MEXICAN TUNA CAKES (TORTITAS DE ATUN)

Mexican tuna cakes, or tortitas de atun, are quick, easy, and delicious. Made with canned tuna, these tuna patties come together in about 20 minutes.

2 (5 oz.) cans tuna, drained
1/2 cup breadcrumbs
2 eggs
1/4 cup onion, diced
1/4 cup fresh cilantro, finely chopped
1 medium carrot, grated or finely chopped
1/2 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons vegetable oil (for pan-frying)
2 tablespoons mayonnaise (optional, for serving)
fresh cilantro, chopped (optional, for serving)
lime, wedged (optional, for serving)
1/4 cup breadcrumbs
1/4 cup Parmesan cheese, grated
1 egg, beaten (optional, for a thicker coating)

Steps:

  • In a large mixing bowl, add canned tuna, breadcrumbs, eggs, onions, cilantro, carrots, lemon juice, garlic powder, paprika, salt and pepper. Stir well until evenly combined.
  • Take 1/4 cup of the tuna mixture at a time and firmly roll into patties, about 8-9 patties. Set aside.
  • In a shallow plate, make the breading by whisking together breadcrumbs and Parmesan cheese until combined.
  • Dip both sides of each patty into the breadcrumb mixture to coat and gently press breadcrumbs into the patties to adhere as much as possible. (If you want a thicker breading, prepare a shallow plate for beaten egg and dip patties in the egg and evenly coat, and then coat completely with the breadcrumb mixture. Shake off any excess breadcrumbs).
  • Heat vegetable oil in a skillet or frying pan over medium-high heat for 2 minutes until the hot oil sizzles. Gently add the breaded tuna cakes in the skillet and pan fry until nicely browned, about 4-5 minutes on each side. You can likely fit 4-5 tuna cakes at a time. Remove from pan and let rest for 5 minutes. Repeat with remaining tuna cakes.
  • Serve with a side of mayonnaise, a sprinkle of fresh cilantro, and lime wedges, if desired.

4 tomatillos, husked, washed, and cut into 1/4inch dice
2 green onions, white and some green part, thinly sliced on the diagonal
1 small bunch cilantro, leaves only, coarsely chopped
1 teaspoon minced seeded jalapeno chile
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons freshly squeezed lime juice
2 tablespoons olive oil
16 beef marrow (leg) bones (about 4 pounds), approximately 2 inches long
6 large Corn Tortillas (recipe attached)
Vegetable oil for frying
1 ripe avocado, peeled and diced, for serving
1 teaspoon flaked sea salt

Steps:

  • In a glass or ceramic bowl, combine the tomatillos, green onions, cilantro, jalapeno, salt, pepper, and lime juice. Toss to mix, cover with plastic wrap and chill for at least 30 minutes and up to 4 hours so that the flavors can marry. Return the salsa to room temperature before using.
  • Dig the marrow out of the bones with a small sharp knife, scraping against the bone to get all of it, or push it out with your fingers if it will come out in one piece. Dip the knife into very hot water and cut the marrow into 1/4inch dice, dipping again as necessary. Refrigerate the marrow until you are ready to use it.
  • Pour oil to a depth of 1/2-inch in a small skillet. Fry the tortillas on both sides until crisp and golden. Drain on paper towels and keep warm in a low oven.
  • Bring a large skillet of lightly salted water to a slow simmer. Remove from the heat and immediately plunge all of the marrow into the hot water. Leave in the water for 1 minute, then use a slotted spoon to transfer it to a warm plate, draining well.
  • Place a warm tostada on a warm plate and top with some of the salsa. Top each tostada with a spoonful of the warm marrow and scatter a few grains of the sea salt over the marrow. Add a few cubes of avocado, season with pepper to taste and serve immediately.

2 pounds Russet potatoes, peeled
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 cup olive oil
2 large onions, thinly sliced
6 large eggs

Steps:

  • Halve the potatoes lengthwise and, with a sharp knife or, preferably, a mandoline, slice them crosswise about 1/16 inch thick. Toss the potatoes with 1/2 teaspoon of the salt and half of the pepper. In 9 inch castiron skillet, heat 1/4 cup of the olive oil over medium heat. Add the potatoes and cook, tossing occasionally with a spatula, until golden and crisp. Try to avoid clumping but, if they stick together a bit don't worry. Set the pan aside.
  • Heat 2 tablespoons of the olive oil in another skillet over medium low heat and saute the onions, stirring occasionally, for about 20 minutes, or until very soft and slightly golden.
  • Preheat the oven to 350 degrees. In a large bowl, beat the eggs together and stir in the remaining 1/4 teaspoon each of salt and pepper, and the onions. Remove the potatoes from the pan with a slotted spoon and let them drain for a moment in a colander. Wipe the potato cooking pan with a paper towel, then add the remaining 2 tablespoons oil to the skillet. Heat the skillet over low heat, stir the potatoes into the egg mixture, and immediately pour it into the hot skillet. Cook for about 8 minutes, or until the bottom of the cake is slightly golden. Place a large plate upside down on top of the skillet, invert it, and turn the cake onto the plate. Slide the cake back into the pan. Finish cooking in the oven for 4 to 5 more minutes, or until the eggs are set. Cool in the pan for 5 minutes, then cut into wedges or squares, depending on the number of people you want to serve. Serve warm or at room.

1 cup beef marrow
1 cup water
2 dried ancho chiles, seeds and membranes removed
1 1/2 lbs masa dough
3 tablespoons all-purpose flour
oil (for frying)
2 tomatoes, peeled and chopped
1 onion, finely chopped
2 avocados, peeled, pitted and finely diced
1 serrano pepper, chopped
1 tablespoon cilantro, minced
1 tablespoon oil
1 teaspoon red wine vinegar
salt

Steps:

  • Bring the water to a boil in a small saucepan, add the ancho chiles and return to a boil. Remove the pan from the heat and let the chiles stand in the water for 5 minutes. Drain, reserving 2 tablespoons of water. Transfer the chiles with the water to a blender and purée.
  • In a large bowl, use your hands to mix the masa, bone marrow and flour together. Add the puréed chiles and knead until the mixture is smooth.
  • Shape the masa mixture into tiny patties 2-3 in (5-7.5 cm) in diameter and 1/8 in (3 mm) thick. Heat 1/2 in (1 cm) oil in a skillet and fry the patties in batches, using a slotted spoon remove them from the skillet. Drain on absorbent paper.
  • Combine all the salsa ingredients in a small bowl. Arrange the patties on a platter and place a dab of salsa on each.

1 teaspoon olive oil
1/2 large red onion, minced
8 ounces applewood-smoked bacon, cut into 1/4-inch cubes
1/4 cup light-brown sugar
2 tablespoons maple syrup
Pinch cayenne pepper
8 large (5-inch) beef marrow bones, split lengthwise so they resemble canoes
2 cloves garlic, minced
Leaves from 4 sprigs fresh thyme
Zest of 2 Meyer lemons
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 sourdough baguette, sliced 1/4 inch thick on bias
1/4 cup extra-virgin olive oil

Steps:

  • Make the bacon marmalade: In a medium saute pan over medium-high, heat the olive oil and add the onions. Saute until the onions are well caramelized, 8 to 9 minutes, then remove from the pan and set aside. Add the bacon to the same pan and cook until browned and crispy, 7 to 8 minutes. Drain the bacon grease off and then add the brown sugar, maple syrup and cayenne pepper to pan. Bring to a boil, then lower the heat and simmer until the jam has thickened, 3 to 4 minutes. Return the onions to the pan, remove from the heat and allow to cool.
  • Make the marrow and toast: Preheat the oven to 375 degrees F.
  • Place the bones cut-side up on a large baking tray. Sprinkle the bones with garlic, thyme, lemon zest and salt. Roast the bones in the center of oven until the marrow is soft and has begun to separate from the bone, 12 to 15 minutes. Remove from the oven and set aside.
  • Place the bread on a baking sheet and drizzle with the olive oil. Bake until golden and crispy, 5 to 7 minutes. Serve the marrow with marmalade and toast.

Steps:

  • Sauté onions garlic and salt in the oil. Add bell peppers and cumin and cook until peppers are softened. Remove from heat and set aside.

  • Shape the mixture into small patties. Fry in a pan coated with cooking spray until lightly browned on each side.

1/2 lb lean ground veal
1/2 lb ground lean pork
1/2 lb lean ground beef
1/2 cup white breadcrumb
1/2 cup sour cream
1 cup onion, minced
2 cups chicken stock
salt and pepper
2 eggs
5 lbs boneless veal shoulder
4 hard-boiled eggs, peeled

Steps:

  • Preheat oven to 350°F.
  • Stuffing:.
  • Combine ground meats in a large mixing bowl then add bread crumbs, onions, water, eggs, 1 Tbsp salt and 1 tsp pepper.
  • Mix until all ingredients are very well combined )your hands work well for this); then vigorously knead mixture for 3-5 minutes.
  • Spread the veal skin-side down flat on work surface; using a small, sharp knife, make small cuts in the thickest areas of the meat to make it lie even flatter. Cover with plastic wrap or a towel.
  • With the side of a cleaver or meat mallet, pound meat to a fairly uniform thickness.
  • Remove cover and sprinkle veal liberally with salt and pepper.
  • Spread 1/2 the stuffing on the veal, leaving a 2" border of veal exposed all around the sides.
  • Lay hard-boiled eggs in a row down the length of stuffing & spread remaining stuffing in a layer over them.
  • Bring one long side of the veal over the filling to the middle and tuck-in the two ends. Bring the other side over the filling to enclose it very well.Tie up with string. tie rolled veal crosswise at 2" intervals, then with more cord tie it lengthwise.
  • Place the rolled veal seam-side down in a shallow roasting pan large enough to hold it.
  • Pour in 1 1/2 cup chicken stock and roast for 2 hours basting occasionally with the pan juices.
  • When meat is golden brown carefully transfer it to a serving platter; remove & discard cords.
  • Bring juices remaining in pan to a boil over high-heat. If most of liquid has cooked away add remaining 1/2 cup chicken broth to pan.
  • Scrape into it any bits that may be sticking to bottom and sides of pan. Remove from heat then stir 1/2 cup sour cream into sauce 1 Tbsp at a time. Season to taste.
  • Slice veal roll crosswise into 1" rounds and arrange slightly overlapping down center of a large preheated platter. Moisten them with a few Tbsp sauce and serve remaining sauce separately.
