SPINACH ARTICHOKE PASTA SALAD

Coarse salt
1 package fresh mushroom or chicken prosciutto or spinach filled tortellini (recommended: Contadina or Buitoni brands) available on dairy aisle in most markets
1/2 pound fresh baby spinach
1 (15-ounce) can baby artichoke hearts in water, drained and chopped
1 red roasted pepper, drained and chopped
1/2 small red onion, chopped
1 clove garlic, cracked from skin
1 lemon, zested
2 teaspoons lemon juice, the juice of 1 wedge
2 tablespoons red wine vinegar, a couple of splashes
1/4 cup extra-virgin olive oil
1 tablespoon fresh thyme leaves, chopped or 1/2 teaspoon dried leaves, eyeball it
Black pepper
A handful sun-dried tomatoes packed in oil, coarsely chopped

Steps:

  • Bring 5 or 6 inches of water to a boil in a large pot. Salt boiling water and add pasta. Cook for 3 to 4 minutes, until pasta is just tender and the tortellini are floating like buoys. Drain tortellini, then cool the cooked pasta by spreading them out on a large plate or a cookie sheet in a single layer.
  • Coarsely chop baby spinach. Combine with artichoke pieces, roasted red pepper and red onion. Chop garlic, then add salt to it and mash it into a paste with the flat of your knife. Transfer garlic paste to a small bowl and add lemon zest, lemon juice and vinegar to it. Whisk in oil, thyme and pepper. Add pasta and sun-dried tomatoes to the salad. Dress salad and gently toss. Serve or refrigerate.

1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 teaspoon salt
1/4 cup shredded Parmesan cheese

Steps:

  • Drain tomatoes, reserving 2/3 cup juice. Drain artichoke hearts, reserving 3/4 cup marinade; chop artichokes. , In a Dutch oven, heat oil over medium-high heat. Add onions, herbs, garlic and pepper flakes; cook and stir until onion is tender, 4-5 minutes. Stir in tomatoes and reserved tomato juice and artichoke marinade; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 10-12 minutes. Meanwhile, cook tortellini according to package directions., Drain tortellini; add to tomato mixture. Gently stir in olives, salt and artichoke hearts; heat through. Sprinkle with cheese.

1 (14 ounce) can marinated artichoke hearts, quartered and liquid reserved
¼ cup reduced-fat mayonnaise
3 tablespoons chopped pimento peppers
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
1 tablespoon grated reduced-fat Parmesan cheese

  • 1. Cook the tortellini according to package directions, and drain and let cool.

5 oz. Spinach
3 tbsp Pine Nuts (toasted)
¼ cup Pesto
¼ cup Sundried Tomatoes
¼ cup Artichoke Hearts (drained)
½ cup Parmesan cheese (grated)

Steps:

  • In a large pot boil water and cook tortellini according to directions. During the last 30 seconds of cooking add the spinach and wilt. Drain the pasta and spinach and place in a large bowl.
  • In a small saute pan toast the pine nuts until they are golden brown then set to the side.
  • In the large bowl with the tortellini and spinach add the pesto, sun dried tomatoes, artichoke hearts, toasted pine nuts, and grated Parmesan cheese. Mix well until incorporated.

1 6oz. can of medium size black olives, drained
1 7oz jar of manzanilla, green, olives, drained
1 14oz. bottle of Bernsteins Cheese Fantastico dressing OR any really good Italian Dressing and 1/4 cup of finely grated Parmesan Cheese. Either will work.
1/2 pound hard salami, thinly sliced and cut into bite size pieces OR about 4 slices cut into 1/4 inch thick slices and cubed.
Chopped parsley and grated Parmesan for garnish

Steps:

  • Follow directions on package of tortellini for cooking pasta al dente. Be sure NOT to over cook the pasta.
  • Cook Pasta and drain.
  • Drain both types of olives.
  • Place the tortellini and olives in a large bowl. Add the diced hard salami.
  • Add 3/4 the bottle, of well shaken, Cheese Fantastico dressing.
  • Stir until all ingredients are well combined. All to chill for 2-3 hours or overnight.
  • Stir just before serving. If needed, add more dressing. Garnish with Parmesan Cheese and chopped Parsley.
  • Serve.
  • Will keep in the refrigerator for 3-4 days.
