Steps:
- Melt the butter in a saucepan over low heat, then whisk in the flour to form a thick paste. Slowly whisk in the milk until the mixture resembles a thick sauce. Stir in the tomato soup, Cheddar cheese, mustard, Worcestershire sauce, and paprika until heated through, about 10 minutes. Add more milk if the soup becomes too thick.

TOMATO RAREBIT
We found this recipe in a cookbook from the library, but I'm not sure which one. It is perfect comfort food, and easy since I usually have all the ingredients. Canned tomatoes work fine in this as a substitute for fresh. ZWT 3: Great Britain/Ireland (Welsh--rarebit)

Steps:
- Mix together the chopped tomatoes and the baking soda.
- In a saucepan, melt the butter, stir in flour, and cook for 2 to 3 minutes, stirring constantly.
- Slowly pour in the warm milk and stir until smooth. (Mixture will be thick).
- Add the tomato/baking soda mixture, cheese, eggs, cayenne, and salt to taste.
- Cook over very low heat, stirring constantly, until cheese has melted and the mixture is smooth and blended.
- Spoon over the toast and serve hot.
TOMATO RAREBIT
Tomatoes flavor this rarebit made with Cheddar cheese. Serve over toast at tea time for a traditional snack. Great for a hot lunch during those cold winter days. Just add ham or sausage and serve with a salad to complete a evening dinner.

- Melt the butter in a heavy saucepan over medium heat. Stir in flour until smooth, then continue to cook and stir until lightly browned, about 10 minutes. Gradually stir in the milk so that no lumps form and then simmer until thick, stirring the whole time. Remove from the heat.
- Stir together the baking soda and canned tomatoes; stir into the sauce. Whisk together the mustard and eggs; stir into the tomato sauce. Set the saucepan over a pot of barely simmering water (like a double boiler). Stir in the cheese and season with salt and pepper. Continue to cook, stirring occasionally, until cheese has melted.

- In a medium saucepan over low heat, melt the butter and whisk in the flour. Cook, whisking constantly for 2 to 3 minutes, being careful not to brown the flour. Whisk in mustard, Worcestershire sauce, salt, and pepper until smooth. Add beer and whisk to combine. Pour in cream and whisk until well combined and smooth. Gradually add cheese, stirring constantly, until cheese melts and sauce is smooth; this will take 4 to 5 minutes. Add hot sauce. Pour over toast and serve immediately.
WELSH RAREBIT

- Melt the butter in a small saucepan over medium heat. Add the flour and cook, whisking constantly, until lightly browned, about 1 minute. Slowly whisk in the beer until smooth. Whisk in the mustard, hot sauce and Worcestershire until smooth. Gradually add the cheese, alternating between the Cheddar and the Stilton, a handful at a time, whisking until smooth and creamy before adding more, 3 or 4 minutes. Season with salt and pepper. Set aside.
- Preheat the broiler. Arrange the bread in a single layer, brush with oil and lightly toast. Rub the oiled side of the toasts with the cut side of the garlic. Arrange tomato slices on the toasts, top with a layer of the cheese mixture and broil until the cheese is bubbly and just starting to brown, 2 or 3 minutes. Garnish with bacon, diced tomatoes and chives before serving.
WELSH RABBIT WITH TOMATO
Steps:
- In a saucepan combine the butter and the flour and cook the roux over low heat, stirring, for 3 minutes. Whisk in the beer and the tomatoes and boil the mixture, whisking, for 3 minutes. Reduce the heat to moderately low, stir in the Cheddar, the mustard, the Worcestershire sauce, and the Tabasco, and cook the mixture, stirring, until it is hot (but do not let it boil). Arrange 3 of the toasts or 2 of the muffin halves on each of 6 plates and spoon the Cheddar mixture on top. Garnish the Welsh rabbit with the parsley and serve it with the bacon.
WELSH RAREBIT
Welsh rarebit, perhaps the most famous Welsh dish of them all and one which, along with Irish Stew and Scottish Haggis, travelled the world over.

- Put the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan.
- Mix well and then add the beer, Guiness or milk to moisten. Do not make it too wet!!
- Stir over a gentle heat until all is melted, and when it is a thickish paste, stop stirring, and swivel it around the saucepan, which it will do quite easily.
- Leave to cool a little, and meanwhile toast the bread on one side only.
- Spread the rarebit over the untoasted side and brown under a hot grill.
- This mixture can be made and kept in the refrigerator for several days if required. Sweet white wine can be used instead of beer and gives a good flavour.

- Preheat oven to 350°F.
- Sprinkle the tomato slices lightly on both sides with salt; arrange them on a wire rack over a tray to drain for 10 minutes and then pat dry with paper towels.
- Meanwhile, spread the walnuts in a pie plate or baking pan and toast in the preheated oven for about 8 minutes or until fragrant.
- Toss the cheese with the Worcestershire sauce, mustard, cayenne, walnuts and salt to taste.
- Arrange one fourth of the tomato slices on half of the bread slices.
- Mound one fourth of the cheese mixture on top of the tomatoes and top with the remaining bread slices.
- In a large skillet heat the oil or butter over moderately high heat until hot.
- Add the sandwiches, turn the heat down to moderately low and cook the sandwiches until golden on both sides, about 3 minutes a side.
WELSH RAREBIT
Steps:
- Preheat broiler. Line a baking sheet with aluminum foil, then a wire rack. In a medium bowl, stir together cheese, egg yolks, beer, mustard, Worcestershire sauce, and cayenne pepper. Season with salt and pepper.
- Place bread on wire rack, and place under broiler until lightly toasted on one side. Remove from broiler, and invert.
- Divide cheese mixture evenly between the bread, pressing gently to adhere. Place tomato slices on the rack next to bread. Drizzle tomatoes with oil, and season with salt and pepper.
- Return to broiler, and cook until cheese is bubbling and golden brown, about 2 minutes. Place a slice of tomato on top of each serving; serve immediately.
TOMATO-BACON RAREBIT
