I LOVE soup! This is one of my favorites. It has lots of vegetables and is full of flavor. I usually throw in some chopped cabbage. To make this a vegetarian recipe, use vegetable broth for the chicken broth.

1 cup chopped onions
1 cup chopped celery
1 cup chopped carrots
2 teaspoons minced garlic
2 tablespoons vegetable oil
2 ½ cups water
2 tomatoes, diced
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (10.75 ounce) can chicken broth
¼ cup uncooked barley
⅛ teaspoon ground black pepper

Steps:

  • In a large saucepan over medium heat, combine the onions, celery, carrots, garlic and oil and saute for 5 to 10 minutes, or until all vegetables are almost tender.
  • Then add the water, fresh tomatoes, canned tomatoes, chicken broth, barley and ground black pepper.
  • Stir thoroughly and bring to a boil. Reduce heat to low and simmer for 35 to 40 minutes, or until barley is tender.

I have adapted this recipe from one that I found on allrecipes.com by Nancy Olsen. It is so healthy, Weight Watcher friendly and tastes great. You can substitute the chicken broth with vegetable broth if you want vegetarian.

1 cup onion (diced)
1 cup carrot (diced)
1 cup celery (diced)
2 teaspoons garlic (minced)
2 tablespoons olive oil
1/3 cup pearl barley
1 (14 ounce) can stewed tomatoes (I like to give them a whirl in the food processor)
2 cups chicken broth
2 cups water
1 bay leaf
1/8 teaspoon black pepper

Steps:

  • Heat the olive oil in a large pot.
  • Add the onions, carrots, celery and garlic. Saute for about 10 minutes or until the vegetables are starting to soften.
  • While they are cooking pour the barley into a dish with water to cover.
  • Add the tomatoes, broth, water, bay leaf, and pepper and bring to a boil, stirring occasionally.
  • Drain the barley and add to the pot.
  • Reduce heat and cook at a low boil for about 45 minutes (until the barley is tender).
  • Add more water or broth if it thickens too much.

4-1/2 to 5 pounds broiler/fryer chicken pieces, skin removed
4 quarts water
6 large carrots, sliced
5 medium onions, chopped
2 cups sliced celery
1 tablespoon minced fresh parsley
2 teaspoons dried rosemary, crushed
2 teaspoon salt, optional
1-1/2 teaspoons dried thyme
1-1/2 teaspoons dried savory
1/2 teaspoon pepper
1 cup uncooked brown rice
1/2 cup medium pearl barley
1 bottle (32 ounces) tomato juice
1 can (28 ounces) crushed tomatoes

Steps:

  • In a stockpot, combine the first 11 ingredients. Cover and bring to a boil. Reduce heat; simmer for 2 hours. , Remove chicken; allow to cool. Skim fat from broth. When cool enough to handle, remove meat from bones; discard bones. Cut meat into bite-size pieces; return to pan. , Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until barley and rice are tender.

1 medium onion, (diced)
2 large carrots, (thinly sliced)
1 large stalk celery, (thinly sliced)

8 cups vegetable broth
1 (15-ounce) can chickpeas, drained and rinsed
1 (14.5-ounce) can diced tomatoes
1 1/2 cups frozen cut green beans
1 cup pearl barley
2/3 cup frozen corn
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 bay leaf
2/3 cup frozen peas
1/3 cup chopped Italian parsley, (plus extra for serving)

Steps:

  • Heat olive oil in a large pot over medium heat.
  • Add onions, carrots, and celery to oil. Season with salt and pepper, then saute until softened (about 5 minutes).
  • Increase heat to medium-high. Add mushrooms and cook until lightly browned, stirring frequently.
  • Add garlic and cook, stirring constantly, until fragrant (about 30 seconds).
  • Stir in broth, chickpeas, tomatoes, green beans, barley, corn, basil, oregano, and bay leaf.
  • Bring soup to a boil, then reduce to a simmer. Cook until barley is tender, stirring occasionally (about 30 minutes).
  • Mix in peas and cook until tender and hot (about 1 to 2 minutes).

1 teaspoon olive oil
1 small onion (for about 1/2 c chopped)
1 teaspoon garlic (bottled minced)
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic (see Note)
1 (15 ounce) can tomato sauce
1 cup milk or 1 cup half-and-half
1/2 cup parmesan cheese (grated or shredded)
croutons, plain (optional) or garlic (optional)

Steps:

  • Heat oil in 4 1/2 qt Dutch oven or soup pot over medium heat.
  • Peel and chop onion and add to pot, stir and cook for 2 minutes.
  • Add garlic, stir and cook 30 seconds.
  • Add tomatoes with juice and tomato sauce.
  • Raise the heat to high and bring soup to a boil.
  • Reduce heat to low.
  • Stir in milk and Parmesan cheese; do NOT boil the soup after the milk has been added.
  • Stir and heat for 2 minutes.
  • Remove from heat and serve at once, garnished w/ croutons if desired.
  • NOTE: If you cannot find the DelMonte brand of tomatoes seasoned with basil, garlic, and oregano, use plain diced tomatoes with 1/2 teaspoon each of basil and oregano.

  • Heat the butter in a pan and add all of the veg. Cook over a medium heat for about 5 minutes until the veg has just started to soften.
  • Stir in the bay leaves, thyme, pearl barley, white wine, stock and tomato puree. Bring to a simmer and cook for about 45 minutes until the vegetables are very tender and the pearl barley is soft.

8 cups beef broth
1/2 cup red wine
2 tablespoons Worcestershire sauce
1 1/2 pounds red potatoes (cut into bite-sized chunks)
4 carrots (peeled and sliced)
4 celery ribs (sliced)
4 bay leaves
2 sprigs fresh thyme
2 sprigs rosemary
1 teaspoon sugar
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley

1/2 cup pearl barley

Steps:

  • In a large pot over medium-high heat, heat olive oil. Add beef stew meat and season with salt and pepper. Sear until all sides are browned, about 8-10 minutes
  • Add in diced onion, minced garlic, and tomato paste, and cook 4-5 minutes, until fragrant.
  • Pour in the beef broth, dry red wine, and Worcestershire sauce to deglaze the pan. Add red potatoes, carrots, and celery. Season with bay leaves, sprigs of thyme and rosemary, sugar, parsley, paprika, and oregano.
  • Bring to a boil over high heat, then reduce heat to low and simmer, covered, for 60 minutes.
  • Add in the barley and let cook for another 60 minutes, stirring occasionally.
  • Remove thyme sprigs and bay leaves before serving.
  • Season with more salt and pepper to taste. Serve hot.
