There's something about a afternoon get together with mini sandwiches that makes me happy. Can you imagine a brunch with friends and there's heart shaped delicious sandwiches waiting for you on the table? Doesn't that scream love and yum at the same time? In this super easy to put together recipe we're going to make Ricotta, Basil, Tomato Tea Sandwiches that you can whip up in just a few minutes. Created by Pamela Reed of Brooklyn Farm Girl.

Number Of Ingredients 5

16 slices bread, (white or wheat)
16 ounces ricotta cheese
4-6 cloves garlic
15 ounce can Hunt's® Diced Tomatoes, drained
1 bunch fresh basil leaves

Steps:

  • Add ricotta, garlic and a few fresh basil leaves to food processor.
  • Pulse until it's all combined.
  • Take your bread and cut it into shapes of your choice with a cookie cutter.
  • Start to assemble the sandwiches: bread, ricotta mixture, spoonful of diced tomatoes and fresh basil, bread.
  • Serve and enjoy.

This is a dainty tea sandwich that is just delicious. Instructions are so that you will get two rounds out of one piece of bread, but if you can't, use a larger cookie cutter, but you will need more bread to make eight little sandwiches. These little ones are not open-faced but have a cover on them.

8 slices white bread (cut into 16 round shapes)
2 tablespoons soft butter
2 tablespoons mayonnaise
8 small tomatoes, slices (to fit bread rounds)
8 slices provolone cheese
16 fresh basil leaves
salt and pepper
olive oil

Steps:

  • Cut 16 small rounds of bread (to make 8 sandwiches) with a round cookie cutter--should be able to get two out of each piece of bread, otherwise, use a larger cutter and more bread.
  • Spread one of the rounds with a little butter and then a little mayonnaise.
  • Top each with a slice of tomato, cheese round, and a couple of basil leaves (each should fit the bread round).
  • Lightly salt and pepper each one and put a couple of drops of olive oil on top.
  • Place other bread round on top.
  • Refrigerate till ready for the tea.

8 medium tomatoes
3 (16-ounce) balls fresh mozzarella
4 loaves ciabatta, sliced in 1/2 lengthwise
1 cup prepared pesto
Kosher salt and freshly ground black pepper
32 basil leaves

Steps:

  • Core the tomatoes and slice each tomato and each ball of mozzarella into 1/4-inch thick slices.
  • Place the sliced ciabatta loaves on a work surface, and spread each half evenly with 1/8 cup pesto. Place 4 slices of tomato and 3 slices mozzarella side by side on the top of each half loaf and sprinkle with salt and pepper. Place 4 basil leaves on top of each sandwich.
  • Slice each half loaf crosswise into 4 serving portions, making sure that each piece has a slice of tomato, mozzarella and a basil leaf.

2 large tomatoes, cut in half
1 sprig fresh rosemary, chopped
2 garlic cloves, minced
4 slices Italian bread, cut 1/2-inch thick
olive oil spray for spraying bread
3 tablespoons mayonnaise
8 large basil leaves, chopped
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
8 slices goat cheese, cut 1/4-inch thick (about 3 ounces or blue cheese)

Steps:

  • Sprinkle tomatoes with rosemary and garlic.
  • Prepare charcoal or gas grill or traditional smoker for Indirect smoking on Low Heat. Use one layer charcoal for smoker and place food on top grate. For best results for this recipe, use hickory or mesquite wood chips or chunks.
  • Place tomatoes on cooking grate cut side up of fully smoking grill or smoker. Smoke 30 minutes to 90 minutes over charcoal or 10 to 12 minutes over gas; remove. Chill tomatoes in refrigerator and drain.
  • Meanwhile, spray bread with olive oil. Place bread oil side down on cooking grate. Grill Directly 2 to 3 minutes or until toasted; remove.
  • Spread toasted side of each bread slice with mayonnaise; sprinkle with equal amounts of basil. Remove skn which ill just fall away. Cut each 1/2 tomato into 2 slices; place 2 tomato slices over basil on each bread slice. Sprinkle tomatoes with salt and pepper. Top each sandwich with 2 slices of goat cheese.

From the 'Best of the Best 2008' Cook's Illustrated Cookbook. This recipe is adpated from the Gotham Bar & Grill Cookbook (New York City). This sandwich illustrates how much pleasure can be created with just a few drastically different ingredients. Juicy beefsteak tomatoes and fragrant basil leaves set against the bracing taste of tapenade and cool ricotta cheese - all within the confines of toasted bread. Each bite teases the tastebuds for a long expectant moment before the ingredients begin to register. Don't even think about making this sandwich outside of August or September, when tomatoes are at their juciest, plumpest peak. This sandwich is a great indulgence to bring to the beach, especially since it actually gets better after the flavors have had time to blend. The tapenade, a thick olive paste with anchoves and capers makes a great spread for sandwich and hors d'oeuvres. Salt-packed anchovies are found at Italian and Mediterranean grocers. They are superior to oil-packed canned anchovies. If necessary, substitute 2 oil-packed anchovey fillets for each salt-packed anchovy.

8 large slice crusty sourdough bread or 8 large Italian bread, lightly toasted
1/2 cup tapenade (recipe follows)
2 large ripe beefsteak tomatoes, thickly sliced
2 tablespoons extra virgin olive oil
coarse salt and fresh ground white pepper
1/2 cup fresh ricotta cheese
12 large basil leaves
2 whole salt-packed anchovies
1 cup pitted kalamata olive
2 teaspoons capers, rinsed
1 teaspoon fresh lemon juice
1 teaspoon cognac or 1 teaspoon brandy
1 small garlic clove, minced
fresh ground white pepper

Steps:

  • For the tapenade, place the anchovies in a small bowl and cover with cold water. Let stand for 10 minutes to remove the salt. Drain.
  • Using a small knife, lift the anchovy fillets from their bones.
  • In a food processor, pulse the anchovy fillets with the remaining ingredients until coarsely chopped. Transfer to a small bowl and mix well. Serve at room temperature. Makes about 3/4 cup.
  • To make each sandwich, spread 1 toasted bread slice with 2 Tablespoons of tampenade.
  • Cover with a few overlapping tomato slices, drizzle with olive oil, then season with salt and pepper.
  • Spread with 2 Tablespoons fresh ricotta, season again with salt and pepper, then top with 3 basil leaves.
  • Top with another slice of toasted bread, then cut in half with a serrated knife.
  • Variations: Make this into an open-faced sandwich and serve with a bouquet of dressed salad greens. Substitute Roquefort cheese for the ricotta and leave out the tapenade.

1 16-ounce French-bread baguette
2/3 cup olive oil
8 large garlic cloves, finely chopped
1/2 cup chopped fresh basil
1 tablespoon chopped mixed fresh herbs (such as tarragon, thyme, and rosemary)
3/4 cup soft fresh goat cheese (plain, peppered, or herbed)
4 large plum tomatoes, thinly sliced into rounds
2 cups coarsely chopped pitted Mediterranean olives

Steps:

  • Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
  • Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.
  • Return open-face sandwiches to grill. Cook until bottom sides are toasted, cheese melts, and tomatoes begin to soften, about 3 minutes. Cut each sandwich diagonally in half and serve.

This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella. Enjoy!

2 ciabatta rolls (if you can find herbed GET IT!)
2 tablespoons extra virgin olive oil
1 -2 garlic clove, minced
1 tomatoes, sliced

fresh basil

Steps:

  • Preheat the oven to 400.
  • Slice the ciabatta to make a sandwich.
  • Drizzle olive oil on each of the 4 slices and sprinkle with garlic (or rub with a fresh sliced clove for a milder flavor)
  • Top with tomato slices, salt and pepper generously (drizzle with a little balsamic vinegar if you like).
  • Put mozzarella slices on top of the tomato slices and top those with fresh basil leaves.
  • Put the top pieces of ciabatta on and bake for about 5 minutes, just until the cheese melts.
  • Slice in half and eat!

2 tbsp tomato pasta or pizza sauce
50g torn mozzarella
a few torn basil leaves and a few whole leaves
shredded chicken or ham, pepperoni, sweetcorn, onions or roasted peppers

Steps:

  • Spread the bread with the tomato pizza or pasta sauce. Scatter torn mozzarella and a few torn basil leaves over one slice, then add any meat or veggies you like - shredded chicken or ham, pepperoni, sweetcorn, onions or roasted peppers all work well. Top with the other slice of bread, then butter the outsides of the sandwich. Cook in a hot pan, weighed down by another heavy pan, for 2-3 mins on each side until the outside is crisp and the cheese has melted. Alternatively, cook in a sandwich toaster. This is one of my favorite sandwiches! I usually use a wonderful white horseradish cheddar cheese rather than provolone, but it's kind of hard to find and the provolone is tasty, too. :) I've tried it on a lot of different breads, but I think that Oroweat's Carb Counting Multigrain Bread (when I'm being good) and Poulsbo Bread (when I'm bad) are my favorites for this sandwich.

2 slices potato bread or 2 slices whole grain bread (what-have-you)
1/2 teaspoon mayonnaise (Best Foods, Hellmann's, or Vegenaise)
1/2 teaspoon Dijon mustard
2 -3 drops balsamic vinegar, to taste
1 slice provolone cheese
1 slice prosciutto or 1 slice ham (an extremely thin slice) (optional)
1/2 ripe avocado, pitted,peeled,and in slices
4 slices ripe tomatoes (thin slices)
salt & freshly ground black pepper, to taste (I like a tri-color pepper mix)
1 leaf romaine lettuce or 1/4 cup alfalfa sprout (I often leave this off)

Steps:

  • If you like your sandwiches toasted, go ahead and toast your bread.
  • Mix the mayonnaise, mustard, and balsamic together, then spread it thinly on one side of each slice of bread.
  • Place cheese on a mayo/mustard side of a piece of bread; if including proscuitto, place it on the provolone.
  • Spread the slices of avocado next, then the tomato, and season to taste with salt and pepper; then top with lettuce and the other slice of bread with the mayo/mustard side facing the lettuce.
  • Note: using a fully ripe avocado is very important.
