- Saute onions with olive oil, salt, and pepper until translucent.
- Set aside.
- Dice potatoes, carrots, and celery.
- Set aside.
- In a large sauce pan, whisk chicken broth, crushed tomatoes, and tomato past until smooth.
- Add vegetables and stewed tomatoes.
- Simmer on LOW for 30-45 minutes, or until carrots and potatoes are soft.

SOUR CREAM HEARTY TOMATO BASIL SOUP

Steps:
- In a crock pot or large pot, mix water, bay leaf and bouillon until cube disolves.
- add tomatos and tomato paste.
- Mix with a wooden spoon until blended.
- Add garlic and onions.
- Add italian seasoning and pepper to taste.
- Add sour cream (1 to 1 1/2 cups depending on your taste).
- Keep on low for 3-4 hours in a crock pot or pot to get the best taste, or heat on medium until hot.
- Serve in bowls sprinkle with parmesan and add garlic toast if desired.
BASIC CREAM OF VEGETABLE SOUP
Steps:
- In a large saucepan, melt butter over medium heat. Add the chopped onion and cook until tender without browning. Stir in diced potato and liquid. Bring to a boil and simmer until potato is tender. Stir in your steamed vegetable of choice and return to a simmer. Puree the soup in batches in a blender and return to saucepan. Leave 1 cup of vegetables not pureed if a chunkier soup is preferred. Season soup with salt and pepper and finish with heavy cream. Serve warm with French bread and a salad.

- Combine broth and tomatoes in a medium saucepan over moderate heat. When soup bubbles, stir in heavy cream and reduce heat to low. - Combine the olive oil, Italian seasoning, and onion powder in a medium saucepan over low heat. Bring to a gentle simmer, stirring occasionally, until the spices infuse into the oil, about 5 minutes.
- Add the mixed vegetables, 1/4 teaspoon salt, and a few grinds of black pepper. Increase the heat to medium and cook, stirring occasionally, until everything is well- coated, 1 to 2 minutes.

- Cut each tomato into four pieces.
- Slice the onion thinly.
- Add margarine to a medium size saucepan and let it melt at medium heat.
- After that, add the onion and the tomatoes to the saucepan and cook for about 5 min.
- Sprinkle salt and pepper to taste.
- When the onions are cooked, add the 1 small teaspoon of flour and mix well, cook it for 2 more minutes.
- Now, slowly add the vegetable broth to the mixture and whisk to avoid lumps on the soup.
- Let it boiled and reduce the heat to simmer for 15 minutes.
- Add half of the parsley leaves to the soup and pour it to your food processor, and liquefy it.

- Heat the oil in a large pan and cook the onion for 8-10 mins until softened and starting to take on a little colour. Add the carrots, garlic, peppers and sweet potato. Cook for a further 10 mins, stirring often and taking care not to burn the garlic. Add the tomatoes, stock, herbs and 1 litre of water. Bring to a simmer. Cover and cook for 20 mins until the sweet potato is soft.
- Use a hand blender to whizz the soup until smooth. Stir in the cream and season to taste. Can be chilled for three days or frozen for up to three months.

TOMATO SOUR CREAM DUMPLING SOUP
I got this recipe from a friend. If you like tomato soup this is different. It will be a lighter color then normal tomato soups and chunkier because of the tomatoes. I personally like to puree my tomatoes that way the kids like it more. The dumplings are made very tiny to almost be like a small noodle. Let me know what you think. My friend says this freezes well, I have not tried to do that. So let me know for the OAMC forum and I will update this recipe for this.

- Sprinkle tomatoes with sugar, set aside.
- In a Large Soup Pot: Melt butter, add scallions and saute until golden. Add parsley, 1/2 the dill and all the tomatoes. Sprinkle with salt and pepper, cover and cook on medium heat for 10 minutes stirring every 2 minutes.
- Add the chicken stock, bring to a boil; reduce heat and simmer 30 minutes.
- With a wire wisk, mix 4 T. flour with milk until lump free. Slowly pour into the soup stirring constantly.
- Cover and bring to a boil over medium heat stirring occasionally to avoid scorching.
- Reduce heat and simmer.
- Dumplings: Mix together the ingredients for the sour cream dumplings. The dough will have a consistency firmer than pancake batter, but softer than dumpling dough.
- As the soup simmers, dip a small spoon into soup. Using the hot spoon, take almond size pieces of dough and drop into the simmering soup.
- Cook until dumplings all come to the top of the soup.
- Take 1 cup sour cream and whisk it with a few spoonfuls of the hot soup. Stir until smooth. Add back into the soup. Sprinkle with remaining dill on top. Adjust seasoning by adding more salt and pepper. If the soup is too acidic add more sugar.
- Enjoy.
CREAM OF GARDEN TOMATO SOUP - PRESSURE COOKER - WEST
Like most gardners I ended up with more tomatoes than I could use! Was looking for a nice fall weekend lunch and DH wanted grilled cheese sandwiches. Ahhh! Cream of tomato soup! That's what I could make. Looking at my traditional cookbooks, most of the recipes would take about 2 hours and used canned tomatoes. Too long to wait and I had fresh. I looked in my "Pressure Cooker Gourmet" by Victoria Wise and found this gem. The flavor is fabulous and it is extremely easy to make. This recipe lends itself to all kinds of additions...we added a chopped jalapeno and after cooking chopped basil. I strongly recomend the basil. You could also top with a drizzle of sour cream. Add oregano or cumin. All kinds of options with this soup. The cookbook gave a number of options for dealing with the tomato skins. I opted for the easiest and wouldn't do it any other way. I did not peel or seed the tomatoes. When the soup was done cooking I used my immersion blender to puree. The next step was supposed to be running the soup through a food mill, which I did, but there was no peels left to strain. I guess the immersion blender chopped them up. I thought we'd find seeds, but nope. You can peel them if you like, you can also use a blender or food processor to puree. If after pureeing you find any peels, just strain the soup or run through a food mill with the finest blade. This soup also freezes well. And of course the best accompaniment with this soup is a grilled cheese sandwich!

- Heat the oil and butter in the pressure cooker over medium high heat until the butter melts. Add the onion and cook, stirring occasionally, until wilted, about 5 minutes.
- Add the tomatoes and their juices, thyme, salt, pepper, and broth and stir to mix.
- Lock on the lid and bring to pressure over high heat, about 4 minutes.
- Reduce heat to medium and cook for 15 minutes.
- Remove from the heat and let sit for 10 minutes to finish cooking (this step also lets the cooker cool down so that the later release of steam is minimal).
- With the steam vent pointed away from your face, gently release any remaining pressure. Let cool enough to remove lid.
- Use immersion blender to puree soup (or transfer soup to blender or food processor and puree in smaller batches to avoid buring yourself).
- If after blending you see any chunks of tomato peel, put soup through strainer or food mill to remove.
- If using right away, place soup in large pan and stir in cream. Reheat gently without boiling then add garnish of choice and serve.
- If not using right away, store in the refigerator until ready to use; then stir in the cream, heat and serve.

- Stir well.
- Cook on low for 8 hours.
- Before serving stir in the chicken, rice, extra kidney beans and peas.

- I keep cooked chicken in portions in the freezer (from recipe#36944) and also the rice (recipe#56242) making this very easy to prepare.
