This tomato casserole, baked with homemade croutons, fresh tomatoes, spinach, white beans, and Parmesan, is a hearty one-pan family dinner.

5 tablespoons extra-virgin olive oil (divided)
3 cups 1/2-inch-diced bread (use a good, crusty whole-grain bakery loaf or sourdough)
2 1/2 pounds fresh tomatoes (cut into a 1/2-inch dice)
3 cloves garlic (minced)
2 teaspoons sugar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 can Great Northern beans (rinsed and drained)
10 ounces frozen chopped spinach (thawed and pressed dry)
1/2 cup fresh basil leaves (julienned)
1/2 cup freshly grated Parmesan cheese

Steps:

  • Place a rack in the upper third of the oven and preheat the oven to 350 degrees F.
  • Heat 3 tablespoons of olive oil in a large, deep ovenproof skillet over medium heat. Add the bread cubes and stir to coat with the oil. Cook over medium to medium-high heat for 5 minutes, stirring often, until the cubes are evenly browned.
  • To the skillet, add the tomatoes, garlic, sugar, salt, and pepper. Continue to cook, stirring often, for 5 minutes, until the tomatoes break down.
  • Off the heat, stir in the beans, spinach, and basil until well mixed. Sprinkle with Parmesan cheese and drizzle with the remaining 2 tablespoons olive oil.
  • Bake for 30 to 40 minutes, until the top is browned and the tomatoes are bubbly. Enjoy hot or warm.

While the cheese crackers may draw you in, it's the baked tomatoes that keep you coming back for more. When she's cooking for hundreds of guests at the fish fry, Clarke uses canned tomatoes and green chiles for this dish. Since you're likely not cooking for 400, we adapted the recipe to use fresh tomatoes.

2 medium onions, very thinly sliced
¼ teaspoon ground pepper
6 cups chopped tomatoes (about 2 pounds)

2 cups crushed cheese-flavored crackers, such as Cheez-Its, divided
1 ¼ cups mayonnaise
¾ cup grated sharp Cheddar cheese
¾ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F. Coat a 9-by-13-inch baking dish with cooking spray.
  • Heat oil in a large skillet over medium heat. Add onions and cook, stirring often, until golden, about 10 minutes. Season with pepper.
  • Combine tomatoes and jalapeños in a large bowl. Spread 1 cup cracker crumbs in the prepared baking dish. Top with half the tomato mixture. Layer on the onions. Top with the remaining tomato mixture. Combine mayonnaise, Cheddar, Parmesan and basil in a medium bowl; spread on top of the casserole. Top with the remaining 1 cup cracker crumbs.
  • Bake until bubbling and the cheese has melted, 50 to 60 minutes. Let cool for 10 minutes before serving.

4 ripe tomatoes (medium)
4 onions (small)
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil (or 2 teaspoons finely chopped fresh basil)
3/4 cup shredded cheddar cheese (or about 6 slices of American cheese, sliced into halves)
1/2 cup panko breadcrumbs
2 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Lightly grease a 1 1/2-quart casserole.
  • Put onion in a small saucepan and cover with water. Bring to a boil over high heat; reduce heat to low and continue to cook for 10 minutes; drain.
  • In prepared casserole, layer half of the tomatoes and half of the onions. Sprinkle with half of the salt, pepper, and basil. Top with half of the cheese. Repeat the layers.
  • In a bowl, combine panko crumbs with melted butter; sprinkle over top of the casserole.
  • Bake in preheated oven for 30 to 35 minutes or until tomatoes are tender and topping is golden brown.

3 garlic cloves , thinly sliced
4 tbsp olive oil
1.2kg mixed tomato , from really big to cherry
8 thyme or oregano sprigs, or a mixture, stripped, plus a few more
1 tbsp golden caster sugar
50-85g fresh white breadcrumbs - if you've got a crust, use this so the crumbs are nice and golden

  • Heat oven to 180C/160C fan/gas 4. Heat half the oil in a pan and gently soften the onions and garlic for 15-20 mins until really soft and sticky but not browned. Put the onions, tomatoes (halve the large ones), herbs, sugar and breadcrumbs in a baking dish, season well and toss together.

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the potato, yam, bell pepper, carrots, and 2 tablespoons of olive oil in a 13 by 9 by 2-inch baking dish to coat. Sprinkle with salt and pepper and toss until coated. Spread vegetables evenly over the bottom of the pan.
  • Arrange the onion slices evenly over the vegetable mixture. Arrange the zucchini over the onion. Drizzle with 2 tablespoons of oil. Sprinkle with salt and pepper. Arrange the tomato slices over the zucchini.

1 medium red onion, thinly sliced
3 tablespoons olive oil
garlic powder, to taste
salt and pepper
1 teaspoon dried basil or 1 teaspoon dried thyme
1/3 cup parmesan cheese

Steps:

  • Using a casserole baking dish, place zucchini into layers; next place the onion slices over zucchini, place tomatoes over the top of the onions.

1 -2 large white onion

2 large ripe tomatoes
parmesan cheese

  • Slice onions into thin rings and saute in olive oil until clear.
  • Slice zucchini into thin round slices, do the same with the tomatoes.
  • Into a Pyrex dish (the size depends upon how much zucchini you have) layer as follows: (you should have 3 layers).
