GRILLED FLANK STEAK WITH MOZZARELLA AND BASIL

Steps:
- Preheat a grill to medium high. Put the flank steak between 2 sheets of plastic wrap and pound with a meat mallet until the thickest part is 3/4 inch thick. Season with salt and pepper and rub with 1 tablespoon olive oil, the rosemary and garlic. Let sit 10 minutes before grilling.
- Meanwhile, slice the larger tomatoes into wedges and halve the smaller tomatoes. Place in a medium bowl and add the vinegar and 2 tablespoons olive oil. Season with salt and pepper and toss.
- Oil the grill grates. Grill the steak until well marked, about 4 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes.
- Spoon the tomatoes and their juices onto plates and add the mozzarella. Slice the steak against the grain and add to the plates. Drizzle with the remaining 1 tablespoon olive oil, season with pepper and top with basil.

- In a small skillet, heat the olive oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute and removing from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed.
OLD FASHIONED BEEF CUBE STEAK WITH TOMATO GRAVY

- Pat dry cube steaks with a paper towel. Sprinkle with salt & pepper on both sides. Dust with flour on both sides.
- Add 2 Tablespoon olive oil to a 12" heavy-bottomed skillet. Bring to heat over medium-high heat.
- Add cube steaks to the skillet, two at a time, and brown. As the meat browns, remove to a plate or to the skillet's inverted lid.
- Once all the meat is browned, reduce skillet heat to medium. Add onion, sliced pepper, crushed red pepper and garlic. Stir and saute for 5 minutes.
- Add stewed tomatoes, bouillon cube, and water OR beef stock, and dried basil. Bring to simmer and cook for 5-10 minutes until tomatoes are soft.
- Return cube steaks to the skillet along with accumulated meat juices. Ladle the tomato/vegetable mixture over the meat. Reduce to slow simmer. Cover with lid. Cook for 30 minutes.
- Remove meat to a platter. (Optional: Mash vegetables and gravy.) Pour tomato gravy over cube steak OR plate individually and ladle tomato gravy over meat.
- Serve with plenty of mashed potatoes and any green vegetable.

- Whisk the marinade ingredients together in a small bowl.
- Place the steaks in a resealable plastic bag.
- Pour the marinade over the steaks. Refrigerate marinating steaks for at least 2 hours.
- Remove marinating steaks from the refrigerator and let sit at room temperature for 30 minutes before grilling.
- Heat grill to medium heat. Remove steaks from marinade and place on a hot grill.
- Grill steaks for approximately 8 minutes on each side, turning only once. Internal temperature of the steak should reach 145 degrees for a medium steak (use a meat thermometer).
- Heat olive oil in heavy large saucepan over medium heat, make sure the olive oil doesn't turn brown. Add garlic and sauté until a light golden brown, about 5 minutes.
- Add tomatoes, basil sprigs, and dried crushed red pepper to a food processor and pulse a few times. Add tomato mixture to the garlic in the sauce pan.
- Bring to a simmer. Reduce heat to low and simmer until mixture is reduced to a thick sauce consistency (about 3 cups), stirring occasionally, about 15 minutes.
- Season sauce to taste with coarse kosher salt and freshly ground black pepper.
- Top grilled steaks with tomato basil sauce. Garnish with shredded basil.

- Cook pasta according to package directions; keep warm.
- Meanwhile, in a large saucepan or Dutch oven, heat oil over medium heat. Add onion and garlic; cook and stir until tender.
- Add remaining sauce ingredients.
- Bring to a boil; reduce heat to low.
- Simmer, uncovered, 10 minutes, stirring occasionally.

BASIL AND TOMATO RELISH FOR STEAK
This is a wonderful way to use fresh basil and tomato from the garden and a steak on the grill. You might not have had a vegetable relish on steak before and neither had my husband or myself. We were delighted with the flavor mixed with the steak. You'll need a way to saute the vegetables on the grill, such as a grilling basket. Skewers are also an alternative. Adapted from Food and Wine.

- Microwave the onion slices with two tablespoons of water for about two minutes.
- Saute the minced garlic until tender, about 5 minutes.
- Place vegetables in grilling basket and baste with olive oil.
- Grill mushrooms, onion, and tomatoes until tender, turning once (About 10 minutes for mushrooms, 15 minutes for onion, and 7 minutes for tomatoes).
- Remove the vegetables as they are done.
- Cut cooked onion and tomatoes into 1-inch pieces.
- Stir together in a medium bowl the basil, garlic, the 2 tablespoons olive oil, kosher salt, pepper and all vegetables.

- Butter/ grease 9x12 casserole dish.
- Place cubed bread in one layer on bottom of the casserole dish.
- Sprinkle bread with butter and 2 1/2 cup cheese (reserve 3/4 cup grated cheese for topping casserole).
- Beat eggs until foamy.
- Add milk, wine, scallions, and seasonings.
- Pour egg mixture over cheese.

- Heat 1 tablespoon oil in heavy large skillet over medium heat. Add onion, celery, parsley and garlic. Sauté until onion is tender but not brown, about 10 minutes. Add tomatoes and bay leaf.
