1 (32-ounce) can whole tomatoes, drained
1 cup fresh basil leaves, washed and spun dry
4 tablespoons extra-virgin olive oil
6 cloves garlic, peeled
Kosher salt and freshly ground black pepper
2 large French baquettes, sliced 1-inch thick (about 36 slices)
1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick

Steps:

  • Preheat oven to 375 degrees F.
  • In the bowl of a food processor, add drained tomatoes, 1 cup basil leaves, olive oil and 2 cloves garlic. Pulse until smooth, but somewhat chunky. Season with salt and pepper.
  • On a baking sheet, line up baguette slices. Toast in oven for about 3 minutes or until light golden brown. Working quickly, rub the remaining garlic on the toasted side of each slice and then lay a piece of mozzarella cheese on top. Place bread back in oven and melt cheese slightly, about 45 seconds. Remove from oven and spread one tablespoon of the tomato mixture on each piece.
  • Place bruschetta on decorative platter and garnish with basil leaves.

You can make classic tomato-basil bruschetta at home with simple, fresh ingredients. It's easy! Start by dicing your tomatoes (see step 2) to give them time to drain while you work on the remaining ingredients. Recipe yields 20 to 24 small toasts.

2 pounds ripe tomatoes (about 5 to 6 medium tomatoes, but any variety will work)
1/2 teaspoon fine sea salt, plus more to taste
1/2 cup finely chopped white onion (about 1/2 medium)
1/2 cup chopped fresh basil (about 3/4 ounce)
2 cloves garlic, pressed or minced
1 baguette (French bread)
4 to 5 tablespoons extra-virgin olive oil, divided
Thick balsamic vinegar (see notes within post) and optional Maldon flaky sea salt

Steps:

  • Preheat the oven (or a gas grill*) to 450 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy clean-up, if desired. If your baking sheet is smaller than mine, you may need to make the toast in two batches.
  • Dice your tomatoes and transfer them to a medium mixing bowl, leaving the tomato seeds and juice behind on the cutting board. Stir the salt into the tomatoes, and add the onion, basil and garlic as they are ready. Stir to combine and set the mixture aside to marinate while you work on the bread.
  • Slice your baguette on the diagonal into pieces no wider than 1/2-inch (see photos). I can usually fit 20 to 24 slices on my large baking sheet; you might have some bread left over. Lightly brush both sides of each slice with olive oil (this will require about 2 to 3 tablespoons oil).
  • Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 6 to 9 minutes, until they're crisp and nicely golden on top. Transfer the toasts to a serving platter(s), if desired, and set aside.
  • When you're ready to serve, carefully drain off the excess tomato juice that has accumulated in the bowl, using your hand as a stopgap. Add the remaining 2 tablespoons of olive oil. Stir to combine, and season the mixture with additional salt, to taste (I usually add another 1/4 to 1/2 teaspoon). If you don't feel like your bruschetta is garlicky enough (I like mine lightly but not overwhelmingly garlicky), add another pressed clove of garlic.
  • Top each toast with tomato mixture, tipping your spoon against the bowl to release excess juice as necessary. Lightly drizzle a couple of tablespoons of thick balsamic vinegar on top, and sprinkle lightly with flaky salt if you have any. Bruschetta is best served promptly.

  • Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! Thinly slice basil into green confetti and loosely combine with tomatoes. Add a drizzle of oil and a little coarse salt to the bowl and gently toss tomatoes and basil to coat. Pile toasts around the bowl of topping. Place a spoon to scoop topping in bowl and serve.

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

4 ripe medium tomatoes, about 1/2 pound each, coarsely chopped
1 cup torn basil leaves, firmly packed
2 teaspoons extra virgin olive oil
1 teaspoon red wine vinegar
1 clove garlic, pounded into a paste with 1/2 teaspoon salt
12 slices bruschetta

Steps:

  • In a bowl, mix together the tomatoes, basil, olive oil and vinegar. Add 1/4 teaspoon of the garlic paste, and blend well. Season to taste with salt and pepper. Let stand at room temperature for 2 hours, if possible.
  • Place the bruschetta on a large platter in a single layer. When ready to serve, drizzle each one with about 1 tablespoon of juice from the bottom of the bowl containing the tomato mixture. With a slotted spoon, strew the tomato mixture over the bruschetta. Serve immediately.

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.

The longer they drain, the better they'll be. This bruschetta gets better as it sits for a bit, so make it up to an hour ahead. While most bruschetta recipes have you rub a raw garlic clove on toasted bread, this one calls for making a quick infused oil that's stirred into the tomatoes and basil, providing a more delicate garlicky note. Pile it all on toasted bread, and enjoy bite after juicy bite.

1 pound plum tomatoes (about 4 to 5 large), or another variety of ripe tomatoes

1 lb roma tomatoes or 1 lb cherry tomatoes, cut into small pieces

10 red Italian tomatoes, chopped
3 garlic cloves, minced
2 tablespoons balsamic vinegar

  • 5. Drizzle oil on one side and use pastry brush to spread.
  • 6. Place baguettes on baking sheet., oil side down; toast in upper rack of oven for about 5 minutes or until golden brown.
  • 7. To serve, align the bread on the serving platter, oil side down. Place tomato mixture on each piece of bread. You may add additional minced basil/oil mixture on top. Serve.
  • Variations: Add mozzarella cheese, peppers etc.
