With just a few high-quality ingredients and less than 10 minutes, you can make this appetizer. "Delicious" doesn't even begin to describe this: If I'm starting with this, then I know the rest of the meal will knock your socks off.

1 large baguette (12 inches), halved crosswise, then lengthwise
1 garlic clove
4 tablespoons extra-virgin olive oil
5 tablespoons high-quality, unsalted grass-fed butter, at room temperature
24 olive oil-packed anchovies, cut in half crosswise on a bias, preferably Cetara
Flaky sea salt, such as Maldon, for serving
2 tablespoons chopped Italian parsley

Steps:

  • Preheat the broiler. Put the halved baguette on a baking sheet. Rub the cut sides with the garlic clove, then drizzle with the olive oil and spread the butter on evenly.
  • Place the cut anchovies evenly on the bread and broil until brown and bubbly, about 4 minutes. Cut into 12 even pieces, crunch some salt over the top and sprinkle with chopped parsley.

4 tablespoons extra virgin olive oil (a nice, fruity one)
2 tablespoons fresh lemon juice
2 tablespoons minced flat leaf parsley
2 tablespoons minced onions
2 garlic cloves, minced
fresh ground pepper, to taste
oil, for frying
1 thin baguette (12-16 1/4 inch thick slices)
3 (2 ounce) cans anchovies packed in oil, drained (use good quality anchovies)

Steps:

  • Combine olive oil, lemon juice, parsley, onion, garlic, and pepper. Beat together to combine.
  • Heat 1/4 inch oil in a skillet. Fry bread slices until golden and crisp clear through. Drain on paper towels. (Tapas may be prepared ahead to this point).
  • Spread about 1 teaspoon dressing on each slice of bread. Divide anchovy fillets evenly between slices of bread. Serve at room temperature.

My mom made this dish up, it is REALLY good if you like anchovies. A little on the dry side because of the breadcrumbs and anchovies together, but it has an excellent taste.

2 -3 tablespoons olive oil
1 -2 can anchovy
Italian breadcrumbs

Steps:

  • Heat olive oil in skillet add liquid from anchovies.
  • Chop up anchovies and put in skillet on medium heat, for just a couple minutes (they cook up really fast so watch carefully).
  • Turn skillet off, add bread crumbs and stir thoroughly.
  • Pour over pasta.

5 tablespoons butter
1 (2 ounce) can flat anchovies packed in oil
4 teaspoons minced garlic (about 5-7 cloves)
3 tablespoons olive oil
1/3 cup light cream
grated parmesan cheese

Steps:

  • 1/2 pound pasta for 2 generous servings.
  • Prepare the sauce while the pasta water is boiling.
  • I like to use vermicelli.
  • In a small skillet melt the butter.
  • Add minced garlic.
  • Cook until golden brown until it smells toasted.
  • Do not let it scorch or it will taste bitter.
  • When the garlic is golden brown, add the entire can of anchovies, including oil and the 3 tablespoons of olive oil.
  • Cook and stir until the anchovies dissolve.
  • If the pasta is not cooked yet, turn off the heat.
  • When the pasta is cooked, finish the sauce.
  • Add light cream to the sauce, and cook until it comes to a rolling boil.
  • Pour over the well drained pasta and toss vigorously.
  • Serve with parmesan cheese.

6 slices good crusty bread
45 ml olive oil

Steps:

  • In a small bowl, beat the eggs with a few drops of very hot water.
  • Add the minced garlic, salt, pepper and mix well.
  • Heat oil in a frying pan.
  • Dip a bread slice in the egg mixture, covering both sides well.
  • Fry the bread until golden brown on both sides.
  • IMPORTANT: its necessary for the oil to be very hot so that the eggs cook immediately upon contact. Be careful to turn bread before the garlic burns.
