2 sticks unsalted butter, plus more for greasing
2 cups sugar
4 large eggs
2 teaspoons vanilla extract
2/3 cup good-quality unsweetened cocoa powder
1 cup all-purpose flour
1 teaspoon ground Mexican cinnamon (canela)
1/4 teaspoon pequen chili powder or cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees. Line a 9-by-13-inch baking dish with parchment paper, leaving an overhang on two sides. Press the paper into the corners of the pan and lightly grease the paper with butter.
  • Melt the 2 sticks of butter in a nonstick saucepan over medium-low heat; do not boil. Remove from the heat and let cool slightly. Add the sugar, eggs and vanilla to the saucepan and stir with a wooden spoon until combined.
  • Add the cocoa, flour, cinnamon, chili powder, salt and baking powder and mix until smooth. Spread the batter in the prepared pan and bake until a toothpick inserted in the middle comes out fudgy, 20 to 25 minutes. Cool in the pan on a rack, then use the parchment paper to lift out the brownies before slicing.

2 cups flour
2 cups sugar
1/2 cup butter or 1/2 cup margarine
1/2 cup shortening
1 cup water or 1 cup strongly brewed coffee
1/4 cup cocoa
1/2 cup buttermilk (or 1/2 C milk with 2 tsp lemon juice)
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup butter or 1/2 cup margarine
2 tablespoons cocoa
1/4 cup milk
3 1/2 cups powdered sugar or 3 1/2 cups icing sugar
1 teaspoon vanilla

Steps:

  • In a large mixing bowl, combine the flour and the sugar.
  • In heavy saucepan, combine butter, shortening, coffee or water and cocoa.
  • Stir and heat to boiling.
  • Pour boiling mixture over the flour and sugar in te bowl.
  • Add the buttermilk, eggs baking soda and vanilla.
  • Mix well, using a wooden spoon or high speed on an electric mixer.
  • Pour into a well buttered 17 1/2 by 11 inch jelly roll pan.
  • Bake at 400F for 20 minutes or until brownies are done in the center.
  • While brownies bake, prepare the frosting.
  • In a saucepan, combine the butter, cocoa and milk.
  • Heat to boiling, stirring constantly.
  • Remove from heat and mix in the powdered sugar and vanilla, beat until frosting is smooth.
  • Pour warm frosting over brownies as soon as you take them out of the oven.
  • Cool.
  • Cut into 48 bars.

1 1/2 cups semisweet chocolate chips
1 cup canola oil, plus 1 tablespoon
1 1/2 cups sugar
4 large eggs
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1 teaspoon pumpkin pie spice
1 tablespoon chili powder
1 tablespoon powdered sugar, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray a 13 by 9-inch baking pan with cooking spray. Put a medium glass bowl over a pot of simmering water. Add the chocolate chips and 1 tablespoon canola oil. Stir frequently until the chocolate melts, then remove from the heat and let cool a bit.
  • In a large bowl add the sugar, eggs, and vanilla. Mix until well combined and the sugar has dissolved, about 2 minutes. Sift together the flour, cocoa powder, pumpkin pie spice and chili powder. Add to the egg mixture and stir well until everything is combined. Add the remaining oil and mix with an electric hand mixer until smooth. Stir in the melted chocolate and mix well. Pour into the prepared pan and bake until a toothpick comes out clean when inserted into the brownie, about 30 to 35 minutes. Cool and dust with powdered sugar before serving.

6 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F.
  • Grease and flour an 8-inch square pan.
  • Melt butter and unsweetened chocolate in small heavy saucepan over low heat.
  • Remove from heat; stir in pepper; cool.
  • Beat eggs in medium bowl until light.
  • Add sugar, beating well.
  • Blend in chocolate mixture.
  • Stir in flour and vanilla.
  • Spread batter evenly in prepared pan.
  • Bake for 30 minutes or until firm in center.
  • Remove from oven; sprinkle chocolate chips over top.
  • Let stand until chocolate is melted, then spread evenly over brownies.
  • Cool completely in pan on wire rack.
