab and crunchy tostadas combine for a heckuva meal.

16 oz crabmeat, shredded
1 pkg 14oz tostadas
3/4 c finely diced onions
3/4 c finely diced fresh tomatoes
3/4 c finely diced cilantro
5 romaine lettuce leaves, finely shredded
1 or 2 chili serrano, deveined and deseeded, finely diced for spiceness (optional)
1 c mccormick mayonnaise/ mayonasa
1 tsp koser salt
1/2 tsp black pepper
1 large avocado, slilced in wedges
tabasco sauce or homemade salsa
catsup

Steps:

  • 1. In a medium bowl, place the crabmeat, onions, tomatoes, cilantro, lettuce. chili serranos (optional) and toss.
  • 2. Add salt, and pepper, and toss.
  • 3. Add Mayonnaise and fold into the above. THE SECRET TO THE THESE TOSTADAS IS THE BRAND OF "McCORMICK" MAYONNAISE/(MAYONASA MEANS MAYONNAISE). THIS IS THE MEXICAN VERSION. THIS MAYONNAISE IS FLAVORED WITH LEMON AND LIME JUICES. THIS MAYONNAISE CAN USUALLY BE FOUND IN HISPANIC MARKETS. I HAVE TRIED USING OTHER BRANDS, AND THE FLAVOR IS NOT THERE AT ALL. MAKE SURE YOU USE "McCORMICKS' BRAND. THIS IS WHAT GIVES IT A BANG.
  • 4. Place 1 to 2 tablespoons of mixture on top of a tostada, top with 2 wedges of avocado. The tostadas can be additionally topped with chili Tapatio, or your own home made salsa. you can also add a few dribbles of catchup. These can be combined or separate, according to your taste.

1/3 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing
1/4 taza de cilantro fresco picado
1 cucharada de jugo de limón verde (lime)
1 cucharada de chile jalapeño, rebanado fino; cantidad dividida
3 cucharadas de mayonesa KRAFT Real Mayo Mayonnaise
2 cucharadas de crema agria BREAKSTONE'S Sour Cream o la de KNUDSEN
6 tostadas de maíz (5 pulgs.)

Steps:

  • Mezcla los primeros 6 ingredientes y la mitad del jalapeño en un recipiente mediano.
  • Mezcla la mayonesa con la crema agria en un tazón pequeño. Pica bien el resto del jalapeño rebanado; añádelo a la mezcla de mayonesa.
  • Unta cada tostada con cerca de 1 cda. de la mezcla de mayonesa. Cúbrelas con cantidades iguales de la mezcla de carne de cangrejo. Sírvelas inmediatamente.
